Hellikonia's All-In-A-Pot Chicken
Dinner
Chips? Fries? French Fries?
Homemade Coleslaw & Mashed Potato
Finger lickin' good!
I am feeling rather down. Something happened....but best to just leave it untold....

Chicken? Who's chicken? Me no chicken...me cook chicken!!!!

The first recipe will be of Hellikonia's. She had been so sweet as to email me the recipe. It's indeed an easy and simple recipe to prepare...Thanks Helli for sharing it with me....but the thing is, she did not give the name of this recipe...so now, what must I call it then? How about....Hellikonia's All-In-A-Pot Chicken.... hihihi... pretty funny eh...but catchy! Helli, I do hope this is how the chicken is supposed to look like eh...sorry if I don't do justice to your recipe....



HELLIKONIA'S ALL-IN-A-POT CHICKEN
***The set : Rice + Chicken + Jelatah (cucumber + pineapple)***

FOR THE CHICKEN

1 chicken ~ cut to 4 portions
Coconut milk (from 1 1/2 coconut) ~ enough to cover the chickens in the pot
1 small packet curry powder
lemon grass ~ bruised
3 - 4 shallots
2 garlics
1 inch ginger
bird eye chillie ~ depends on how hot you want it to be
dried tamarind skin (asam keping)
2 tumeric leaves
1/2 teaspoon tumeric powder
salt to taste

Method :

1. Grind shallots, garlic, ginger and bird eye chillie to a fine paste.
2. Arrange the chickens in a pot, preferably a non-stick pan. Pour in the coconut milk, just till all the chickens are covered.
3. Add in the grinded paste, dried tamarind skin, tumeric leaves, tumeric powder and salt.
4. Cover the pot and let it simmer on medium heat till the gravy thickens.
5. Remove from heat amd transfer into the oven and grill till golden brown. But if you don't want to grill it in the oven, just leave the chicken to cook on the stove but be careful not to let it burnt.

RICE :

3 glasses Basmati rice
6 glasses water
1/2 glass evaporated milk
4 tablespoons ghee
1 - 2 ripe tomatoes ~ quartered
1 onion ~ sliced
2 garlic ~ sliced
star anise
cloves
1 sup bunjut powder
1 screwpine leaves
yellow coloring

Method :

1. Wash rice and drained.
2. Heat oil and add in star anise, cloves, sup bunjut powder and screwpine leaves till fragrant.
3. Add in water and salt. Leave to boil.
4. Add in rice and evaporated milk.
5. Stir to mix and let the rice cook.
6. When the rice is about to cook, put a few drops of yellow coloring on to the rice. Don't stir.
7. Let the rice fully cooked than stir to get a nice color tone.

Note :
1. For the chicken, I used fresh milk instead of coconut milk.
2. I didn't cook the rice as I was running late. Everybody was hungry! But then, I think the rice is similar to Tomato Rice. Sorry Helli, insyaAllah maybe I'll try it another day ya....


In the afternoon, we went to Superior Halaal Food to get chickens and hubby had requested for some fried chicken wing. So for hubby, I fried the chicken wings using Nenek Fried Chicken to go with fried rice.



And for the kids, something like KFC but not! Hehehe...more like what we called Southern Fried Chicken over here....For the chicken, I fried using Southern Fried Chicken recipe. For this set, I will post the recipe for the Coleslow and Mashed Potatoes. I got the recipe for Coleslow from one of my recipe books and the Mashed Potatoes recipe is from NoorMasri. Thanks Noor for the recipe. It's yummy delicious!


COLESLOW

Ingredients :

1 small cabbage
4 - 6 big carrots
mayonaise
a bit of sugar
Allspice powder

Method :

1. Soak pieces of cabbage in cold water for a few minutes. Drained and slice thinly.
2. Peel the carrot's skin and grate finely. Mix with the sliced cabbage.
3. in a small bowl, mix well mayonaise, sugar and allspice powder.
4. Pour into the vegetables and mix well.
5. Leave for 30 minutes before serving.


MASHED POTATOES

Ingredients :

1 kg potatoes
1/4 cup fresh milk
2 tablespoons margarine
1/4 teaspoon blackpepper
salt to taste

Method :

1. Clean the potatoes and cut to chunks. Boil with a bit of salt till soft.
2. Once soften, remove the water and mashed the potatoes while it's still hot.
3. Place the pot back on the stove, on low heat. Add milk, blackpepper and margarine.
4. Mix well till fluffy and well mixed.



Total cooking time : 2 hour
To finish the whole thing : > 1/2 hour!
