CHICKEN STEW (Kak Liza)

Chicken Stew
Award for the laziest mom of the day goes to MamaFaMi! I am so very lazy today! Slept again after Fajr till past 9! Was enjoying the airbed that hubby bought yesterday. When I woke up, I told hubby, please don't let me sleep too long next time but he said, "No..you have to sleep extra on weekends!". But I don't like it at all. When I wake up late, I tend to be lazy and less energetic... makes me feel like a sick old lady! I hope next weekend, I won't face this same situation! Must set the mind before sleeping, that I won't sleep after Fajr! Wish me luck ya!

And today, we just had a very very light breakfast, if you can call that breakfast that is...of hot Milo with biscuits. Hubby's request. So, fine by me since I was in a lazy mode! Hahaha...After 'breakfast', we went to GAME, again...as hubby wanted to buy another 2 airbeds for the kids. From there, we went straight to KiPs to get our lunch takeaways. Me and hubby had Nsima and beef stew and the kids wanted Nsima with quarter southern fried chicken and icecream.

Speaking of beef stew, last Thursday, I tried cooking chicken stew. I got the recipe from Kak Liza's fotopage. It's easy and fast to cook. Had it with rice. Thank you Kak Liza for sharing the recipe with us. In future, if I come across other version of chicken stews, I don't mind trying it out as well...just to have a thicker printouts and more tested recipes to share...hahaha....



CHICKEN STEW (Kak Liza)

Ingredients (A) :

500 g chicken ~ remove the skin and cut to small pieces
2 spring onions
Coriander leaves or daun bawang
1 carrots ~ sliced
1 tomato ~ cut to 6 pieces
3 young corns ~ sliced
cooking oil

To mix (B) :

1 teaspoon light soya sauce
1 teaspoon cornflour
1/2 cup water
1 teaspoon black pepper ~ crushed
1 teaspoon sesame oil
salt to taste

To be sliced and then saute (C) :

5 shallots
2 garlic
1 inch ginger
2 fresh red chillies

Method :

1. Heat oil and saute the sliced ingredients (C) till soft and fragrant.
2. Add in the chicken pieces and leave to cook.
3. Add in the carrots and young corns.
4. Then the tomatoes go in.
5. When it's almost cooked, pour in the mixed ingredients (B). Stir well.
6. Remove from heat and sprinkle with spring onions and coriander leaves.
7. Serve with rice or bread.

Note :

I added a bit more water for extra gravy.
