<title><![CDATA[KUIH PAU (Ian-ieza@MyR )]]></title>
<description><![CDATA[HO HO HO...... 
...sounds familiar? Of course huh.... Well, though I don't celebrate Christmas, but 'Santa' still is going to send me present. But my 'Santa' is not that chubby fella with white beard and striking red outfit. But my 'Santa' is a sweet lady by the name of Hazila...at least that's what she addressed herself in her blog http://hazila.blogspot.com(The Small Kitchen). Do visit her blog for yummy delicious looking food spread...  I had won the http://hazila.blogspot.com/2009/12/pemenang-counter-hit-contest_25.html(Counter Hit Contest) that she had put up in her blog recently. Yes, this is my second time winning such contest after the first one at http://tertunailahhasratdihati.blogspot.com/2009/11/sape-dapat-no-0987654.html(Kak Ina KL's Blog). I guess my luck is with numbers.... heppp....bukan nombor tikam ke nombor ekor ke aaa.... haram wooo....  Thank you so much Hazila for the fun. I am so happy to receive the prize but the most of all, the excitement of seeing the number 101010 appeared on my screen when I clicked at her website. Just can't believe it, but yes.... I am the lucky one!

    

That's the happy part of the day. Now let me write about the sad part. Yesterday at 4.50 pm, all the four of us head for KLIA. We wanted to meet Naseem and family who will be flying to Dubai. We were at the airport till it's time for them to check in. Two hours went by so fast that I felt we were only there for 20 minutes. At the gate, we hugged again, a long tight hug as if we don't want to let go of each other.  When they had passed the gate, before heading for the escalator, again Naseem came by the side and give me another hug. I tried my very best not to burst into tears. I managed, but with great difficulty. I mustn't lie, but the eyes were blurry. From the escalator, we kept waving at each other. She kept looking back towards us while walking towards the Immigration. Even at the immgration counter, she's still looking towards our direction and waving. I stood there with such a heavy heart until she is totally out of sight...at the same time wondering, will I be seeing them again..... I miss you already mummy....... 

Enough said.  Just can't stop my tears from falling....

To end with, let me post this lovely PAU recipe that I took from http://hazila.blogspot.com(Hazila's Kitchen). She had mentioned in her blog that she got the recipe from Ian-ieza@MyR, The pau is nice and I love it. Thank you Hazila and Ian-ieza for sharing it with us.... Allow me to re-post the recipe here for others to try....


PAU (Ian-ieza@MyR )

Ingredients :

100 g lukewarm water
73 g sugar
11 g instant dried yeast
60 g water
306 g superfine flour (I used all-purpose flour)
1/2 teaspoon bicarbonate of soda
1/2 teaspoon bread softener
1/2 teaspoon cooking oil
20 g vegetable shortening


Method :

1. Mix lukewarm water, sugar and instant dried yeast. Set aside for the yeast to ferment.
2. Pour the water into the Bread Maker pan, followed by the yeast mixture.
3. Top it with flour, bicarbonate of soda, bread softener and cooking oil.
4. Set the BM to 'dough' function. Once the dough is just combined, add in the shortening. Leave the rest to the BM.
5. Once the dough is double the size, punch down to release air. Divide into 30g balls. Let the dough rest for 10 minutes. 
6. Flatten the dough and place the filling in the middle. Cover the filling with dough and place it on a piece of grease proof paper.
7. Arrange the dough in the steamer and let it rise to double the size.
8. Steam for 10 minutes.

<title><![CDATA[DATES CAKE]]></title>
<description><![CDATA[Kak Timah had asked me if I can bake a Date Cake. So I googled and found this recipe at http://www.myresipi.com/top/detail/5383"(MyResipi). Thank you eumora3179 for sharing this lovely recipe with us....


DATES CAKE

Ingredients :

200g dates - remove the seed
1/2 cup water 
150g butter 
125g sugar
3 eggs
*175g flour
*1 teaspoon baking powder
*1/2 teaspoon bicarbonate of soda (sieve together all marked *)
1 teaspoon vanilla essence



Method :

1. Steam the dates with 1/2 cup water till soft. Roughly 10 minutes. Mash it and set aside.
2. Beat butter and sugar till light and fluffy.
3. Add eggs one at a time and continue beating.
4. Add in vanilla essence.
5. Add in mashed dates. Mix well.
6. Fold in the sifted dry ingredients.
7. Pour into a well greased baking tin or lined with greaseproof paper.
8. Bake in a preheated oven at 180 C for 45 minutes. 



Note :

In my first trial, I baked one recipe using a 9 x 9 in tin. I find it too shallow. On top of the cake, I sprinkle some sliced almonds.
When baking the second time for Kak Fatimah's order, I made double the recipe. I arranged some dates on top. Baked in the same 9 x 9 in tin for 1 hour. But when the cake cooled down, it dropped slightly in the middle. Not sure why...

<title><![CDATA[JIMI ASMARA]]></title>
<description><![CDATA[Some things are just too good to be true that you can't believe it's happening right infront of your eyes!!! Last Sunday, we went to KLIA to meet up with Naseem and family who flew in from Penang after a 3 days holidays there. I was so excited plus nervous plus impatient and everything, combined into one. It's like meeting your heart throb!! *wink* The moment I saw Zahra, Naseem's elderest daughter emerged from the Arrival Hall followed by the rest of the family members, I am pretty sure I wasn't dreaming that time. Until we hugged, a long hug, then only I am 100% sure I am not dreaming! Had to pinch myself in order to confirm it!

How can I not be excited. Thought I would never see them again because Malaysia and Malawi is very far. And for us to go there again, it's like almost impossible. Unless, somebody is willing to sponsor the whole family just for the air tickets, we will be more than happy!!! Anybody???? It had been two years since we left Malawi behind with loads of wonderful memories treasured deep in our hearts. And two years I had been without my close friends there whom are now just like my brothers and sisters. And to be able to meet at least one of them is such a blessing. But I got to meet the whole family. Syukur alhamdulillah......

We met up with them, just for a short 15 minutes as the hotel bus was waiting for them. But 15 minutes is better than never. Maybe hubby saw that it wasn't enough for me, he told Ishmael (Naseem's hubby) that we'll visit them at their hotel tomorrow. So yesterday, after hubby's niece and hubby left, we went to where Naseem and family are staying. Had a long chat (was it long mummy? Ummmm... I think 2 hours is nothing huh? We still have loads to talk about, things to catch up with huh?) and we left their hotel at 11.30 pm. That was because, we saw that they are tired after the KLCC tour and had to wake up early the next morning to get ready for Sunway Lagoon. Anyway, it was lovely meeting all of you again. InsyaAllah we'll try to meet up with you guys at least one more time at the airport. Oooooo I just dread that moment....wish it doesn't have to happen.... meanwhile, enjoy your time here and bring back lovely memories to Malawi.....

                

Since I have a long list of chores to do, will go straight to the recipe for the day. It'll be a very short, easy and lovely recipe to share. Thanks to Ummi Kuantan and Mak Lang Azie for sharing the recipe with us.... It really quench the thirst and if you're familiar with F&N Fruitade, well the taste is similar minus the gas hence more healthy....is it? Hahaha... lu pikirlah sendiri......



JIMI ASMARA

Ingredients :

4 tablespoons sugar
1 1/2 tablespoons Orange Sunquick
1 teapsoon banana essence
few drops of green food coloring
Enough mineral water
Enough ice cubes

Method :

1. Dissolve sugar in a bit of hot water.
2. Add in the orange sunquick, banana essence, green food coloring and water. Stir to mix.
3. Add ice cubes and ready to serve.

<title><![CDATA[Pizza Dough for Thin Crust Pizza]]></title>
<description><![CDATA[Thanks to RecipeZaar for this thin crust pizza recipe. I had to adjust the recipe slightly to suit the bread maker's method. Pizza Dough for Thin Crust Pizza (Altered)

Ingredients :

3 cups all-purpose flour (may substitute whole wheat flour for 1 cup of the all-purpose)
8g dry yeast
1/4 teaspoon salt
1 cup warm water
1/2-1 tablespoon olive oil
cornmeal, for sprinkling (i omit)



Directions :

1. Mix a little sugar into the warm water.
2. Sprinkle yeast on top.
3. Wait for 10 minutes or until it gets all foamy.
4. Pour into a large bowl.
5. Add flour, salt, olive oil.
6. Combine.
7. Knead for 6-8 minutes until you have a moderately stiff dough that is smooth and elastic (add a bit more flour if you need to).
8. Cover and let rest for 20-30 minutes.
9. Lightly grease two 12-inch pizza pans.
10. Sprinkle with a little bit of cornmeal.
11. Divide dough in half.
12. Place each half on a pizza pan and pat it with your fingers until it stretches over the whole pan.
13. Try to make it thicker around the edge.
14. If desired, pre-bake at 425 F for 10 minutes (I don't always do this).
15. Then spread with pizza sauce and use the toppings of your choice.
16. Bake at 425 F for 10-20 minutes longer or until bubbly and hot.
17. Makes 2 12-inch pizzas.
18. If you don't want to use all the dough, you can freeze it.
19. Take a portion of dough, form into a ball, rub olive oil over it and place it in a freezer bag (the oil makes it easier to take out of the bag).
20. When you want to make a pizza, take dough out of freezer and allow to thaw before using.

Note : I just used the Bread Maker to do the kneading for me.




Assignments done so far, for http://maylique.fotopages.com(Maylique) to grade them.... Will I get a C or a D. Hopefully I didn't flunk! Hahahaha..... Otherwise, kena ketuk ketampi or maybe diri luar kelas! Kah kah kah.... never in my school life, had I been punished for flunking my exams but for forgetting to bring my excercise books, yes, but rest assure, it was less than 5 times okay! Anyway, it's just for experience sake... hahahaha...mama terror cover line!

<title><![CDATA[APAM MARMAR]]></title>

Recipe to share is this Apam Marmar recipe that I came across when browsing http://amal5041.fotopages.com(Amal Hayati's Fotopage). According to her, she got the recipe from Kak Am's Blog. Thank you to both ladies for this nice recipe.....


APAM MARMAR

Ingredients : (Size 8 inch chiffon tin)

250 g self raising flour
200 ml coconut milk
170 g castor sugar
2 large eggs
1 teaspoon vanilla essence
1 teaspoon ovallette
a pinch of salt
Food coloring, green, pink, yellow

Method :

1. Place all the ingredients except food coloring in a mixing bowl.
2. Beat on low speed till the ingredients are well incorporated.
3. Increast to high speed and beat till fluffy and thick.
4. Divide to 4 portions. Add color to the 3 portions and leave the other one plain.
5. Grease the tin with butter. (I didn't grease my tin). Spoon each color on top of the other. Repeat till all the mixture have been used.
6. Steam for 45 minutes.
7. Leave to cool before cutting

<title><![CDATA[COOKIES (AYIN)]]></title>

COOKIES

Ingredients :

4 egg yolks
300 g castor sugar (I reduced to 280g because I am going to put the fondant on top)
500 g butter (I used Planta margarine)
600 g flour
150 g maizena/corn flour
6 tablespoons milk powder

Method :

1. Sieve flour, maziena and milk powder. Set aside.
2. Cream butter and sugar. Add in egg yolks one at a time. Continue beating.
3. Add sifted dry ingredients till a soft dough is formed.
4. Roll to the thickness desired. Cut using a cookie cutter. Arrange on a baking tray lined with greaseproof paper.
5. Bake in a preheated oven till golden brown. I used fan-oven at 150 C for 25 minutes.
6. Leave to cool completely before decorating with fondant or royal icing.

<title><![CDATA[MY FIRST FONDANT CAKE...FOR ALIN & WIZAM]]></title>
<description><![CDATA[Tak do kojo cari kojo, ado kojo tocungap-cungap!
That's how I describe myself at the moment. I had challenged myself to prepare a fondant cake for Alin's wedding. Alin is my hubby's late cousin's daughter. She's getting married today at 9.30am to Mr Wizam. I had promised Alin's mom to bake her the hantaran cupcakes and decorated it with fondant. Alhamdulillah managed to prepare those cupcakes without much problem, as I've done these kind of cupcake's deco a couple of times before. Here are the cupcakes for Alin's hantaran....



Now comes the story of my own created challenge. Since I don't have the experience of covering a cake with fondant, http://lea-oven.blogspot.com(Daalia) had been kind enough to coach me. She had asked me to bake a cake and go to her shop to do the decorating. I thought that was the best idea because in case I am short of the things needed to deco a fondant cake, I can just buy it straight away from her shop. I went to her shop at 9.30 pm. Didn't manage to go earlier as I was pretty busy that day. Stayed there till 4.30 am! Yes, you read right...4.30 in the morning! I managed to deco the cupcakes and half-way done with the cake! I think I am just too excited, which makes me stayed awake with no problem at all! Infact, when I reached home, I still took time to sleep! I slept only for 3 hours, then woke up to finish decorating the cupcakes ordered by Khatijah.

At 11.30 am, I went back to Daalia's shop to finish decorating my fondant cake. Finally done at 3pm. I am a very happy lady! I am satisfied with the end product and I think, all the time spent is worthwhile. My heartful thanks to http://lea-oven.blogspot.com(Daalia) and Diana for the coaching. <title><![CDATA[PRAWN & ASPARAGUS]]></title>

PRAWN AND ASPARAGUS

Ingredients :

2 bunches asparagus
200g prawns ~ cleaned
2 cloves of garlic ~ chopped
1 fresh red chillie ~ sliced
1 tablespoon oyster sauce
1 teaspoon ground blackpepper
cooking oil
2 dashes of sesame seed oil
salt to taste

Method :

1. Heat the wok and add in oil. When oil is hot, add in garlic and fry till fragrant.
2. Add in prawns and fresh red chillie. When the prawns changed to lighter color, add oyster sauce and ground blackpepper.
3. Add salt and a bit of water if necessary.
4. Add in a few dashes of sesame seed oil.
5. Last but not least, add in the asparagus. Stir for a few minutes and remove from heat.

<title><![CDATA[FRUIT COCKTAIL PUDDING...SELAMAT HARI RAYA AIDIL ADHA]]></title>
<description><![CDATA[Good morning everyone. I hope all are well today. Maybe many of you are on leave today, and started your journey back to kampung to celebrate Eid-Ul-Adha. May you have a pleasant Eid-Ul-Adha and drive safely...



Yesterday, I popped in at http://jommainmasakmasak.blogspot.com(Wani's Food Blog). Came across her Fruit Cocktail Pudding and decided to try it straight away. Made a few adjustments to the recipe to give it a more colorful look (as usual... MamaFaMi lovesss colors!) and to suit my taste. Thank you Wani for sharing the recipe with us...


Fruit Cocktail Pudding

Ingredients :

1 packet agar-agar strips (20 gm)
2 eggs
4 1/2 cups liquid (cocktail syrup + water)
1/2 can evaporated milk (about 200ml)
3/4 cups sugar
3 tablespoons custard powder
1 can fruit cocktail
1 teaspoon vanilla essence
Kiwi ~ cut to small chunks

Method : 

1. Put the fruit cock tail through a strainer. Keep the syrup to boil the agar-agar.
2. Boil the agar-agar strips with 4 1/2 cups of water plus the syrup. Boil till all the agar-agar strips disolves. 
3. Meanwhile, beat eggs, vanilla essence and add in custard powder. Set aside.
4. Pour the agar-agar through the strainer and add in the evaporated milk.  Put back on the stove and let it boil.
5. Reduce the heat and add in the eggs mixture a little at the time and continue stirring.
6. Add in the fruit cocktails. Stir for a few minutes and remove from heat.
7. Pour into the prepared mould. Leave to cool and then chill in the refrigerator.



I personally like this shot. I had left my camera on, to fetch a spoon and when I came back towards my camera, I saw this lovely image on the screen and decided to snap it which is the right choice to make. What do you think?

<title><![CDATA[COFFEE BUNS]]></title>
<description><![CDATA[
COFFEE BREAD

Ingredients :

190 g high protein flour (I used multipurpose flour)
50 g sugar
2 g salt
6 g instant dried yeast
1/2 teaspoon bread improver
1 egg yolk
50 g fresh milk
12 g instant coffee (I mixed 2g nescafe granules with 10g hot water)
60 g water roux 
1/2 teaspoon cappuchino coffee emulco (I added)
30 g butter

Method : (Breadmaker method)

1. Pour fresh milk into the breadmaker pan. Add in instant coffee, salt, sugar, egg and water roux.
2. Top it with sifted flour, dry yeast and bread improver.
3. Set the Breadmaker to Dough function.
4. Once the dough is just combined, add in butter and leave the Breadmaker to continue doing it's job. This process will take about 1 1/2 hour including prooving.
5. Remove dough from BM and punch down to release the air. Cut the dough 35g portion each. Make into round balls and leave to rest for 10 minutes.
6. Let the air out of the dough and make into round balls again. Arrange in the prepared tin.
7. Leave to proof till double the size.
8. Bake in a preheated oven at 180 C for 25 minutes or so.
9. Once out of the oven, brush with butter.
