SWEET DOUGH

Sweet Dough
Already sliced..ready to eat...
Hmmmm...have been trying hard to think what to write but I guess today, I am just blank....I've got no idea what to write. So I think, I'll just paste the 'report' to one of my previous 'experiments'. This time, I'll paste the recipe of Sweet Dough. I came across this recipe when browsing Kak Noor's Fotopages. She made this bread with cocoa but since I made something else with cocoa that very same day, so I improvised the recipe, just a bit...Thank you very much Kak Noor for sharing this lovely recipe.


SWEET DOUGH

Ingredients :

260ml cold water
1 egg
50g butter

(A)
500g sifted bread flour (if you are adding cocoa powder, then lessen by 20g)
15g fresh yeast
100g granulated sugar
5g salt
1 tablespoon bread softener
1 tablespoon bread improver

Method :

1. Mix (A) in a bowl. Add cold water and egg to mixture. Mix well by hand.
2. Work butter into dough.
3. Transfer dough onto work surface, and lift dough using rubber scraper.
4. Slam down dough back onto work surface and scrape off again, using rubber scraper.
5. Repeat until dough becomes elastic.
6. Place dough in a mixing bowl, cover with plastic wrap and let rise for 30 minutes.
7. Shape as you like.


Note :
The above recipe was originally from Kak Noor's page. Since I can't actually understand the 'using rubber scraper' method, so I followed my own way, the way I normally deal with breads. Since I intend to do this bread in two colors, so I prepare both the dough separately.
1. Mix all the dry ingredients in a mixing bowl.
2. Add in egg and butter. On the mixer.
3. Slowly pour in the water (i used lukewarm water because it is cold over here at the moment). And knead till the dough is smooth and elastic. For the colored dough, add a few drops of pink coloring. And I also added a bit of strawberry essence.
4. Place the doughs in 2 separate containers and wrap in plastic bags. Leave the dough to rise, double the size.
5. Punch down the doughs and roll flat.
6. Put the pink dough on top of the white dough and roll tightly like how you do swiss roll.
7. Place the rolled dough in a well greased loaf pan. Wrap in a plastic bag and leave to rise till double the size.
8. Sprinkle a bit of water on top of the dough and bake in a pre-heated oven till golden brown.
