Kuih Makmur
It's true I guess, if we've planned ahead at night as what we are going to do the following morning, things will work out pretty smoothly. Like yesterday, before going to bed, I had said to myself, I'm going to cook Nasi Lemak for breakfast. And this morning, eventhough I woke up a bit late, I still managed to cook Nasi Lemak just in time for hubby's breakfast. But the thing about planning ahead, before sleeping is hardly possible because mama can just doze off in an instant, just like the light's switch! Hahaha!

Anyway, after hubby left for office, went on the net just for a while then off with the housework and since the sun is shining today, I decided to finish off washing the other four chairs...Yeah yeah I know...after SOOOOO LONG! Hahaha...you can't expect me to be under the hot sun washing the chairs while fasting! Yeah right...I am quite an expert in giving excuses...thank you...will take that as a compliment....hahaha....



After that's done, started cooking. Finished just on time to serve hubby's and kids' lunch. Just cooked chicken kurma, nothing special. Hubby had left for office, and I am still thinking what must I do next. Maybe after I finished updating this page, I'll take a shower and be with my pal....my iron! Hahaha...and oh...Ida, let me introduce you to my best buddy......



The recipe that I'd like to share with you today is another Kuih Raya that I made yesterday, Kuih Makmur. Thanks a bundle to Kak Liza for sharing this recipe with us. I've always liked to eat Kuih Makmur but believe it or not, this is my very first time trying to bake it myself, and I must say, I'm quite satisfied with myself! Hehehe....dia dah start perasan sendiri dah haaaa......



KUIH MAKMUR (Kak Liza)

For the dough :

500 g flour
80 g castor sugar
Ghee ~ enough to make soft dough

For the filling :

300 g groundnuts
70g castor sugar

** I think half recipe of the filling is enough for 1 recipe of the dough

Icing sugar ~ for coating

Method :

1. Combine all the ingredients for the dough to form a soft dough.
2. Place the groundnuts on a tray and bake in the oven for about 20 minutes or till the skin can be easily peeled off.
I cheated....I used the peanuts that are ready to be eaten from Tambala Food!
3. Remove the skin and grind the nuts. Mix well with sugar. Leave aside.
4. Take a bit of dough
(I weighed mine, 15 g each just to get all the cookies to be of the same size), roll into a ball and then flatten it.
5. Place the filling and cover. Shape it oval, like the shape of a date.
6. 'Clip' on top of the dough just to give it a prettier look!
7. Arrange on a tray and bake in a pre-heated oven at 160 C for 20 - 25 minutes or till done.
8. Leave to cool before dusting with icing sugar.
9. Keep in an air tight container.
