Chocolate Chips Muffins
Chicken Kung Pao
Yesterday at 9pm, I made these chocolate chips muffins to give to the teachers and staff of Syahmi's school who had accompanied the Year 5 children to the Lengwe Park trip last Thursday as a way of saying THANK YOU from Syahmi for a wonderful and enjoyable trip. And this morning, I made the boxes to pack the muffins so that they won't have to worry returning any plates to me. But I didn't manage to snap the photo of the boxes as I was running late. How unorganise of me today!!! Wanted to do the boxes yesterday night, instead of cutting the cards, I went to the TV room to keep my hubby company. He was watching the last football game Angola vs Portugal. But then, after about 10 minutes watching the match, the match was watching me... hehehe...nicely sleeping! Woke up around midnight and straight into the bedroom to continue my dream sweet dream.....hmm...what was I dreaming yesterday eh....????



For today's recipe, I'll paste the Chicken Kung Pao recipe that I got from Forum Cari. This simple but delicious recipe was posted in Forum Cari by Cranko21. Thank you Cranko21 for sharing with us this recipe...



CHICKEN KUNG PAO

Ingredients A :

600g chicken fillets ~ diced
corn flour
salt

- Coat the chicken fillets with salt and corn flour and fry.
- Once cooked, remove from oil and place on the kitchen towel to absorb oil.

Ingredients B :

100g cashew nuts ~ fry with oil
30g dried chillies ~ cut into 1 to 1.5 inches long
2 white onions ~ diced
4 garlic ~ pounded
2 inches fresh ginger ~ pounded
1 green pepper ~ diced
3 tablespoons oyster sauce
2 tablespoons chillie sauce
1/4 cup water
cooking oil
salt ~ if needed

Method :

1. Heat a bit of oil in a wok and fry the dried chillies till crispy. Set aside.
2. Saute ginger and garlic till fragrant.
3. Add in the diced white onion.
4. Add in the green pepper, fried chicken, oyster sauce, chillie sauce and a bit of water.
5. When there's only little liquid left, add in the fried cashew nuts, mix well and remove from heat.

Note :
1. I didn't have any green peppers available that time, so I didn't put any.
2. I just pun a bit of chillie sauce and a bit of dried chillie so that it won't be too hot for the kids to be able to enjoy them
3. And a bit of tomato sauce to give it a more tangy taste.

KUIH CARA

I did it again!!!! I fried Kuih Keria for breakfast today. And when putting in the fried keria into the hot sugar syrup, I accidently touched the kitchen towel that has a bit of hot syrup stuck to it....OUCHHHH I tell you...all the 'painful memories' a few years back came rushing back into my mind! This time it got to 2 of my right hand fingers....so that spot was kinda 'cooked'...yes you got it..OUCHHHHH OUCHHH OUCHHHH! Anyway, I'm still breathing though and still able to type for my entries....hahahaha...But then, it was all worth it when I saw hubby and my visitors enjoying the kuih nicely....And oh...today's breakfast was fried noodle and these.....


And today, I'd like to share another Malay kuih recipe with you. I got this from my reliable book that my mom gave to me. It's called Kuih Cara. Made this kuih into 2 version, sweet and savory.



KUIH CARA

Ingredients :

120 g flour
250 ml fresh milk or coconut milk
1 egg
1/4 teaspoon salt
1 tablespoon pandan juice

Filling
For savory Cara : Currypuff filling
For sweet Cara : White sugar

Method :

1. Sift the dry ingredients into a bowl and add in egg and fresh milk/coconut milk. Add in pandan juice and stir well.
2. Pour into a jug.
3. Put the mould on the stove and heat it up. Grease with oil preferably using the pandan leaves.
4. Pour the bater about 3/4 full.
For savory Cara : Put in a bit of inti karipap in the middle.
For sweet Cara : Put a bit of white sugar in the middle.

5. Cover the mould and let the kuih cook on slow fire.

SUP TULANG & SUSHI

Will be very busy today as I am expecting some visitors from Lilongwe today. Now it's 6.45 am in Malawi, 12.45 noon in Malaysia. So I got a couple of hours just to prepare the bedroom and to clean my upside down topsy turvy house...hahahaha....They are expected to be arriving around noon.

As been requested by a few friends here, I will paste the 'short cut ever' recipes of how I made my Sup Tulang (Oxtail Soup) and also Sushi. Don't expect anything fancy because it's just a tipu-tipu (cheating) way of preparing and cooking it. Actually I've pasted the Sup Tulang recipe in this page but I'll paste it again here for your convenience.



SUP TULANG

All you have to do is, wash the steak bones/oxtail/ribs/shins. Put into the pressure cooker with some water and spices wrapped in a muslin cloth. For me, I got this 'sup bunjut' from Malaysia. Sup bunjut is a readymade wrapped spices. Pound some shallots together with ginger and garlic. Heat the oil and fry the pounded ingredients till fragrant. Pour into the pressure cooker. Secure the lid and put on the stove. When the pressure cooker starts releasing the steam (plus the LOUD noise ), leave it like that for about 20 minutes or so. Then off the fire, let the steam out and open the lid. Add in potatoes and boil till potatoes are slightly soft. Add salt, tomatoes, sliced onion and green chillies. When serving, sprinkle some chopped spring onions and fried onions. Nice to eat either with bread or rice! What can be simpler and tastier than that!


THE SHORT CUT SUSHI

Ingredients

Roasted dried seaweeds
Cooked and cooled rice (I use just the normal rice and not the special rice for sushi)
Chicken fillets ~ sliced, coat with Southern Fried Chicken powder and fry till crispy
Eggs ~ beaten and fry thinly like pancakes
Cucumber ~ peel the skin and cut lengthwise
Thousand Island sauce
Sushi bamboo mat

Method :

Lay out the bamboo mat. Put a piece of the roasted dried seaweeds on the mat. On top of it, scoop a good amount of rice and spread it evenly on half of the seaweed. Then arrange the fried chicken fillets, eggs, cucumber and then the thousand island. Roll firmly the seaweed to wrap the whole thing. Finally slice about an inch thick and ready to eat. You can actually put whatever you desire in this sushi, for example crab meat or fried fish fillets. And the sauce may vary according to what your heart desire....


Errr...by the way...is this the right way to make sushi? Esh...I don't know...but this is how I make MY sushi. And thanks to Alia for demonstrating it to me long time ago.....To be honest, I have never ever tasted Sushi from any restaurants. The only Sushi besides mine that I've eaten is at Alia's. So I don't actually know how the REAL sushi tastes like...but anyway, I'm happy enough with this one!

CHEESE BUNS

The texture...
Care to have some?
 
Today I'm feeling a bit down because my son, Syahmi went on a school trip to Lengwe National Park. I was at school to see them off at around 8.30am. They'll be spending the night at Nyala Lodge in Lengwe Park. The teachers and staffs that accompanied about 24 children of Year 5 are Mrs Lim, Mrs McFadden, Miss Young and Mr Tredinnick. They all travelled together in the school bus. Hope they'll have a safe journey and a pleasant time there...meanwhile...mommy will be at home feeling lousy...but at least, I have Fatin to keep me busy! Can't wait for 1pm tomorrow.....

Well, recipe for today, I think, I'll just paste the Cheese Bun that I made quite sometime back. This was my second trial actually. The first time I made, it didn't fluff up to my satisfaction so I considered it as a failure though nothing was left of that bun! This time, I just let the dough take it's own sweet time to rise...no force no torture! Got this recipe from Forum Cari posted by none other than the famous sifu NoorMasri. Thanks Noor for the recipe. I made 7 pieces of the cheese bun. Once out of the oven, 1 1/2 buns were shared between me and Syahmi and the rest landed in Fatin's tummy! Hehehehe...never judge that girl by her size eh!!!!!



CHEESE BUNS

Ingredients :

300g high protein flour
1 teaspoon bread improver ~ optional
60g castor sugar
1/2 teaspoon salt
50g egg (1 egg)
7g (2 teaspoons) instant dried yeast
70 - 75 ml fresh milk (chilled)
70ml water
25g margarine ~ melted

Glazing :
1 teaspoon fresh milk
a bit of grated cheddar cheese

Method :
1. Mix flour, bread improver, yeast, salt and sugar in a big bowl.
2. Make a hole in the centre and pour milk, water and egg. Mix well to form a soft dough.
3. Add in margarine and knead for another 30 minutes or till dough is smooth and elastic and does not stick to the bowl.
4. Make into a big ball and place it in a bowl greased with a bit of oil. Cover using a cling film.
5. Place the bowl at a warm place and let dough prove for 1 1/2 to 2 hours or till dough has doubled it's size.
6. Punch down the dough, and divide into 7 equal pieces.
7. Arrange them in a well greased 9 inch tray and cover with cling film.
8. Leave to prove again till double the size.
9. Brush the buns with fresh milk and sprinkle with grated cheddar cheese.
10. Bake in a preheated oven at 170 celcius for about 15 - 20 minutes or till golden brown.

SUNSET AT LIWONDE NATIONAL PARK

These photos were taken during our night ride through the Liwonde National Park. We stopped at this spot, not only to snap some lovely shots of the sunset but was hoping to see the hippos out of the water. But we were out of luck as not even one hippo came to 'meet' us....hehehe....anyway, we enjoyed the view very much..it's just so breathtakingly beautiful...masyaAllah...

Tapi kalau tawar, masukkan icing sugar ikut kemanisan yang dikehendaki. Then masukkan color dan flavour (essence) yang dikehendaki, baru start whipping. Jangan overwhip takut jadi berketul dan cair macam yang mommy buat tu. Mama ni pun tak berapa pandai sangat bab whipping ni...tapi so far, kalau guna whipping cream MeadowLand dari South Africa tu, okaylah. Kat Malaysia, tak pernah try pun guna fresh cream...so tak sure sangatlah brand apa yang elok....
