Learnt my lesson today, not to sleep after Fajr prayers because I tend to be VERY LAZY, like yesterday! So I just switched on the computer and at the same time started ironing the pile of clothes. Yeah, mama is 24 hours ironing! What can I say, it's my hobby (actually, it's because there's no one else to do the ironing for me!)! Then at 7am, I started preparing breakfast. I made these....

FP Kids said,"But mama, you said you need to loose some kgs?"
Mama replied, confidently,"I AM...I AM...I AM ON DIET!"
FP Kids asked,"But how, with all these food laid on the table?"
Mama answered,"I do go on diet.....when I am asleep. I don't eat anything when I am asleep. I am STRICTLY on DIET that time! See...I wasn't lying!"
Hopefully FP Kids will say..."We rest our case!"

I came across this Steamed Coconut Blossoms from Rossya's fotopage quite sometime back. So today, for breakfast, I decided to try it out and it turn out to be nice, soft and fluffy . Here's the recipe if you care to try...


STEAMED COCONUT BLOSSOMS

Ingredients A :
3 eggs ~ from the fridge
220g castor sugar
275g Softasilk
(I used cake flour)
3 teaspoons baking powder
1 teaspoon ovalette
140g coconut cream
(I used fresh milk because I don't have any coconut cream)

For filling :
50g castor sugar
125g palm sugar
1 teaspoon cornflour mixed with 50g water
3 pandan leaves
225g fresh grated coconut

** For the filling, I didn't actually follow the amount given. I simply put in however much that I pleased. I add a bit of brown sugar for color as I used just a bit of palm sugar (**limited stock**).

Method :
1. For the filling : Mix all the ingredients in a pot and cook till dried.
2. Mix all the A ingredients and beat with high speed till thick and creamy.
3. Divide into a few bowls and put in the coloring.
4. Place the papercups in the muffin tray and put a bit of mixture in the cups. Then put a bit of filling and cover it with the remaining mixture.
5. Steam for 15 minutes.




And alhamdulillah, yesterday, my laziness last only till 3.30pm. Just can't help but do another experiment. And yes, Rossya strikes again! I just can't get her Apple Pie out of my head. So to just let me rest in peace (not THAT RIP tho!), I tried baking them. Once in the oven, the aroma that came out from it was so lovely hence makes the taste lovelier. Thank you once again to Rossya for the wonderful recipe!


APPLE PIE (Rossya)

Ingredients :
250g butter
(I used margarine)
500g flour
3/4 teaspoon salt
1 egg ~ lightly beaten
5 tablespoons water
(I used water from the fridge)

Filling :
6 Granny Smith apples (green apple)
6 teaspoons raisins
1 teaspoon cinnamon powder
150g sugar
30g butter
(I used margarine)
**I added a bit of cornflour mixed with water to thicken it a bit. And also I squeezed a bit of lime juice just to give it a bit of tangy taste because I used red apples instead of green.


Method :
1. For filling : Mix all the ingredients in a pot and cook on slow fire till the apple softens. Set aside to cool.
2. Rub butter and flour till it forms like breadcrumbs.
3. Add in egg and water, a bit at a time and mix well till a soft dough is formed. Cover with a damp cloth and leave to rest for about 10 - 20 minutes.
(I kept the dough in the fridge)
4. Roll the dough thinly amd cut into rectangle shape. Put the filling at one side and cover with the other side. Put a bit of water at the edges to 'glue' the dough. Press with a fork at the edges to secure the filling.
5. Brush with egg yolk and bake in a pre-heated oven at 180 - 200 degree celcius till golden brown.

~~Ooohhh THAT mould, it's actually a sugar flower cutter. You can also use any cookie cutters. There are so many shapes and sizes sold in Malaysia...
