CHEESE BUNS

The texture...
Care to have some?
 
Today I'm feeling a bit down because my son, Syahmi went on a school trip to Lengwe National Park. I was at school to see them off at around 8.30am. They'll be spending the night at Nyala Lodge in Lengwe Park. The teachers and staffs that accompanied about 24 children of Year 5 are Mrs Lim, Mrs McFadden, Miss Young and Mr Tredinnick. They all travelled together in the school bus. Hope they'll have a safe journey and a pleasant time there...meanwhile...mommy will be at home feeling lousy...but at least, I have Fatin to keep me busy! Can't wait for 1pm tomorrow.....

Well, recipe for today, I think, I'll just paste the Cheese Bun that I made quite sometime back. This was my second trial actually. The first time I made, it didn't fluff up to my satisfaction so I considered it as a failure though nothing was left of that bun! This time, I just let the dough take it's own sweet time to rise...no force no torture! Got this recipe from Forum Cari posted by none other than the famous sifu NoorMasri. Thanks Noor for the recipe. I made 7 pieces of the cheese bun. Once out of the oven, 1 1/2 buns were shared between me and Syahmi and the rest landed in Fatin's tummy! Hehehehe...never judge that girl by her size eh!!!!!



CHEESE BUNS

Ingredients :

300g high protein flour
1 teaspoon bread improver ~ optional
60g castor sugar
1/2 teaspoon salt
50g egg (1 egg)
7g (2 teaspoons) instant dried yeast
70 - 75 ml fresh milk (chilled)
70ml water
25g margarine ~ melted

Glazing :
1 teaspoon fresh milk
a bit of grated cheddar cheese

Method :
1. Mix flour, bread improver, yeast, salt and sugar in a big bowl.
2. Make a hole in the centre and pour milk, water and egg. Mix well to form a soft dough.
3. Add in margarine and knead for another 30 minutes or till dough is smooth and elastic and does not stick to the bowl.
4. Make into a big ball and place it in a bowl greased with a bit of oil. Cover using a cling film.
5. Place the bowl at a warm place and let dough prove for 1 1/2 to 2 hours or till dough has doubled it's size.
6. Punch down the dough, and divide into 7 equal pieces.
7. Arrange them in a well greased 9 inch tray and cover with cling film.
8. Leave to prove again till double the size.
9. Brush the buns with fresh milk and sprinkle with grated cheddar cheese.
10. Bake in a preheated oven at 170 celcius for about 15 - 20 minutes or till golden brown.
