CHEESE BUNS (Aunty Yochana)

 
6 days, I haven't been updating. In that 6 days, I haven't been on the internet much. What had mama been doing in the past 6 days? Quite a bit, that I can't remember half of it! Hahaha...but what I'm so very sure....I had a very busy weekend and towards Sunday night, I was like gone with the wind! And since the body and the mind are still, some sort of, in a 'gone with the wind' mode, I just don't have the idea to write. So I will just paste whatever photos that are in the folder, waiting to be posted....

Iced these cuppies with Intan and Dalila.

Bought these at Subang Parade.....yummy yummy.....had in mind to try a few donuts recipe....but when? Only time can tell.....hahaha.....

I guess enough of the photos for today. Let's just go straight to the reports from my lab! Ahaks... Made these Cream Cheese Buns last week and sent them to hubby's office. The feedback, alhamdulillah, all positive! Thank you Aunty Yochana for the recipe.



CHEESE BUNS

Ingredients :

350g Bread flour
10g Instant Yeast
60g caster sugar
1/8 teaspoon salt
1 tablespoon condensed milk
100g cold milk
50g cold water
1 egg
40g margarine

Filling :

250g Cream Cheese
120 to 150g icing sugar
1 teaspoon Vanilla essence

Method :

(1) Combine flour, yeast, sugar, salt into a mixing bowl. Mix for about 1 min. then pour in themilk, water and egg gradually.
(2) Beat with medium speed until smooth. Then add in margarine and continue beating until the dough turns smooth.
(3) Rest the dough for 45 mins.
(4) Scale and weigh the dough into 60 gm. each and then cover it. Rest for 10 mins.
(5) Roll out the dough and wrap the fillings and leave to rise on a baking tray for 45 mins.
(6) Brush the buns with egg and then bake at 190C for about 10 mins.

Fillings :

Cream the cream cheese with icing sugar and vanilla essence until creamy. Put into fridge to set for awhile for easy wrapping. If you want the fillings to be less watery, cut down on the icing sugar.

Bahan-bahan :

350g tepung roti
10g yis kering
60g gula kastor
1/8 sudu teh garam
1 sudu besar susu pekat
100g susu segar
50g air
1 biji telur ayam
40g majerin

Inti :

250g krim keju (Philadelphia ataupun Anchor)
120 hingga 150g gula aising
1 sudu teh esen vanilla

Kaedah penyediaan :

1. Satukan tepung, yis, gula, garam dan telur di dalam mangkuk. On kan mixer dan tuangkan susu dan air sedikit demi sedikit.
2. Uli menggunakan kelajuan sederhana hingga tepung bersatu. Masukkan majerin dan teruskan ulian sehingga mendapat doh yang lembut dan licin. Kalau perlu tambahkan air, tambahkan sedikit demi sedikit.
3. Rehatkan doh selama 45 minit atau hingga sekali ganda saiz asal.
4. Bahagikan doh kepada bebola seberat 60g. Rehatkan selama 10 minit.
5. Isikan inti dan atur di atas dulang pembakar. Biarkan naik sekali ganda.
6. Bakar di dalam ketuhar yang telah dipanaskan terlebih dahulu pada suhu 190C.
7. Setelah ban keluar dari ketuhar, sapukan dengan majerin.

Inti :

Krimkan keju dan gula icing berserta esen vanilla. Masukkan ke dalam peti sejuk agar ia sedikit kental untuk memudahkan proses membalut dengan doh nanti.
