Wanted to write my activities for the last three days, but since it's getting late...and it is REALLY REALLY LATE like 1.05 am....so I'll save my grandmother stories for later. Will go straight to the point....

Jaja had asked me for the step by step photos of how I made my sausage rolls and so here it is...made half the recipe just for the sake of taking these photos...I hope this will help you Jaja and the others...For the recipe, please refer here.


This is another ROTI CANAI recipe. And actually, all these while, I've been using this particular one for all my frozen roti canai. Got this recipe from Puan Zainab. Later improvised, when I went to visit Puan Hasnah in Canada. She had asked me to add condensed milk. And the final upgraded version, by adding shortening, was discovered when I went to Puan Nor's house in Zimbabwe. So I guess, this recipe is just nice for me. Thanks to my daughter Fatin for making this photography session possible. She's the model, not the photographer...hahaha...And she actually did one of the Roti Canai all by herself! I am proud of her....and if you see in the photo, #14 is Fatin's work of art and she snapped the photo on her own! Bravo to my daughter... Thank you my darling....



ROTI CANAI

Ingredients :

500 g flour
300 ml water
1 egg
1 teaspoon salt
2 tablespoons condensed milk
1 tablespoon shortening


Method :

1. Prepare the ingredients.
2. Dissolve salt in water.
3. On the mixer and pour in the salt water bit by bit...
4. ...till soft and smooth dough is formed.
5. Make into 11 small balls.
6. Coat with margarine and keep for at least 2 hours. The longer the better. I kept it overnight in the fridge.
7. Pour some oil and margarine in a bowl.
8. Grease the table with a bit of oil and flatten one small dough. Spread a bit of oil on the flatten dough.
9. Hold the dough as shown in the photo and start 'throwing' (tebar aa..bukan buang! Hahaha!)..
10. Pull the sides of the dough to get a thinner sheet. Sprinkle with a bit of # 7.
11. Bring the sides to the center.
12. ...to form a long dough.
13. Hold upwards and swirl it.
14. Leave it for half an hour.
15. Flatten it.
16. And keep it in a container, each piece must be layered with a small piece of plastic. Or otherwise, fry on a hot pan with a bit of oil.

Tapi everytime, when you want to try out something new, make it a habit to halve or quater the recipe. Sebab kalau tak jadi, then taklah bazir banyak. About shopping in Sri Lanka, I don't think it's a good idea at the moment. Kawan baru balik dari sana sempena cuti sekolah, dia kata dah start perang baliklah...

So what I mean to say is, kalau takat nak masak during weekend dan dapur pun kecil, beli je la oven yang kecil dah memadai rasanya. Tapi kalau rumah baru dah nak siap, then beli sekali yang elok pun okay juga.

26. eddycute>> High protein flour is bread flour. You can use SnowFlake Bread Flour. I guna Azzam flour. Tapi la ni sebab mama beli banyak tepung cake, so I simply use the cake flour. And for the yeast, I prefer Anchor Yeast the one in the purple color packet. Kami di Malawi ni, banyak guna South African product sebab beli kat Shoprite tapi harganya...mahal la...but what to do!
27. masita>> Rasanya tepung gandum pun okay as long as yeastnya bagus, insyaAllah. Dah pernah cuba guna tepung kek tak? Mama buat roti ni semua guna tepung kek, sebab mama selalunya beli tepung kek banyak-banyak sekali gus, wholesale, much cheaper. So semua benda pun mama hentam tepung kek je.

Kalau menguli dengan tangan, paling kurang setengah jam dan kalau menggunakan mesin/mixer 15 minit. Doh MESTILAH lembut. Sukatan air mungkin sedikit berbeza bergantung kepada tekstur tepung. Seeloknya perap doh yang telah disalut dengan majerin lama sikit...mama selalu uli pagi, dan tebar selepas maghrib. Then biar prove betul-betul. Suhu oven pun kena betul. I normally bake my bread at the same suhu as cakes. Once out of the oven, sapukan butter on top. Then agak sejuk sket, terus simpankan dalam airtight container.
