FRIED RICE NOODLES & KUIH BOM

Seriously la, you guys never fail to make my day. Everytime I read all the comments that you guys left behind, they just make me smile from ear to ear and actually I felt like I am so clever, where else the truth is I'm NOT. I am still learning, but then I guess, berkat for liking to experiment things, makes me learn more and more each day...Alhamdulillah...And the best part is, whatever I've experimented, I'll be able to share it with someone else through this fotopage. Speaking of experiments, yesterday itself, I experimented 3 new recipes. A bread, a cake and a kuih. And today, another 2 just this morning. So I won't run out of recipes to share with you for at least 5 days huh...Phewwww what a relief. And what's more, I have another 2 entries about my previous holiday to post before we go for the next one...hahaha...dream on eh...but who knows, my dream will come true....tha dhaa.....

Anyway before I get carried away dreaming, and while the kids are busy watching TV, let me just put the recipes for today. Mar had asked me how I fried my rice noodles. Well, I just followed how my mom fries her rice noodles or egg noodles. But as usual, when the recipe comes from me, there'll be no particular measurements okay....coweyyyy.....



FRIED RICE NOODLES

Ingredients :

Rice noodles ~ soaked till soft
Chillie paste
Onion ~ blended
Garlic ~ blended
Dried shrimp ~ soaked and pounded
A bit of water
Oyster sauce
Tomato sauce
Sugar
Chinese cabbage (or whatever vegetables you like)
Cooking oil

For garnishing
fried sliced onions
spring onions
red chillie

Method :
1. Heat oil. Fry the chillie paste till fragrant then add in the blended onion and garlic.
2. Add in pounded dried shrimp. Stir well. Add a bit of water.
3. Put in oyster sauce, tomato sauce, sugar and salt to taste.
4. Add in the rice noodles and stir till well mixed.
5. Before removing from the heat, add in the vegetables.
6. Sprinkle some fried onions, spring onions and red chillie.

Note :
Besides dried shrimp, you can also use chicken fillet or beef fillet cut to small pieces or even fresh prawns, up to your liking.

KUIH BOM

Ingredients :

50 - 60 gm sesame seeds
Oil for frying

Dough :
240g glutinous rice flour (tepung pulut)
1 tablespoon flour
1 teaspoon lime water (air kapur)
190 - 200 ml water
(I used an extra 10ml)
a bit of salt

Filling :
100g green beans ~ soaked for 6 hours
enough water to boil the green beans
60 - 80 g sugar
30g fresh coconut ~ grated
2 tablespoons flour

Method :
1. For the filling : Boil the green beans with enough water till soft. Leave just a bit of water, add sugar, grated coconut and flour. Stir till well mixed on slow fire. Remove from heat and let cool.
2. In a bowl, mix the glutinous rice flour, flour, lime water and salt.
3. Pour in the water, a little at a time and knead to form a soft dough.
4. Take a bit of dough, flatten it and put the filling in the middle. Cover the filling and make it round.
5. Roll the dough in the sesame seeds.
6. Heat oil and fry till golden brown.
(I think it is best to fry on medium heat)
