I started in the kitchen today, as early as 5.30 am and just can't stop till 5.30 pm! I don't know what has gotten over me...

For breakfast, I made Roti Canai Niceghost and another experiment, Dhal Curry. This Dhal Curry is NoorMasri's recipe from Forum.Cari.Com.My. Thank you Noor! It is very nice to eat the roti canai with this curry.

After breakfast, around 10 am, my kids wanted to eat icecream. I asked them to wait because I wanted them to eat with Tuiles (like cone icecream). I got this recipe from the same forum, posted by PuanSri and since that day, I've always wanted to try making it but just couldn't find the time to do so. And finally, today is my chance! I straight away got to work. It is very easy to make but you have to be very fast in shaping it when it comes out of the oven because, once it's cold, it'll break. This recipe is very crunchy and nice. Well enjoyed by my kids. They ate with Blueberry Cheesecake Icecream. Yummy delicious! Thank you very much PuanSri for sharing with us the recipe....



TUILES by PuanSri

Ingredients :

90g flour
90g castor sugar
90g butter
1 egg white

Method :

1. Beat butter and sugar till sugar dissolve. Add flour.
2. Beat egg white slightly. Doesn't have to be stiff.
3. Pour the egg white into the mixture and mix well.
4. Line tray with greaseproof paper.
5. Take a tablespoon of mixture and spread thinly (round shape) on greaseproof paper using the back of a spoon.
6. Bake in the oven till slightly brown.
7. Once out of the oven, put a glass on top of the tuiles and shape it. I used the mini tart tin to do this and I shape it in the tin. You have to be REALLY FAST, or otherwise the tuiles will break and you can never shape it.

Note :

To be honest, I HAD trouble shaping the tuiles. Most of them are broken at the bottom. But not to worry because, once we put the icecream on top, it won't show. And my daughter gave me a very creative idea...as what to do with the tuiles that I didn't manage to shape on time. She said, just cut into Triangles and make it as a decoration on top of the icecream. Clever huh! Thank you Fatin !!!


Then for lunch, I made Mutton Curry. I followed Alia's simple recipe.Thank you Alia!

After lunch, I started to prepare the dough for Sausage Rolls. This time, I used the Soft Butter Bun recipe from Channel2004. Thank you Channel. The sausage rolls with this dough came out very nice and tasty. Once out of the oven, my daughter ate 9 at one go! Then I tried making Roti Manis (Sweet Bun) from NoorMasri. I made one recipe but into 2 different buns. Half I made it plain and the other half, I put red bean filling in it. Both are just marvelous! I am indeed very happy with the buns. Thank you again Noor!


While waiting for the dough to prove, I remembered the Coffee Chiffon Cake that my sister sms to me quite sometime back. She got it from Mr Alex Goh cake book and wanted me to try it out. I didn't make it because I don't have a chiffon cake mould. And today, I still don't have the mould but I just can't help it. I HAVE to try it today. So I used my bundt pan. My mistake was, I didn't grease the mould. So when I tried to bring out the cake from the mould, it broke. But taste and texture wise, it's lovely. Very springy, light and just nice.



COFFEE CHIFFON CAKE

Ingredients :
(A)
4 egg whites
1 1/2 teaspoons instant coffee powder
115ml water
85ml vegetable oil
1/4 teaspoon salt
100g sugar
150g flour
1 teaspoon baking powder

(B)
4 egg whites
90g sugar
1/8 teaspoon cream of tartar

Method :

1. Mix (A) till well blended.
2. Whisk egg whites in (B) till soft peaks appear, then add sugar and cream of tartar. Continue to whip till stiff.
3. Fold in the egg whites into (A) till well combined. Pour into the Chiffon Mould.
4. Bake at 175 C for 40 minutes.
5. Immediately invert cake when remove from oven and let it cool.


Well that's about all for today. I think, once I put my head on the pillow, I'll jet off to Dreamland in no time!
