I am so tired! Serves me right! Hahaha...who asked me to bake so many cookies today...Well, I have myself to blame, so no complaints. Actually I planned to just bake 2 cookies, 1 new recipe and my mom's pineapple tart, but ended up doing 3. This cookie thingy is such an addict! But I think, I'll stop for now, because, I think I had enough to cover my Eid plate. Eid plate? Again? Yeah...Fatin wanted to give some of her friends plus I have to return a few plates as well, so yeah...Eid plates again, only this time, with different type of cookies. InsyaAllah tomorrow morning, I'll be doing the finishing touches to the cookies (whatever that may be...hahaha!), pack them in the plates and hopefully by Wednesday will be able to do the deliveries....

Thank you all for the concern about my 'unwanted friend' aka headache. Really appreciate all the suggestions. Actually it's true, I am long due to go for a thorough check-up. I think the body needs some overhaul to be done...hehehe...But insyaAllah I will get it done in Malaysia, preferably and soon, hopefully....

And today, I just cooked a very simple menu, but well enjoyed by all. Was rather surprised to see the kids enjoying their lunch with that very simple dish. Infact, I didn't eat lunch because we ran out of rice! Hahaha...But actually I was still full after that Maggi Tomyam I had for brunch.



Like I've mentioned in my yesterday's entry, I just feel like baking something and indeed I did! I baked 2 types of cookies. So for today's recipe, I'll paste one of the recipes I made. It's called Biskut Bintang Hazel or my translation will be, Hazel Star Cookie. Got this recipe printed out from Sis Rossya's page. Thank you my dear sis for this lovely recipe.



BISKUT BINTANG HAZEL (Sis Rossya)

Ingredients :

100 g peanut butter
80 g icing sugar
200 g butter
(I used margarine)
1 egg yolk
60 g cornflour
1 tablespoon rice flour
230 g flour
60 g Horlicks with chocolate flavour
(I don't have Horlicks, chocolate flavour, so I used Ovaltine)
40 g Hazel nuts ~ grinded finely
1 - 2 egg yolks ~ for brushing
(I just used the leftover egg white because I'm stingy! Hihihi!)
chocolate rice/vermicelli ~ to sprinkle

Method :

1. Cream peanut butter, sugar, butter and egg yolk.
2. Add in cornflour, rice flour, Horlicks and ground Hazel nuts.
3. Add in flour, little by little till a soft dough is formed. Need not finish the whole amount of flour. Just use whatever's needed.
4. Roll to about 4 mm thick and cut using a star shape cutter.
5. Arrange on a tray.
6. Brush some egg yolk on top and sprinkle with a bit of chocolate rice/vermicelli.
7. Bake in a preheated oven at 160 C for 15 - 20 minutes or till done.

Icing sugar tu, you can adjust according to the sweetness you wish. That Pilsbury Cake Mix tu halaal ke? Just asking because I am not too sure, but I don't use it tho it's available here.

Bukan apa, ramuannya tak berapa banyak dan tak berapa mahal, so kalau katalah resultnya kurang memuaskan, tidaklah membazir nanti...be confident, Ina boleh buat ok. Tricknya : kaupbalikkan tepung dan putih telur dan bukan godak tau, to get a lighter cake. All the best!
