RASPBERRY MARBLE CHIFFON CAKE

 
 
Price of petrol increases again starting from yesterday midnight! Gosh! Got the news a bit late in the evening, so I didn't fill up the tank when fetching Syahmi from tuition. What's more, it was raining very heavily yesterday evening. It was kinda scary for me to drive in that weather as I had to go through some flooded roads. Everytime I put some speed, the water will just splash onto the windscreen and blocked my view. That's the most scary part. Alhamdulillah I am driving a Kembara, so the chances of the car to stop in the middle of the road due to water going into the engine is slightly low.

Yesterday night, after dinner, hubby asked me to accompany him to the petrol kiosk to fill up the tank. We decided to go to the petrol station further up from our house, situated somewhere where the housing area is still not 100% opened, thinking that there won't be so many cars. But we thought wrong! When we reached there, there was a very long queue and not only in one line but a few! I'm sure, before midnight, the station must have run out of petrol to sell! So we just turned back and headed home. Hubby had said, no point go looking for petrol right now... rather save what's in the tank than waste them hunting for petrol to fill up!



Recipe to share will be this chiffon cake recipe from Chef Alex Goh's latest book, Fruity Cake. Worth to get one......



But as usual, I've done some alteration to the original recipe to cater for what I have in stock. I think I must have overmixed it as the chiffon doesn't stand nicely like it should have but slightly shrunk from the tin. Nevertheless, the taste was simply delicious. The kids agreed with me.....tanpa paksaan atau ugutan tau....diorang bagi komen sendiri aaaa...ahaksss... Thank you to Mr Alex Goh for again providing us with this wonderful recipe....



RASPBERRY MARBLE CHIFFON CAKE
Source : Mr Alex Goh

Ingredients :

(A)
30g raspberries
(I used blueberry filling)

(B)
30g sugar
60g vegetable oil
4 egg yolks
1/4 teaspoon salt

(C)
100g low protein flour
(I used multipurpose flour)
1/2 teaspoon baking powder

(D)
5 egg whites
1/4 teaspoon cream of tartar
100g sugar

(E)
80g raspberries ~ chopped
(I omit this)
What I added :
blueberry food coloring
purple food coloring


Method :

1. Place (A) in a blender and blend into puree.
(I omit this step)
2. Mix (B) well. Add (C) and mix until well combined.
3. Whip the egg whites in (D) until foamy. Add in the rest of the (D) ingredients and whip till stiff.
4. Take 1/4 of the meringue and fold it into the above egg yolk mixture until combined. Add the remaining meringue and fold until well blended.
5. Take 200g of the above batter and mix with raspberry puree from step (1). Add 30g of chopped raspberries and mix until well incorporated.
6. Add remaining 50g of the chopped raspberries into the plain batter and mix well.
7. Pour the two batters alternately into 22cm angle food cake tin. Bake at 170 C for 40 - 45 minutes.
8. Immediately invert it after taking out from the oven. When it cools, remove it from the mould.

Note :
In my case, I divided the batter into 3 portions and mixed them with blueberry filling, blueberry food coloring and purple food coloring.

Bahan-bahan :

(A)
30g buah raspberi
(Mama gunakan bluberi filling)

(B)
30g gula
60g minyak sayuran
4 biji kuning telur
1/4 sudu teh garam

(C)
100g tepung berprotin rendah
(Mama gunakan tepung gandum biasa)
1/2 sudu kecil serbuk penaik

(D)
5 putih telur
1/4 sudu teh krim tartar
100g gula

(E)
80g buah raspberi ~ dicincang kasar
(Mama tak masukkan)
Apa yang mama tambah :
pewarna blueberi
pewarna ungu


Kaedah penyediaan :

1. Kisarkan (A) hingga menjadi puree.
(Mama tak buat langkah ini)
2. Adunkan (B) dan tambah (C). Adun hingga sebati.
3. Putar putih telur di (D) hingga kembang. Masukkan baki bahan ramuan di (D) dan putar hingga kental.
4. Ambil 1/4 bahagian meringue dan kaupkan ke dalam adunan kuning telur tadi hingga rata. Masukkan baki meringue ke dalam dan kaup sehingga sebati.
5. Ambil 200g adunan tadi dan campur dengan puri raspberi dari langkah (1). Tambahkan 30g raspberi yang dicincang kasar ke dalam dan sebatikan.
6. Masukkan baki 50g raspberi yang dicincang kasar ke dalam adunan biasa dan gaulkan.
7. Tuangkan kedua adunan ini secara bergilir-gilir ke dalam loyang chiffon tanpa digris. Bakar di dalam ketuhar yang telah dipanaskan terlebih dahulu pada suhu 170 C selama 40 - 45 minit.
8. Terbalikkan loyang kek sebaik sahaja dikeluarkan dari ketuhar. Keluarkan dari tin apabila kek telah sejuk.

Nota :
Mama bahagikan bancuhan kepada 3 bahagian. Mama masukkan blueberi filling, pewarna blueberi dan pewarna ungu dalam setiap satu bahagian.
