SAMBAL

Lunch today...
SAMBAL
mommy_d&d and Naem had asked me for the sambal recipe. So today's recipe will be that one which I will paste at the end of my grandmother story. I just feel like writing something today..Before that, we had these for lunch.


I've been interested in cooking eversince I was small. I think, I got this from my late nanny. She was with our family before I was even born into this world. So I'd rather address her as my grandma instead of my nanny. Mak Nah was a great cook. Whatever she cooked, they were just simply scrumptious. Not to mention all her kuihs. After working at our house, she'll make kuih to sell which were always sold out! I used to follow her home when mom had extra curricular in school. My mom is a retired teacher. And I'll sit and watch her work. I'd rather stay with her in the kitchen then play with friends. Now Mak Nah is no longer in this world (may her soul rest in peace) and I miss her so much. The last time I visited her was a year before she passed away, I kissed her wrinkled cheeks and hugged her fragile body...her last words to me..."Entah Mak Nah jumpa Ayung lagi ke tak lepas ni?" (translation : Will I ever see you again after this?) is still fresh in my mind...I just miss her so much...................

Mak Nah stopped working at our house when I had finished school and waiting for SPM results. She just wanted to stay at home and make kuihs to sell. Even when she was no longer working with our family, we always go to her house in the evenings. When she left, that's when I took over the housechores, by choice that is. And the first thing my my mom taught me to cook is SAMBAL. She will write the recipe on the white board and I'll follow step by step. A week with sambal is fine...than I got bored of cooking sambal and my mom didn't teach me anything new. Maybe she had thought that I'm not interested or what. And at that time, we don't have computers let alone to go on internet. So, I phoned my friend Momtach Begum because I know her mom had been teaching her a lot of new stuffs. And the first thing that I learnt was how to make Rendang. Fearing that my first attempt won't be nice, I just cooked a bit...it's REALLY A BIT! When my dad came back from the office, he finished the whole small (and I mean SMALL) bowl of rendang. Mom had to go buy something else for our lunch! Then, I got to know from my mom, dad said my rendang was delicious! That really meant a lot to me. And from there onwards, mom taught me a lot of new recipes which I typed and bind nicely for my job as 'cook of the house'.......

As promised, here is my mom's sambal recipe but the amount of ingredients, I just followed what I did just now. So...
Try at your own risk!



SAMBAL

3 tablespoons chilli paste *
4 shallots ~ pounded
2 garlic ~ pounded
a bit of tamarind juice
1 tablespoon sugar
salt to taste
onion ~ sliced
cooking oil

Method :
1. Heat oil and add in chillie paste. Fry till fragrant.
2. Add the pounded shallots and garlic. Continue frying.
3. Add tamarind juice and stir. If the sambal is a bit dry, add a bit of water.
4. Add sugar and salt.
5. When you are about to off the fire, put in the sliced onion.
6. For Sambal Ikan Bilis : Fry some dried anchovies, let the sambal cool a bit then add the fried anchovies. Mix well.
For Sambal Telur : Add a bit of soya sauce to the sambal when cooking. Boil the eggs and then fry them a bit (that's my Mak Nah's style). Cut into half and arrange in the bowl. Pour the sambal on top.

* Note : I am running out of Malaysian dried chillie now, so I had to buy the dried chillie from here and I tell you, they are
REALLY REALLY HOT and burning (pijar). So I will only use a bit of it, and mix it with some chilli powder I got from Malaysia...otherwise it's just not edible...

Mengimbas kembali kenangan saya sendiri bila baca cerita mama ni...I wasn't taught to cook...I learn thru observation and being the first daughter, I had to do the cooking while mom was at work...now ni dah besar mom's sambal and mine lebey kurang sama...cuma air tangan mak still the best! syahdu jugak lepas baca citer mama. Masak ni sebenarnya nak ader minat jugak. Kak rossya pun tak belajar banyak lauk-pauk dari arwah emak sebab dia anak tunggal.. membesar tanpa banyak pegi kedapur. tapi bab2 kuih tradisi melayu memang banyak yg my mum ajar sebab dia rajin dan minat buat kueh-mueh untuk kami jaja semasa kecil.For me, I cook cos' I like to see smiles on people's faces when they enjoy the food. Just saw your reply to my serimuka comment. Let me try and make it first, then probably I'll post the recipe. But, don't hold your breath.
ps: The ikan kering is ikan kurau, right? I think the best ikan masin is either talang or gelama coz both ada masam-masam sikit.

Tu lah dia bila dah dok jejauh cenggini, stok cili kering kat rumah nih bagaikan gold dust!!! Kalau nak dekat habis tuh, cecepatlah kena order kat Mak!! Tapi ada satu kuih yg Sab pernah buat dan kuih tuh menjadi kegemaran ramai sgt orang yg pernah merasa... hehehehe.. excitednyer...

p/s: Sab suka giler sambal tumis ikan bilis... makan ari2 pun tak per.. tapi ikan bilis tuh mesti goreng garing... baru kick.. hehehehe
