HAW FLAKES LAYERED CAKE
Kek Lapis Haw Flakes
Didn't get to update my page this morning because I was out of the house by 10am. Went to Hillview school to cheer for my boy. He was chosen to run for Khuto House (yellow) in the 1500m event. Syahmi is not a VERY good runner but he can run. He knows that and I know that. Infact before he started running, he told me that he's going to come last. I told him that winning is not everything. It's the spirit of challenge and wanting to do it, that really counts. And I told him not think of winning or loosing but just give his best shot. Indeed he came last, but with pride. He finished all the 7 1/2 rounds around the football field as required! And the cheers and support that he got from all his friends and teachers are so touching...to me, he's my hero! Imagine..if it was me...I think, by the time I finished running 1 round of the football field, I'll be puffing and panting ! But the funny part was...after he finished running, he said, ma...I'm gonna rest for 1000 days...hahahaha !
Yesterday evening, I tried making something that I've never made before and something that I love to eat but don't have the heart to make. Why? Because normally the recipe uses a LOT of eggs...any clue? Yeah...KEK LAPIS or if translated in English, it'll be LAYERED CAKE. All the recipes that I found before this uses from 10 to 25 eggs! With that amount of eggs used, I wouldn't mind if it's guranteed to be a success. Then one fine day, I came across Azza's fotopage, serving this cake....and wallah, her recipe just need 7 eggs. It's still a lot, but less than the other recipes that I've seen. So yesterday I set to work. But I made just half the recipe. Not that I'm not confident with the recipe but because lack of ingredients. The Haw Flakes itself, which cost less than RM2.00 in Malaysia can be triple the price over here. And I don't have much cream crackers biscuit, so I'll have to make do with whatever available at home. I made using my cute 18cm x 15cm tin. Azza my dear, thank you very much for the lovely, moist Layered Cake recipe but thousand apologies if I don't do justice to your recipe with my GAUDY cake. Didn't think that the colors will be that striking! Anyway, you can view Azza's lovely cake here. Thanks Azza....and oh...I hope you won't mind me pasting the recipe here as well...Assuming she'd say it's okay mama , so here's her recipe....
HAW FLAKES LAYERED CAKE
1 1/4 cup castor sugar
1 teaspoon vanilla essence
1 packet Cream Crackers biscuit
1/2 cup condensed milk
1/2 cup fresh milk
4 packets Haw Flakes
coloring of your choice
1. Get your steamer ready.
2. Blend the cream crakers biscuit to powder form.
3. Grease well your baking tin.
4. Beat butter and sugar till light and creamy.
5. Add in eggs, one at a time and continue beating.
6. Add in vanilla essence, then condensed milk and fresh milk. Mix well.
7. Add in the blended cream crackers biscuits a little at a time till you get the right consistency (cake consistency, not too runny and not too thick).
8. Divide the mixture into small bowls, according to how many color you wish to make. Put a bit of coloring into the mixture and stir well.
9. Scoop about 4 tablespoons of mixture of one color and spread evenly on the greased baking tin.
10. Steam for about 10 minutes or till the layer is cooked.
11. Remove from steamer, arrange the Haw Flakes on that cooked layer. Cover with another 4 tablespoons of different color mixture. Steam like in step # 10.
12. Repeat step # 11 until all the mixture are finished.
13. After the final layer is cooked, bake in the oven for about 10 minutes in medium heat so that the cake will keep longer.
Though I am prepared to stay for 4 hours infront of the steamer, because Azza said it'll take about that amount of time to prepare this cake, but actually I didn't take long to do it. Maybe around 1 hour or so. And while the cake is steaming, I was doing my other house chores. With the cute size tin, I took about 5 minutes for each layer and I made about 9 layers altogether. If only I have more haw flakes in the cake, then it'll taste much better. But anyway, I am happy with myself because now I can proudly declare to myself, that I am capable of doing layered cake...hehehe...poyo betul.....
