KUIH CARA

I did it again!!!! I fried Kuih Keria for breakfast today. And when putting in the fried keria into the hot sugar syrup, I accidently touched the kitchen towel that has a bit of hot syrup stuck to it....OUCHHHH I tell you...all the 'painful memories' a few years back came rushing back into my mind! This time it got to 2 of my right hand fingers....so that spot was kinda 'cooked'...yes you got it..OUCHHHHH OUCHHH OUCHHHH! Anyway, I'm still breathing though and still able to type for my entries....hahahaha...But then, it was all worth it when I saw hubby and my visitors enjoying the kuih nicely....And oh...today's breakfast was fried noodle and these.....


And today, I'd like to share another Malay kuih recipe with you. I got this from my reliable book that my mom gave to me. It's called Kuih Cara. Made this kuih into 2 version, sweet and savory.



KUIH CARA

Ingredients :

120 g flour
250 ml fresh milk or coconut milk
1 egg
1/4 teaspoon salt
1 tablespoon pandan juice

Filling
For savory Cara : Currypuff filling
For sweet Cara : White sugar

Method :

1. Sift the dry ingredients into a bowl and add in egg and fresh milk/coconut milk. Add in pandan juice and stir well.
2. Pour into a jug.
3. Put the mould on the stove and heat it up. Grease with oil preferably using the pandan leaves.
4. Pour the bater about 3/4 full.
For savory Cara : Put in a bit of inti karipap in the middle.
For sweet Cara : Put a bit of white sugar in the middle.

5. Cover the mould and let the kuih cook on slow fire.

Enoka>>Kuih Cara is one of Malaysia's Delight. It is supposed to be just sweet but I improvised it a bit by putting the karipap filling inside. The ingredients can easily be found in Malawi, otherwise I won't be able to do it here. Don't worry about the pandan or shall I say rampa leaves. That's just for the fragrant and color. Yes, I made this Kuih Cara using a mould. Come home one day and I'll show you how simple it is!
