Banana Pancakes
This morning, I woke up with a slight headache. Don't know what's the real problem. Maybe age is catching on me! Hubby said, go back to sleep. SLEEP???!!! How I wish I could do just that. But then, if I were to sleep, I'll become more and more lazy and that doesn't help cure my headache either, maybe makes it worse because once up, then I'll think about all the list-to-do that has not been done. So I'd better just forget about headache and give it a cold shoulder. Perhaps it'll go away, after realising that it's not welcomed here....hahaha....

Had to make an early breakfast as hubby had to go to work. Seeing the bananas just lying around and actually crying for me to 'do' something with them, I remembered a recipe that I've printed quite sometime back and has not been tested till today. So I decided to do just that...It's a recipe I found from the Forum Cari, posted by who else but my idol in cooking ~ Kak Liza. Thank you Kak Liza for the simple but yummy recipe. So here's to share with you all....



BANANA PANCAKE (Hanieliza)

Ingredients :

8 ripe bananas ~ mashed
1 teaspoon salt
(I put just 1/2 teaspoon)
1 tablespoon sugar
2 tablespoons milk powder
1 egg
1 cup flour
1 teaspoon bicarbonate soda
a bit of margarine

Method :

1. Sift flour with bicarbonate soda. Set aside.
2. Mix well the mashed bananas, salt, sugar and egg.
3. Fold in the sifted dry ingredients till well incorporated.
4. Heat the non-stick pan and grease with a bit of margarine.
5. Put a spoonful of the bater onto the pan and flatten it.
6. Cover the non-stick pan and let the bater cook till golden brown. It's best done on medium heat to avoid the blackish color.
7. Flip over, so that the other side will get cooked as well.
8. Serve with honey or golden syrup or with whatever your heart desire...
