CREAM CHEESE POUND CAKE (Kak Noor)

 
 
Rounding up for last weekend stories. Nothing much happened and no experiments were being done in the kithcen. Infact I didn't do much cooking at all last weekend...On Saturday, we were out of the house by 7.30am. There was a triathlon event in Syahmi's school. It's one of the fund raising event for the Year 6 Durban Tour as well. In this triathlon, a team consist of 3 participants will have to do swimming, cycling and running. They were put in different categories, minis, midis, juniors so on so forth (there are a few more categories and I am not sure what they are called). Syahmi is in the Junior B team. They started of with the swimmers. Once he/she finished swimming, he/she will run towards the cyclist, tag him/her and he/she will start cycling the whole course. When he/she finished cycling, he/she will drop the bike and run towards the runner and tag him/her and he/she will run to complete the whole event. Syahmi was doing running. He did well but unfortunately their team came 4th. So no prizes....sorry Syahmi...well tried though....

While the events were taking place, I was busy helping at the school's PTA (Parent-Teacher Association) stall. I'm supposed to be helping for an hour or so but ended up staying there for quite a while, just to give a helping hand. Besides helping, I get to be around friends which I hardly had the chance to do nowadays. So it's kinda day out for me as well. Over all, the Triathlon was a success. Thank you to all that had helped and to the main sponsor in order to make this event a successful one. And speaking of success, I am so happy that day because, I sold all my tickets and I was promised a free meal voucher for two from Nandos for the Durban Tour Raffles.

On Sunday, didn't get much chance to be infront of the pc, because the kids conquered both the pc and the laptop. So mama went dating again with Miss Iron. Managed to finish 90% of the load. Well done mama....hahahahaha.....the end......

For today's recipe, since I haven't tried anything new for these couple of days, I just dug from my archives and decided on this recipe. It's a cake I made for a friend's birthday. Didn't get to taste much though, but my friend liked it. It's Kak Noor Yussoff's Cream Cheese Pound Cake. Thank you Kak Noor for sharing the recipe with all of us. It's supposed to be a plain Cream Cheese Pound Cake but clever me, didn't read the recipe properly and actually I was too eager to try it out, I thought it's a Fruit Cake recipe, so I added fruit mix! Anyway, the end result was just lovely..so I guess, no harm done ey.....



CREAM CHEESE POUND CAKE (Kak Noor)

Ingredients :


2 cups flour ~ sifted
(I used cake flour)
1 1/2 teaspoon baking powder ~ sifted
1/4 teaspoon salt
1 cup unsalted butter
(I used margarine)
6 oz cream cheese
1/2 teaspoon freshly grated lemon rind ~ optional
1 1/3 cups superfine sugar
(I used castor sugar)
5 large egg yolks ~ lightly beaten
2 teaspoons vanilla extract
5 large egg whites
1/8 teaspoon cream of tartar

Method :

1. Preheat oven to 325 F/ 160 C. Butter a 9 inch flat bottomed tube pan or fluted ring pand and dust with all purpose flour.
(I used a 9 inch square tray, layered with grease proof paper)
2. Sift together flour, baking powder and salt. Set aside.
3. Cut the butter and cream cheese into 1 inch pieces and place in the large bowl of an electric mixer fitted with the beaters or paddle attachment. Add the lemon rind. Soften on low speed for 2 to 3 minutes. Increase the speed to medium high and cream till smooth and light in color, about 1 1/2 to 2 minutes.
4. Add the sugar, 1 tablespoon at a time, taking 6 to 8 minutes to blend it in well. Scrape the sides occasionally.
5. Add the egg yolks in 3 additions at 1 minute intervals, scraping the sides of the bowl as necessary. Blend in the vanilla.
6. Reduce the mixer speed to low. Add the dry ingredients all at once and mix until blended. Scrape the sides of the bowl. Increase mixer speed to medium-low and mix about 30 seconds longer.
7. In a separate large bowl of an electric mixer fitted with beaters or whip attachment, beat egg whites on medium speed until frothy. Add the cream of tartar and increase the speed to medium high. Continue to beat until the whites are shiny and stand in firm peaks. Do not overbeat.
8. With a 2-3/4 inch wide rubber spatula, fold 1/3 of the beaten whites into the batter, taking about 20 turns to lighten. Then fold in the remaining whites, taking about 40 additional turns.
9. Spoon the batter into the prepared pan and smooth the surface with the back of a tablespoon. Center the pan on the rack and bake in the preheated oven for 60 to 65 minutes, or until the cake is golden brown on the top.
10 Remove the cake from the oven and set the pan on a cake rack for 10 to 15 minutes to cool. Invert the cake onto a cake rack and remove the pan. Just before serving, dust the top lightly with confectioners' sugar.

Storage: Store at room temperature under a glass cover or in an airtight container for up to 7 days.

Masa baru keluar oven, sedap la, dia sejuk je, jadi keras. So gini, kalau resipi tu kata, last step masukkan tepung, then Yani kaupbalikkan tepung dan kalau last step kata masuk stiff egg white, Yani kaupbalikkan the egg whites. Jangan digodak. Process kaupbalikkan ni yang buat kek tu ringan, so tak keras. You can even see the lightness of the mixture masa prosess kaupbalikkan tu. Mama nowadays kalau buat kek, mesti ada that method even though dalam resipi tak sebut. Nanti Yani try ye. For a start, kalau takut membazir, Yani cuba buat Oil Cake sebab kek ni belanja tak tinggi.
29. han>> Beat egg white alone, without sugar. Beat sampai ringan. To check, cuba terbalikkan bowl, the egg white will not drop. Kalau mixer mama yang hanya ada dua speed ni...mama guna the highest speed for about 5 - 10 minutes. Then kaupbalikkan (cut and fold) the stiff egg whites into the mixture. Jangan digodak, just lightly fold in.
