BINGKA BERLAUK (Hanieliza)

Bingka Berlauk
Today, again I did nothing. Spent half of the day infront of the pc , trying to put a new setting to my page. It was all because, I can't hear any music when I open my page. I guess there's something wrong with the webpage for the song. Then my daughter gave me a new music link. When I put that on, the photo on the tag went missing. Together, me and Fatin tried to solve the problem till both of us were too tired . After 5 hours, then I decided to stop trying...not giving up totally though...had to stop because both of us were just exhausted! In that 5 hours period, I've changed trice the song, all because, we had to play it over and over again to check, that I finally got bored of the first 2 songs! Hahaha! Anyway, if anybody cares to give a helping hand, we'd APPRECIATE it very much! See, how desperate we are!

So for today's recipe, I'll paste what I did last Monday. That day, when I was baking the Chocolate Chip Cookies, while waiting for one tray to finish baking, I sat infront of the computer and who must I see online? Forever Kak Liza and like I always tell her, my days will not be completed if I don't 'disturb' her, even with only one sentence! Hahaha...please bear with me Kak Liza dearie! She was baking this kuih and when she gave me the recipe, it looked so simple that I must give it a try straight away. Thank you Kak Liza for the simple and nice recipe.




BINGKA BERLAUK

Ingredients :

1 cup flour
3 tablespoons corn flour
3 cups coconut milk or (1 cup evaporated milk + 2 cups water)
1 teaspoon salt
2 eggs
1 teaspoon vanilla essence
2 tablespoons cheddar cheese

Method :
1. Blend the above ingredients except cheddar cheese in a blender. Pour through a sieve into an 8" x 8" greased (with margarine) tray.
2. Just before putting the tray into a preheated oven at 180 celcius, sprinkle the cheddar cheese. Bake for 20 minutes.
3. Bring out the tray and sprinkle with the topping. Bake for another 30 minutes.
4. Remove from oven and leave to cool. Garnish with chopped spring onions and fresh red chillies.
5. Cut and serve.

Topping :

200g minced meat
2 potatoes ~ diced
1 onion ~ diced
1 small carrot ~ diced
1 tablespoon curry powder
2 fresh red chillie ~ chopped
spring onion ~ chopped
1 tablespoon oil
salt

Method :

1. Heat oil in a wok and saute the onion.
2. Add in minced meat and stir well.
3. Add in the curry powder, stir.
4. Put in the diced potatoes, carrot and salt. Cook till the potatoes and carrots softens.
5. Remove from heat.

Note :

1. I don't have evaporated milk, so I just used fresh milk. Instead of (1 cup evaporated milk + 2 cups water), I put (2 cups fresh milk + 1 cup water)
2. For the topping, I just sprinkled my leftovers curry puffs filling.
