Today I am feeling much better...should be, because I spent 1/2 the day sleeping. I guess the medicine I took is just so powerful and since the body is weak, so I had to give in. Anyway, no regrets as I am also forbidden to be in the kitchen till I'm strong enough. Dolly had been so sweet enough as to give me a pot of Akhni for my Iftar today.



And just in case hubby doesn't want Akhni, I cooked for him Rice Porridge. We had been wanting to eat this for quite sometime but since my salted eggs are not ready yet to be eaten, I had to postponed this menu. Anyway, the salted eggs are not so salty but hubby said, will do.
Rozzan's rice porridge version :

For today's recipe, I'll post something I made a few days before. It's called Muffin Berlauk or shall I say, Savory Muffins. Got this recipe from Kak Liza. When I browsed her page and came upon this recipe with her scrumptious photo, I just couldn't resist! Here's the recipe if you care to try...


MUFFIN BERLAUK

Ingredients :
Filling


1 cup minced chicken (I used minced beef)
2 pototoes ~ cleaned and diced
5 shallots ~ chopped
2 tablespoons meat curry powder ~ mix with 2 tablespoons water to form paste
2 tablespoons oil
spring onion
salt

Method :

1. Heat oil and saute onion till soft and fragrant.
2. Add in the curry paste and stir well.
3. Add in potatoes, chicken and salt.
4. Add a bit of water and leave to cook or till the potatoes are soft.
5. Let it cook till little water remains.
6. Remove from heat and leave to cool.

For the cake

3 eggs
50 g castor sugar
1 tablespoon evaporated milk (I used fresh milk)
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ovallete
130 g flour

Method :

1. Sift flour and baking powder into a mixing bowl.
2. Add in the other ingredients and beat using a balloon whisk till fluffy.
3. Get the steamer ready.
4. Scoop the mixture into the muffin cup layered with paper cups, half full.
5. Place the filling on top
6. Steam for about 20 minutes.

24. Ina>> Waalaikumus salam Ina. Baking powder ialah bahan penaik. Baking Soda dan Sodium Bicarbonate adalah benda yang sama. More information about these two ingredients can be found here. Rasanya susu tepung tu tak boleh ganti dengan fresh milk sebab bentuk yang berlainan, powder and liquid. I think, you can just omit the susu tepung dan ganti either dengan tepung biasa ataupun cornflour. Wallahu'alam.
