KUIH SERIMUKA

Our breakfast
Our lunch
SERIMUKA
Thought of updating my page on food yesterday night, but I fell asleep. Too tired I guess. This morning, didn't do any experiments for breakfast but yesterday I did try Sis Rossya's Roti Boyan. I will paste the report in my future entries okay.

Just had a simple breakfast of Jemput-jemput Ikan Bilis. And for lunch, I thought of trying something new, but I was running out of time, so we just settled for this simple menu....alhamdulillah.....

But two days ago, I tried again, despite my phobia, to do Seri Muka. I came across the recipe in Harlina's fotopage. Alhamdulillah this time it came out much better although I still need to do some adjustments to the recipe in future. I think if I want to do this kuih again, I have to double the topping to get a thicker layer hence yummier (is there such word?) taste! Thank you very much Harlina for sharing with us the recipe which I understand, she got it from a friend of hers, Yani. Thanks to both of you....

KUIH SERIMUKA

Ingredients :

Bottom layer

600 g glutinous rice ~ washed and soak overnight
2 cups thick coconut milk
1 cup thin coconut milk
pandan leaves (can be substitute with pandan paste)
(I used pandan essance. It's just for the aroma)
1 teaspoon salt

Top layer :

5 whole eggs ~ lightly beaten
300 g sugar
3 tablespoons wheat flour
(I used cake flour)
pandan juice (from 10 pandan leaves) - can be substitute with pandan paste
2 cups thick coconut

* I didn't use pandan juice. I add in a bit of pandan essence and a few drops of green color. Pandan is merely for giving the kuih more color and aroma*

A 24 cm sized tray

Method :

1. Drain the glutinous rice. Add in the coconut milk and pandan leaves to the glutinous rice and pour them into the tray.
2. Steam for 20 minutes. Remove tray from steamer and use a fork to stir the rice. Steam again for another 10 minutes.
3. While waiting for the rice, mix all the ingredients for the top layer. I used a whisker to do this. Another option is, you can just place everything in a blender and blend them together.
4. Remove the tray from the steamer and press the cooked rice with the back of a spoon to level it. Stim for another 5 minutes.
5. Remove the tray from the steamer and pour the top layer mixture on top.
6. Steam for 30 minutes.
7. Leave to cool before cutting.

**Tips from Kak Liza :
1. Lined the tray with a piece of heat resistance plastic so that it'll be easier to remove the kuih once cooled.
2. Cut the kuih only when it is cooled.
3. Use a plastic knife to cut.
Thank you very much Kak Liza for all the useful tips that you've given us.

In Singapore, this Serimuka is called Putri Salat. Thanks to Sis Rossya for this piece of information.

Suggestion from Bro Azli Jamil :
Quote:
.....Don't put tepong into the top at all. At the end of the day, the top is just like custard and the difference being one uses milk and the other coconut milk. Another thing, use your hand banana leaves to flatten the sticky rice until packed coz you don't want the top to seep into the bottom. Oh ya! Add a bit of salt to serimuka top. I always add a bit of salt to any sweet thing, to bring up the creaminess and sweetness

Other modification that can be done, courtesy of Cakcibur :
Quote:
bahagian atas yg hijau tuh, arwah mak cak campur ngn durian..(nyum nyum)..
bahagian bwh tuh, pulut tuh campur sikit dgn kelapa parut yg dah bergaram... (nyum nyum nyum)...

Tapi macam Harlina dulu, dia guna kuali aje. Rasanya dia ada post gambar 'kukusan McGyver' dia tu...hehehe.....good luck!
