SAMBAL

Lunch today...
SAMBAL
mommy_d&d and Naem had asked me for the sambal recipe. So today's recipe will be that one which I will paste at the end of my grandmother story. I just feel like writing something today..Before that, we had these for lunch.

I've been interested in cooking eversince I was small. I think, I got this from my late nanny. She was with our family before I was even born into this world. So I'd rather address her as my grandma instead of my nanny. Mak Nah was a great cook. Whatever she cooked, they were just simply scrumptious. Not to mention all her kuihs. After working at our house, she'll make kuih to sell which were always sold out! I used to follow her home when mom had extra curricular in school. My mom is a retired teacher. And I'll sit and watch her work. I'd rather stay with her in the kitchen then play with friends. Now Mak Nah is no longer in this world (may her soul rest in peace) and I miss her so much. The last time I visited her was a year before she passed away, I kissed her wrinkled cheeks and hugged her fragile body...her last words to me..."Entah Mak Nah jumpa Ayung lagi ke tak lepas ni?" (translation : Will I ever see you again after this?) is still fresh in my mind...I just miss her so much...................

****** ******

Mak Nah stopped working at our house when I had finished school and waiting for SPM results. She just wanted to stay at home and make kuihs to sell. Even when she was no longer working with our family, we always go to her house in the evenings. When she left, that's when I took over the housechores, by choice that is. And the first thing my my mom taught me to cook is SAMBAL. She will write the recipe on the white board and I'll follow step by step. A week with sambal is fine...than I got bored of cooking sambal and my mom didn't teach me anything new. Maybe she had thought that I'm not interested or what. And at that time, we don't have computers let alone to go on internet. So, I phoned my friend Momtach Begum because I know her mom had been teaching her a lot of new stuffs. And the first thing that I learnt was how to make Rendang. Fearing that my first attempt won't be nice, I just cooked a bit...it's REALLY A BIT! When my dad came back from the office, he finished the whole small (and I mean SMALL) bowl of rendang. Mom had to go buy something else for our lunch! Then, I got to know from my mom, dad said my rendang was delicious! That really meant a lot to me. And from there onwards, mom taught me a lot of new recipes which I typed and bind nicely for my job as 'cook of the house'.......

As promised, here is my mom's sambal recipe but the amount of ingredients, I just followed what I did just now. So...
Try at your own risk!

SAMBAL

3 tablespoons chilli paste *
4 shallots ~ pounded
2 garlic ~ pounded
a bit of tamarind juice
1 tablespoon sugar
salt to taste
onion ~ sliced
cooking oil

Method :
1. Heat oil and add in chillie paste. Fry till fragrant.
2. Add the pounded shallots and garlic. Continue frying.
3. Add tamarind juice and stir. If the sambal is a bit dry, add a bit of water.
4. Add sugar and salt.
5. When you are about to off the fire, put in the sliced onion.
6. For Sambal Ikan Bilis : Fry some dried anchovies, let the sambal cool a bit then add the fried anchovies. Mix well.
For Sambal Telur : Add a bit of soya sauce to the sambal when cooking. Boil the eggs and then fry them a bit (that's my Mak Nah's style). Cut into half and arrange in the bowl. Pour the sambal on top.

* Note : I am running out of Malaysian dried chillie now, so I had to buy the dried chillie from here and I tell you, they are
REALLY REALLY HOT and burning (pijar). So I will only use a bit of it, and mix it with some chilli powder I got from Malaysia...otherwise it's just not edible...

Happy 20th Anniversary to Lin and hubby!

Ceritamu, ceritaku...
Quote:
Hanna & Eez>>Alhamdulillah la kalau Hanna terasa begitu. Semangat mesti ada dulu, masa boleh dicari....Nanti weekends, mesti berasap asap dapur Hanna ye...
aZeeMaH>>Moga semuanya berjalan dengan selamatnya...insyaAllah...
zack>>Last Sunday mama baru buat nasi lemak for brunch. Ha ah, I visited before you commented here.
mummy hamim2>>Hamim makan pedas ke? Lenkali, kalau cam gitu, masaklah udang yang telah siap siap dikopek kulitnya. Kulit tu rebus ambil airnya untuk kemanisan sambal. Kan senang. Bila makan, Hamim ngap mummy pun leh ngap sekali!
kakyong>>Tu la Kakyong, ntah tetiba hari ni mama rasa rindu pada aruahnya...The sambal, mak ajar dulu memang boh belacan, tapi mama malas masukkan...Karang outsiders tak tahu pulak apa itu belachannnn...hihihi...
cuyus>>Kegemaran kami sekeluarga juga...
yangmazni>>Mama ni kalau masak, nak simple and fast je...so memana yang boleh omit, mama omit je...no doubt, kalau masuk those two extra ingredients, memang menambah kesedapan sambal
muni>>Thank you for enjoying the photos. There are times when I feel this way..just can't help it...
harleena>>Mak tak lah really demo memasak. Tapi sebab mama selalu di dapur, mama tengok mak masak. Then, bila mak tengah mark buku sekolah murid-murid dia, mama dok kat meja dengan kertas dan pen, mama salinlah resipi. Sebab basic step dah tahu...so just ambil resipi ajalah...
Shah, Sya, Syahmi>>Mama suka goreng ikan bilis tu and then masukkan dalam sambal bila dah sejuk...jadi garing gituuuu....mama kalau wat sambal telur, MALAS nak goreng sket...takut meletup. Hihihi...alasan bernas woooo....
nic>> Bravo nic! Di mana ada kemahuan, di situ ada jalan...dan masa.... Nanti citerlah kat mama apa yang nic dah cuba ye and how was the outcome....make me proud of you okay....and make your parents happy as well...for me....
mommy_d&d>>Yang mana senang tu, boleh le buat terus. Kalau yang leceh sket tu, kenalah tunggu sampai angin rajin mama sampai! Hehe....Besar jasa kakak angkat mommy tu ye. Mama ni, memang dah minat sendiri. Actually sejak umur 9 tahun lagi dah curi-curi masak nasi. Dok pakat dengan orang gaji (bukan Mak Nah) masa dok Seremban 2 tahun...Kak Dilah jangan cakap dengan mak, Ayung masak nasi tau! Hihihi... takut mak marah....And then, bila nak raya, kami tiga beradik (termasuklah my brother) sibuklah mengaruk mak bila nak buat kuih sampai pening kepala orang tua tu! But then, we finished whatever we started sampailah kitchen spick and span clean balik semula tau...
Julie - Mama Iman>>Mana boleh lawan air tangan mak kan Julie. Mak mama kalau goreng nasi... punyalah sedap. Pernah once mak datang rumah mama kat USJ masa tu, mama kata...Ayung nak tengok mak goreng nasi, guna nasi kat rumah Ayung, ingredients dalam rumah Ayung, kuali Ayung, dapur gas Ayung, tengok jadi cam mana. Peh I tell you, jadi sebijik macam mak masak kat rumah mak...So maknanya air tangan maklah yang sedap...hihihi...teruk betul kan mama ni!
Rossya>>Wah Kak Rossya, kalau buat kuih untuk jaja, mesti sedap-sedap. Sharelah dengan kami ni. Mak mama bab-bab kuih ni, koreng sket. Yelah, dia kerja, manalah ada masa nak buat benda-benda ni. Lagipun kat Melaka tu, kuih murah dan sedap, so why waste time nak buat. Tapi kuih raya, memang kami buat sendiri. Tak berapa syok nak beli. Kalau nak raya, kami 3 beradik akan gotong royong buat kuih tolong mak. Kalau mama ada kat Malaysia, mama la kautim kuih raya. Ni mama jauh, dah 5 years tak buatkan mak kuih...shian mak...alahai...ni kang, hujan pulak haa......And very true...I have the same feeling...I like to see smiles on people's faces. Even happier bila dapat tahu...the family enjoyed the food that they have tried cooking themselves, if I have something to do with it la kan...happy sangat sangat.....
Ouled Kenitra>>Ada ada...lom abis lagi...perjalanan ku belum tamat....tunggu ye........
emly>>Mama punya sambal udang, lain version la yang...that's why tak masuk kat atas tu...mama bukan guna air stock ekor udang je, kepala udang pun mama rebus sekali, then tapis...itu yang buat lagi kick wei!
nabialishadYou're most welcome on behalf of all the cyber chefs in this fotopage, and mind you, I am not included...Even sampai sekarang pun, whatever mama try buat, kalau well enjoyed by the family and friends, terasa hilang penat di dapur...seronok sangat....
Dolly>>Waalaykum salams my dear. Thank you for trying out the icecream biscuits and I'm glad everybody likes it. Where did you get the potato flour from? Well, at least when I am gone from Malawi, you won't miss me that much as long as you still visit my page eh...InsyaAllah will try to come one of these days....
kc>>
Azli Jamil>>Hi bro..Will be right here waiting...That ikan kering, I am not sure what it is.... I am lousy with names, but very clever at eating...hahaha...at least I am good at something huh! But I just love the ikan masin from Sarawak, what's it called? But then being here, whatever's available in the freezer, that's what we eat, alhamdulillah...Haven't been home for more than a year now....
mummy jam>>Tu la kan mummy, tak de kick kalau tak de pedas....
fasha>>Mama will be right here waiting....
Rosleenda>>You're most welcome Lin...Tu la kan, mama pun risau gak ni, berat dah bertambah ni....nak kena kurangkan makan...tapi tak leh la....selera tu datangkan adaaaaa je...nak wat cam no?
Phalinn Ooi>>Sementara ada kat Malaysia tu, suruh mak Phalinn masak banyak-banyak, hari hari so that Phalinn dapat makan puas puas ok....
naem>>Will be waiting.......
Sabrina>>Tak pe, anggaplah ia sebagai syntax error! Hihihi.....Sab buat kuih apa yang menjadi kegemaran ramai tu, share lah dengan kami...mana tahu, leh try dan jadi kegemaran kami jugak! Yes, ikan bilis dalam sambal mama pun mesti garing baru best!
Yusoff+Yana=Azhad>>Kali ni, apa pulak secret ingredient nya? Curious juga nak tahu....
EDORAS>>Tak dapeklah den nak nolong....
kuchai>>Aiyoo Kuchai, awat sampai pitam plak makan sambal mama tu...wei idaklah pedas brutal cam
