ROTI GORENG SARDIN

Roti Sardin Goreng
The texture
Cooked Sardine for lunch, and at the same time, had something in mind to do with the leftovers lunch! Ahah!!

This morning when I was browsing through the fotopages and also a few other webpages plus chatting with an old time friend, I came across this recipe called Roti Sardin Goreng at Nabia's fotopage. I've always liked to eat this when I was back home. Use to buy this roti sardin from the pasar malam. Roughly I know how to do it, but the only thing I wasn't sure of is how to seal the bread so that it won't open up when frying. So when Nabia put the recipe in her page, I just had to try it, and so I did. Thank you Nabia for the recipe...Here'e the easy kapeasy recipe if you care to try.....



ROTI SARDIN GORENG (FRIED SARDINE BREAD)

Ingredients :

5 pieces bread (white or brown ~ your choice)
1 egg ~ lightly beaten and add a pinch of salt
Oil for frying

Filling :
1 can Sardine in tomato or chillie sauce
1/2 teaspoon crushed garlic
1 onion ~ diced
1/2 tomato ~ diced
lemon juice
salt ~ if necessary
Oil

The 'glue' :
1 tablespoon flour
1 teaspoon water

Method :

1. To prepare the filling : Heat a bit of oil and add in the garlic. Fry till fragrant and add in diced onion. Saute till soft. Add in the diced tomato. Cook till soft then pour in the sardine together with the sauce. Add in the lemon juice and salt if necessary. Set aside to cool.
2. Take a piece of bread and roll flat using a rolling pin.
3. Spread the filling evenly.
4. Roll the bread and secure the end with the 'glue'
5. When oil is hot, dip the rolled bread into the egg and fry till golden brown.
