Chocolate Bun
Remember the last time I made the Bun Pandan and I said, I'm not satisfied with it, not because of the recipe, but I think the method that I used...I kind of force the dough to prove. But Noor said, it might be the flour that I used. Better to use high protein flour instead of cake flour. I did not give up, still wanted to prove that cake flour is also alright to use (stubborn huh?)...A few days after that, I tried again the same recipe but instead of Pandan juice, I added cocoa powder to make Chocolate Buns. Well this time, I let it take it's own sweet time to prove until...I guess, the dough was just crying for me to start shaping it.. it must have said...come on lady...shape me now...I'm just too tired to prove more! Hahaha! The bun was nice and hubby ate two once it was out of the oven...


CHOCOLATE BUNS

Ingredients :

400g strong white bread flour (take out 2 tablespoons)
2 tablespoons cocoa powder (to replace to flour above)
2 1/2 teaspoons instant yeast
1 teaspoon salt (level)
50g margarine ~ melted
70g - 80g sugar
1 egg
100ml fresh milk ~ lukewarm
110ml water ~ lukewarm

1 tablespoon fresh milk ~ to brush on the buns before baking
1 teaspoon melted margarine ~ to brush after the buns are out of the oven

Method :
1. Mix flour, yeast, salt and sugar in a big bowl.
2. Make a hole in the middle and pour in the melted margarine, fresh milk, water and egg.
3. Mix well. Knead for about 15 minutes till a smooth (doesn't stick to your hand) and elastic dough is formed. Note : this dough maybe a bit sticky in the beginning but NEVER add flour
4. Make the dough into a big ball and place it in a greased big bowl. Cover the bowl with cling film and place it at a warm place to prove for 1 1/2 to 2 hours till dough doubles its size.
5. Divide the dough into 50g - 60g balls and place them in a baking tray lined with grease paper or on a greased pan. Do not put them far apart so that when they are baked, the buns will stick to each other.
6. Cover the baking pan with cling film for 1 hour or until the dough doubles the size.
7. Brush the buns with fresh milk.
8. Bake in a pre-heated oven at 190 - 200 C for 15 to 20 minutes or till golden brown.
9. Remove from oven and brush with melted margarine.
10. Let it cool on a wire rack covered with a clean towel to get a soft crust.


Though I do not know NOORMASRI in person and have chatted with her only a couple of times on ym, I will always look up to her because of her skills in cooking and baking. Her food are just simply delicious to look at and I bet it'll taste as good as it looks! But less that I know, behind all her friendly and jolly postings in the forum, she's actually facing something big and needed her to be strong for the sake of the family. Her husband Mr Asri is diagnosed with kidney failure, both of them. He's on hemodylisis at the moment. Mr Asri Ahmad will undergo an operation to receive one kidney that will be donated by his sister Sis Norhayati Ahmad this coming 10th May, 2006. Let us make duaa (prayers) that the operation will be a success and a speedy recovery to both of them. Let me lead the way...Noor, akak doakan moga suami dan sister-in-law Noor selamat menjalani pembedahan dan akan sembuh secepat mungkin. Bersabar dan banyakkan berdoa, insyaAllah..Allah itu maha Pengasih lagi Maha Penyayang..Amin.

Tapi nak kata gak, mama masa di Malaysia kalau buat roti memang tak jadi, sebab masa tu, belum reti buat lagi. Cuma di sini je baru belajar sendiri buat roti. Alhamdulillah okay. Mama buat roti guna mixer. Play around dengan jumlah air dan bukan tepung. Air mungkin kurang dan mungkin lebih.
