When I came back from my lovely holiday, I just can't wait to go into Forum Cari. Though I said my 'engine' is not warmed up yet, but the urge to look for new recipes is always there. And wallah....this Sweet Bun recipe from Penyulawa caught my eyes. Got the recipe printed out and straight to the lab aka my kitchen I go! Thank you PENYULAWA for sharing with us this lovely recipe. I made this buns into a few different fillings, tuna mayonaise, chocolate, cheese and plain.


SWEET BUN (PENYULAWA)

Ingredients :

900 g bread flour
100 g superfine flour/cake flour
430 g water (+/-)
20 g instant yeast
12 g salt
180 g sugar
40 g butter
60 g margarine
150 g egg (=/- 2 grade B eggs)
10 g (2 teaspoons) bread improver
5 g bread softener
30 g milk powder
10 g vanilla essence

Method :

1. If using a Bread Maker, just put all the ingredients according to the bread maker's instruction (the liquid should go in first, then the dry ingredients and lastly the instant yeast).
2. Set the kneading programme for 30 minutes.
3. Take out the dough and leave it to prove till double it's size.
4. Punch down the dough and shape it.
5. Leave to prove till double the size .
6. Brush with egg and bake at 160 Celcius for 18 - 20 minutes.

Note :
I am sorry Penyulawa, but I adjusted quite a number of ingredients according to what's available in my stock. Nevertheless the taste remains superb! But I must say, when handling this dough, I need extra patience as it's a bit sticky to work with. So I keep on adding some flour. The adjustments that I made...
1. I just used cake flour (meaning 1 kg cake flour)
2. I just used margarine (meaning 100g margarine)
3. I omit bread softener because I don't have any left!
4. I don't brush the buns with egg before baking.
5. I used the muffin cups to bake the buns.

I made only half the recipe. And since I don't have my Bread Maker with me, so this was how I did it...
1. Sift flour, salt, bread improver and milk powder into the mixing bowl.
2. Add in instant yeast, sugar, margarine, eggs and vanilla essence.
3. On the mixer and slowly pour in the water. Knead till a soft and smooth dough is formed. (Amount of water may vary)
4. Take out the dough and leave it to prove till double it's size.
5. Punch down the dough and shape it.
6. Leave to prove till double the size .
7. Bake at 160 Celcius till golden brown.
