FRESH NOODLES & MEE HAILAM PHALINN OOI
Mee Hailam Phalinn Ooi
My pasta machine
I think, today, I got up at the right side of the bed! Alhamdulillah....First of all, to start with...hey no headaches! Hmm good sign! Then for breakfast, I made Banana Balls (Cekodok Pisang). Didn't follow anybody's recipe, but just followed what my heart desire (achewa) and wallahhhh....it turned out good, well, better than always! Hubby ate quite a bit of it! Wow, what a lovely start of the day!
But today, I did something that I don't really like to do...to clean fish! I'd rather do something else. But since I've been wanting to eat crispy fried fish, so I had to clean the fishes first. And you know what, it's worth all the effort. The way hubby and the kids ate, just makes me really happy. I ended up just eating 1 piece. We had these for lunch...
When I checked my page, again, all of you my friends, actually made my day! Thank you for all the lovely comments. And especially to NIC, you don't know how much it meant to me when you said, your parents enjoyed the donuts you made from the recipe in my page. I don't know why I get so sensitive when the word 'parents' is being mentioned. Maybe I missed mine too much.....
Then I came across a comment from Phalinn, asking why I didn't try out his recipes. My sincere apologies to Phalinn for keeping his recipe in line for such a long period. It's because, mama is just too lazy to make the fresh noodles and I don't like experimenting noodles recipes with spagetti. But then today, I said to myself, I MUST give Phalinn's recipe a go. Furthermore, it's been quite a while since I last made the Fresh Noodles. This Fresh Noodle recipe is a new version of Datin Salmah's Fresh Noodles recipe. It was modified by 1mas2ra from Forum Cari and I think the result is much better. Here's the latest version....
6 cups plain flour
1 1/2 cups water
1 tablespoon ash water (or edible lime water)
few drops of yellow coloring
1. Mix above ingredients into a mixing bowl. Knead for about 10 minutes. Dough should not be too soft.
2. Let dough rest for 1 hour.
3. Make into small balls. Roll flat and coat with flour.
4. Put into the pasta machine, the smooth part. Repeat trice.
5. Coat the thin piece into enough flour and put through the noodle cutter on the pasta machine.
6. Mix water with some salt and oil and bring to boil. Pour the noodles into the boiling water for about 5 minutes. Keep stirring to avoid noodles from sticking to each other.
7. Pour noodles into a strainer and wash with running tap water.
8. When cold, rub noodles with oil.
9. Ready to use.
Do not put any salt in the dough as this will spoil the pasta machine because pasta machines cannot be washed.
And for dinner tonight, I made Mee Hailam Phalinn Ooi! True like what Phalinn said, it's easy and it's delicious. When I first read his entry about his cooking series, it made me grin from ear to ear because he used the word 'suka' (like/happy) quite a number of times! Check his cooking entry page if you don't believe me. So just now, when I was experimenting his recipe, I felt 'suka' as well...hahaha....So Phalinn, thank you very much for this simple yet delicious recipe. Ladies and gentlemen, I present you with Mee Hailam Phalinn Ooi....
MEE HAILAM PHALINN OOI
Beef fillet ~ sliced thinly, boil for 5 minutes and keep the stock
Chicken fillet ~ sliced
Onion ~ sliced
Garlic ~ chopped
Sweet soya sauce
Vegetables ~ whatever you like...hehehe (my choice is carrot, celery and tomatoes)
Cornflour mixed with water ~ to thicken the gravy
Oil for cooking
1. Boil the fresh noodles till soften. I skipped this step because my noodles are well cooked.
2. Heat the oil and saute onion and add in the beef fillets and chicken fillets. Fry for about 3 minutes.
3. Add in the crushed chicken cube and chillie powder. Stir well.
4. Pour the beef stock. Add in oyster sauce, sweet soya sauce, soya sauce and tomato sauce. Stir well and let it boil.
5. Add in eggs (I didn't add egg into the gravy. I boiled it separately).
6. Add in the vegetables.
7. Pour in the cornflour mixture to thicken the gravy.
To serve : Put the noodles in a bowl, pour the gravy on top. Garnish with chopped spring onions and fried onions.
And oh....I made these as well, using Kak Liza's sweet bun recipe...once out of the oven, Fatin ate 7 and Syahmi ate 3 at one go! What a lovely way to end the day.......
|zack>>Pasta maker ni memang banyak kegunaannya but I use it mainly for making noodles je. Phalinn's mee goreng mamak is yet to be tested...hehehe....
Ayda>>Thanks to you for sparing some of your precious time to visit my page...
rossya>>Kak Rossya, pasta maker tu murah je. Kalau kat Malaysia, I think it's only RM30. Mine, my mom sedekah. Antik dah my pasta maker tapi masih kilat lagi sebab mak jarang guna. Bagi kat kita...menangis gaklah mesin tu kena kerja...hihihi...
muni>>Pleasure Muni. Glad I could be of some help.....
nic>>Ni mama dah tepek resipi orang bujang, bolehlah nic buat ye...mana tahu kot parents nic suka makan plak....
Aan Andes>>Oh how sweet of you! InsyaAllah nanti mama pastekan gambar pasta machine mama yang antik tu ye...And yes, boleh buat kulit karipap with that machine.
emly>>Hish...bukan cook-expert la..cook-on-training! Buat jangan tak buat. Hubby mama semalam, makan 2 mangkuk, licin. Mama dapat makan yang belen belen je....
nabialishad>>Belilah satu mesin tu, murah je. Well, buat mee ni, makan masa sket je, sebab nak gelek yang licin tu, 3 kali then baru kat jurai. Then you rebus. One more thing, banyak main tepung la...tapi worth it...kita tahu kebersihan dan isi kandungan mee tu..idaklah ada apa-apa benda 'yang tak sepatutnya' kat dalam mee kita tu!
harleena>>Try jangan tak try.....senang je...
Yusoff+Yana=Azhad>>Nak bagi mee hailam kat si ensem tu? Leh ke dia makan? Tak pedas? Kalau mee sup, okay gak kot...Cekodok pisang tu, mama main cebur je, no sukatan. Yana dah try tak Kak Liza punya version? Dia ada tepek kat fp dia. Mama kalau tepek pun, no sukatanlah...semuanya..sesuka hati...
Kuzi>>Nak makan, kenalah buat...bih cam no! Cili potong + kicap manis Kipas Udang + bawang hiris + perahan limau, makan dengan ikan goreng garing....perghhhhhh.......bayangkanlah kesedapannya....hehehe...
kak long>>Resipi dari orang bujang untuk orang bujang. Ingredients dah ada, bersilatlah kak long di dapur, then let us know, sedap ke dak k!
mcmed>>Tu la, Dr serba boleh!
azza *mummy sara*>>Buatlah mummy, tak susah sangat....Macam mana bisnes kek lapis? Moga sukses....
Phalinn Ooi>>Haa dah datang pun si bujang ni. Alhamdulillah la Phalinn happy gak hari ni. Thanks again for the recipe ya. Oh ya, Fatin, my daughter, dia tanya , macam mana Abang Phalinn ni pandai masak eh mama? Hehehe! Wah...nak dating dengan awek cun this weekend? Akan mama tunggu report Phalinn di fp nanti aa ..Ala manalah famousnya fp mama ni....biasa biasa je....diorang singgah sini nak cari idea nak masak je....
Harlina>>Tu la, kalau nak try something new, if possible, mesti dapatkan ingredients yang almost accurate sebab nanti, baik-baik resipi tu sedap, jadi tak sedap...dah tak mau try lagi kan...Ha ah, dah experiment dah serimuka tu...dia dah masuk queue untuk get posted...But mine tak secantik your Serimuka McGyver la....masih ada yang perlu diperbaiki....
Noor>>Sebab sekarang ni dah kena virus E.X.P.E.R.I.M.E.N.T! Tak leh control! Hehehe...Rasanya kalau beli pasta machine tu, berbaloi kot.....

mate>>You go girl!!!
kuchai>>Go eat now now, wait wind go inside your stomach laaa
mohd aizuddin firstname.lastname@example.org>> Dalam page mama ni, ada dua resipi Dadih kalau Aizuddin nak cuba...pada mama, kedua-duanya sedap : Dadih Dr Jihan dan Dadih Ida
Dina email@example.com>> Yup...that's the one...
