SWISS ROLL (Sis Rossya)

 
 
Yesterday, I got carried away in the kitchen, baking cupcakes. Fowzia had said that I should only do 50 cupcakes and guess what, I made slightly more than a 100 cupcakes. Half of it are plain cupcakes and the other half are chocolate cupcakes. I think I was enjoying too much baking them maybe huh...I've kept them in the freezer and will ice them probably on Friday night or maybe Saturday morning for the Saturday night function in school. At first, I had doubts about freezing cupcakes. Will it taste good after we thaw them or will it be yucky....so I made one batch of cupcakes last Monday. Managed to get about 25 of them and kept them in the freezer. The next day, I took some out to taste and wallah....they tasted good...Even Fatin was helping herself with 3/4 of the 'once frozen' cupcakes....meaning....they are very much ALL RIGHT. Thanks Naseem for making me confident to try new stuffs!

The recipe that I've experimented in my kitchen and that I wanted to share with you today is again, a recipe from Sis Rossya's lovely fotopage....entry ini ditujukan pada Kak Rossya, dengan pertanyaan...bila nak update page...hehehe....cam siaran permintaan lagu ler plak haa...... It calls for Blueberry Jam, but since I don't have it at home, I simply change to whatever I have in the pantry...and to avoid confusing people with the photo (Blueberry should look blue right?), I am going to change the name slightly......ampun Kak Rossya....ampunnnnn.....



SIS ROSSYA'S SWISS ROLL

Ingredients :


25g cold water (from the fridge)
60g corn flour
185g castor sugar
100 g flour
30g ovalette
1 teaspoon baking powder
10 egg yolks ~ cold eggs
6 egg whites ~ cold eggs
100g margarine ~ melted using double boiling method

Method :

1. Preheat oven to 160 C at least 30 minutes before baking.
2. Place all the above ingredients except the melted margarine in a mixing bowl.
3. Beat on high speed till white and fluffy.
4. Pour in melted margarine and continue beating till soft and fluffy.
5. Add coloring and essence.
6. Line a swiss roll tray, a rectangle shallow tin sized 11" x 8". With this recipe, you'll get 3 swiss rolls.
7. Pour enough mixture onto the tray and bake for 15 minutes.
8. Once baked, leave it to cool then spread the cream on top of the cake. Put a bit of blueberry jam here and there, then roll tightly and neatly.
9. Slice and serve. If you want to keep them for later use, just wrap the swiss roll with cling film and keep them in the fridge.

Cream :

1. Boil 250g sugar with 150g water. Leave to cool slightly and keep it in the fridge to chill.
2. Beat 500g butter with 1/2 teaspoon vanilla with a mixer.
3. Slowly pour in the chilled syrup and continue beating till white and smooth.

Jam :

In a pot, place 1/2 tin blueberry, 1/2 tablespoon corn flour and a bit of water. Cook till the mixture thickens.
* Can be replaced with the ready made blueberry jam

Note :

1. Clever me, didn't ask Sis Rossya, how long will it take to bake, so I sort of overbaked my swiss roll. So the edges were quite crusty. Otherwise, the taste is yummy.
2. And clever me again, didn't ask Sis Rossya, how to prepare the cream. So I beat by the hand, that's why my cream doesn't turn white. Nevertheless, the taste remains yummy....
3. For the strawberrry flavoured swiss roll, I put a bit of mixed fruit jam.
