Remember in yesterday's entry, I said my mini bun was a disappointment? Well, here's the latest report. Yesterday I thought of just letting the dough take it's own sweet time to rise. And indeed..do I let it 'take it's own sweet time'! I totally forgot about the dough and went to sleep! Hahahaha! Alhamdulillah it didn't over-bloat which proved that something was actually not right about the dough. But I just baked it in the oven and wallah, it wasn't pretty bad. It's soft and spongy! Hey, it wasn't a failure after all!


For breakfast...I wanted to fry some rice, but ran out of chillie paste. Then I remembered the leftover sambal ikan bilis. That gave me an idea...Wallah....here's my...



NASI GORENG RECYCLE

Ingredients :

Rice
Left over sambal
Eggs ~ lightly beaten
Green peas or mixed vegetable
Salt ~ if necessary
Cooking oil

Method :
1. Heat oil and add in egg. Fry like you're making scrambled eggs.
2. When the eggs are 3/4 cooked, add in the left over sambal and stir well.
3. Add in the green peas or mixed vegetables.
4. Add salt if necessary.
5. Finally put in the rice and mix well.


For lunch, I just cooked sardine and Fried Kailan...



Then comes dinner. Nobody wanted rice for dinner, so I had to go for other options. Flipped through my thick print-outs and decided to try out the PURI recipe. This recipe was posted in the Forum Cari by Tillingtan. Thank you very much Tillingtan for this nice recipe....We had the Puri with the left over sardine...



PURI

Ingredients :

200 g flour
30 g margarine
1/2 teaspoon salt
60 ml lukewarm water
70 ml lukewarm fresh milk
oil for frying

Method :
1. Rub flour, margarine and salt.
2. Pour in water and milk, little at a time.
3. Knead till a soft dough is formed, about 10 - 12 minutes.
4. Rub a bit of oil on the dough surface and cover with a clean towel. Leave to rest for 30 minutes.
5. Knead again and make into small balls of 15 to 20 grams each.
6. Roll flat and fry in medium heat till golden brown. The puri would puff up.
7. Remove from oil and place on a kitchen towel.

Note :
1. I used extra liquid in the dough.
2. This recipe yields 15 Puri.

Ellie had asked me if I have a carrot cake recipe. So here's the recipe of a carrot cake that I've tried a few weeks back. Found this recipe in Forum Cari but I am very sorry, I forgot who posted it. Anyway, thank you very much to whoever it was and also to Suria for the recipe...


CARROT CAKE SURIA

Ingredients :

4 eggs ~ separate the whites and the yolks
1 1/2 cups corn oil or vegetable oil
150 g castor sugar
150 g brown sugar
1 1/2 cup carrot ~ shredded

To be sifted :
250 g flour
1 teaspoon cinnamon powder
1 1/2 teaspoons baking soda
1 teaspoon salt

100 g walnut ~ chopped (a must to give the cake a better taste)

Method :

1. Beat the egg yolks. Then add in oil, castor sugar, brown sugar and shredded carrots. Mix well.
2. Add in the walnuts.
3. Add in the sifted ingredients.Mix well.
4. Beat the egg whites till stiff.
5. Fold in the egg whites into the cake mixture.
6. Bake in a pre-heated oven at 180 celcius for 45 minutes.

Frosting
120 g butter
250 g cream cheese
120 g icing sugar

Method :
Beat the above ingredients till light and fluffy. Spread on top of the cooled cake and sprinkle with walnuts
