NASI DAGING (Nabia)

Rice +
Soup +
Tamarind juice =
Nasi Daging
Yesterday when browsing Nabia's fotopage and saw her Sardine Roll and Nasi Daging, actually I wanted to make both for breaking fast. But then, I want to eat plain rice and sardine as well...Eshhh I tell you...when you are fasting, you just wish to eat everything that you see! But when you've break your fast, you hardly eat anything! So yesterday I just stick to the Sardine Roll.

And today, actually I didn't intend to fast. But then in the morning, I was busy doing stuffs and I haven't had anything for breakfast till 9am, so I said, might as well I fast. Futhermore, I've made niyyat before going to sleep. So today's menu for breaking fast is Nabia's Nasi Daging (Beef rice). I just had to try it! Nabia...who said your photos are not tempting....it IS to me, for sure! Thanks again dear for the recipe....



NASI DAGING (Nabia)
** The set : Rice + Vegetable Soup + Beef + Tamarind Sauce**

SOUP

Beef (topside) ~ sliced thickly
25g Kurma powder ~ mix with a bit of water to form a paste
1 onion ~ sliced or blended
2 garlic ~ sliced or blended
1/2 inch ginger ~ sliced or blended
1 cinnamon stick
1 star anise (bunga lawang)
2 cardamons
lemon grass ~ bruised
Enough water

Method :

1. Heat oil and saute onion, garlic, ginger, cinnamon stick, star anise and cardamons till fragrant.
2. Add in the kurma paste and stir.
3. Add enough water (for cooking rice and also to make soup).
4. Add in beef, lemon grass and salt to taste.
5. Boil till the beef is tender.
6. Remove the beef from the soup, except a few pieces to put in the rice.
7. Remove from heat.

RICE

Soup with a few piece of beef
1/4 tin evaporated milk
Screwpine leaves
Rice ~ washed and drained

Method :

1. Place the rice in a pot and pour in the soup with the beef and milk.
2. Add in the screwpine leaves.
3. Cook like how we cook plain rice.

TAMARIND SAUCE

Tamarind ~ mix with a bit of water. Just use the juice
1 teaspoon shrimp paste (belacan) ~ grilled slightly
1 teaspoon kerisik (roasted coconut paste)
1/2 onion ~ diced
1/2 fresh tomato ~ diced
3/4 bird eye chillie ~ chopped
salt ~ if necessary
boiled and cooled water

Method :

1. Mix fresh tomato, bird eye chillie and onion with water.
2. Add in tamarind juice.
3. Add in shrimp paste, salt and kerisik

VEGETABLE SOUP

Soup
Potatoes ~ cleaned and quartered
Carrot ~ cut lenghthwise
Celery

Method :

1. Boil the soup and add potatoes and carrots till softens.
2. Add in celery.
3. Remove from heat once boiled.

Note :

1. I made a blunder ! I didn't read the recipe properly, I guess because I was too eager to get started. I didn't remove the tender beef from the soup (step #6 in SOUP). So when serving, my menu was short by one plate...the beef! Nevertheless, it doesn't actually change the taste because I still eat the beef, not from a serving plate though, but from inside my soup bowl!
2. I didn't put any lemon grass. Was just to lazy to go out of the house to cut one.
