EGG TART

Out of the oven
Chocolate Rice Muffins

I am feeling much better today. I think the antibiotic is doing it's job at the moment! Thank you for your concern Med. Felt even better when I know that someone cares...

I was in the kitchen as early as 5.00 am this morning, just because I've promised my daughter to make for her the Chocolate Rice Muffins for her breakbox today.

And for lunch, I experimented Minced Beef Cheesy Bread. I got the recipe from Forum.Cari.Com.My. It is Puan NoorMasri's recipe. Thanks Noor for all your lovely recipes. I've always enjoyed experimenting your recipes. But....I think, I'll save that recipe for tomorrow's entry huh! Hihihihi.....be patient you guys! But just for a hint...I think it's nice coz I made 6 buns and they were finished by my kids at one go. I managed to get a nib from my son's share! Makes me the happiest mother just now during lunch! Worth all the effort!

While waiting for the bread to prove, I made this Egg Tart. It's Kak Liza's recipe. Made it before and feel like making it again, just because it tasted so yummy good! And today, to shape the crust, I used the 'toy' that Alia got for me when she went to South Africa last year. Will treasure all my toys forever and hoping that my daughter will have the same interest as mine, so I can pass my baking stuffs to her when I finally retire!




EGG TART

Base

500gm flour
1 1/2 cup margarine
1 tablespoon shortening
2 tablespoons sugar
1 egg

Method:

1. Mix all the ingredients (except egg) to form like bread crumbs.
2. Add in egg and mix till a soft dough is formed
3. Roll till about 1/2cm thick and cut using a round cutter
4. Put the circle dough into the greased petty tins
5. Prick base of each tart with a fork
6. Bake for 10 minutes at 180C
7. Take it out of the oven and pour the filling into the tart
8. Bake for another 5 - 10 minutes
9. Ready to serve

Custard (filling)

1 cup evaporated milk
4 eggs
1 cup sugar
1 cup tap water
1 tablespoon custard powder
1/2 teaspoon vanilla essence
a bit of yellow coloring

Method :

1. Mix well all the ingredients
2. Pour into the 1/2 cooked tart

Note :
1. Instead of evaporated milk, I just use fresh milk
2. If you find the dough a bit dry, just add a bit more margarine.
3. Kak Liza once told me, it'll taste nicer if you use 1/3 margarine + 2/3 butter instead of just margarine. But then, I made just using margarine..and the taste is lovely enough for me.
