EID MUBARAK...today, Tuesday, 24th. October, 2006, all Muslims in Malawi celebrated Eid after a month of fasting in Ramadhan. Alhamdulillah....They didn't sight the moon on Sunday, so we had to fast on Monday as well. To me, I'm happy it turn out to be that way as it gave me ample time to prepare for Eid. I started with boiling the nasi impit and at the same time were mopping the house. When the mopping was done, I started with the Rendang, Kuah Kacang and Satay. And this morning, I finished off with Sayur Lodeh and Lemang. Those are the simple dishes that I managed to prepare for my family this Eid...sorry to disappoint you if the menu is not up to your expectations. But alhamdulillah, we enjoyed it.



In Malawi, the way we celebrate Eid is just by being with the family. Those with families over here will meet up at the main house and spent the whole day there. As for us, it's just us...In the morning, I phoned my family and hubby's. Can't hold back my tears when I heard my dad's voice. I just burst into tears after I put down the phone. Maybe I miss them so very much. Hope they had a nice Eid......

I spent the whole afternoon 'playing' with my latest 'toy' that hubby bought for me last Saturday. This one I must say, will be the favourite 'toy' as of now. It gave me greatest pleasure ironing. Yuppppp...hubby bought for me a bigger size and heavy steam iron...Thanks dear. I'm like addicted to it...and can't stop ironing. You know what...my HUGE pile of clothes are gone, FINALLY...Pheww!

As for today's recipe, let me just put the recipe for RENDANG. I got this recipe from the Adabi Rendang Daging packet.



BEEF RENDANG

Ingredients :

600 g beef fillets ~ sliced
1 packet (30 g) Rendang Daging Adabi
2 1/2 coconuts (3/4 to be made into kerisik and the balance to produce 4 cups of coconut milk)
3 pieces tumeric leaves ~ sliced
2 kaffir leaves (daun limau purut)
salt
sugar
thick tamarind juice

To be grinded to form paste :

15 shallots
4 lemon grass
1 inch fresh ginger
1 inch galangal (lengkuas)

Method :

1. In a wok/pot, place the sliced beef fillets, coconut milk, Rendang Daging Adabi powder and the grinded paste.
2. Stir to mix and leave the beef half cooked.
3. Add in kerisik, salt, sugar, thick tamarind juice, tumeric leaves and kaffir leaves. Stir well.
4. Reduce the heat and stir frequently to avoid the rendang to stick at the bottom of the pot.
5. Leave to cook till almost dried up.
