My first trial in cake icing!!!

I like to bake cakes. When i first started baking, all my cakes didn't turn out as fluffly and spongy as other people's. But that does not put me down. I kept on trying. Then bit by bit, it came out..sort of...OKAY. Then finally, when I am here, a Malaysian friend of mine, Jamuna, gave me the magic tip as how to make your cake be light. She said, we have to sift the flour before using and cut and fold into the butter mixture. THAT will make the cake lighter. And it really works for me. To that, I THANK YOU JAMUNA and will remember that important tips forever!

Then, the interest to start icing a cake came, especially when I have to do cakes for my children's cake sale. It has to be something nice to attract 'the young customers' because I don't want my children to come home with some pieces of cakes unable to be sold! A mom got to do what a mom got to do. So for the basic icing technique, I have Naseem Dawood to thank for all the tips she had provided us. Yeah...we (the four of us) had a mini class with her which we enjoyed every minute of it. For the first time, I had to ice a cake, and of all the designs, I chose a clown cake, just because it had so many colors in it. And I love colorful things! It was a JOB! But I manage to finish it on time..psstt...with a bit of help from my teacher of course. In that class, we were given the special shaped tin to bake the cakes in.

Then another friend of mine, Enoka, organised a class on how to shape cakes into whatever shape you want from just a rectangle cake. I was very interested in this class and curious as usual. The class was a 3 hour class and we had fun turning the rectangle cake into something else...and that 'something else' is really a something else!!! Thank you Enoka!

So, enclosed are a few samples of my novelty cakes that I have tried to do. Well...the finishing is not great, but just can do.......

And for the recipe of the day, I'd like to share the Fresh Noodle recipe that I learnt from Datin Salmah.

Ingredients :

4 cups plain flour
1 cup water
1 egg
1 tablespoon ash water (or edible lime water)
few drops of yellow coloring

Method :

1. Mix above ingredients into a mixing bowl. Knead for about 10 minutes. Dough should not be too soft.
2. Let dough rest for 1 hour.
3. Make into small balls. Roll flat and coat with flour.
4. Put into the pasta machine, the smooth part. Repeat trice.
5. Coat the thin piece into enough flour and put through the noodle cutter on the pasta machine.
6. Mix water with some salt and oil and bring to boil. Pour the noodles into the boiling water for about 5 minutes. Keep stirring to avoid noodles from sticking to each other.
7. Pour noodles into a strainer and wash with running tap water.
8. When cold, rub noodles with oil.
9. Ready to use.

Note :
Do not put any salt in the dough as this will spoil the pasta machine because pasta machines cannot be washed

4. jaja>> Mama gunakan butter icing aje untuk deco cake-cake ni. Icing keras untuk kek kahwin tu biasanya orang guna fondant. Ma lom pernah cuba lagi. Hopefully in the near future...ahaks...iye la tu! 'Cut and fold' tu maknanya kaup balikkan tepung ke dalam bancuhan krim supaya kek jadi ringan sebab ada udara terperangkap.
