HOMEMADE SERIKAYA & ROTI NAIK

 
 
 
As stated in my previous entry, I went back to Malacca with my sister, Mak Chu, to celebrate abah's birthday. Yup, it was ABAH's birthday but the ones who really had a feast was the two of us, me and Mak Chu! Hahaha... We reached Malacca around noon and soon as we've said our prayers, we went out to settle whatever we have to settle. Then only we did what's not really needed to settle.....ni mesti pening orang baca ni ....gasaklah wei...sebab mama punya kepala pun tak berapa nak betul gak nih...ayohlah sama-sama kita peningkan kepala membaca cerita mama yang memeningkan nih!... a.k.a shopping and sort. After a good few hours of walking a.k.a excercising a.k.a shopping...our tummies started to grumble and we had our lunch at Kenny Rogers Roasters. YESSSSSs...finally I went to Kenny Rogers Roasters! LIHATLAH DONIAAA .....mesti korang kata...amendelah mama ni...kitorang dah muak dengan KRR, mama baru nak gi...ha ah you...baru first time ni... excited banget! These were what we had....and I must say, they're not bad at all.....



Mak Chu was embarassed when I took out my camera to snap the photos of the food. Hahaha.....Relaxlah Mak Chu....polis tak tangkap pun ! Hihihi... Luckily we sat in a sort of secluded spot and whats more, there's not many people in there at that time, so I am sort of free to click this and that! Sorry Mak Chu, you have to wait a few minutes before digging into your meal! That's what you get if you go out to eat with me!!!! Biasa-biasakanlah ye! Hihihi... And that night, we went to eat Ikan Bakar at Anjung Batu...all eat and no excercise makes mama a plump lady ...hahahaa....tau...tak pe! Hihihi...

Okay okay, enough of all the craps, let's get serious...chewah!. For today's recipe, I will fulfill Fatin's request for this Serikaya recipe. And actually I still remembered my promise to Enoka to share with her this recipe. She came to my house (in Malawi) one day and I had served her Kaya Buns. She liked the taste and had asked for the recipe. Very sorry Enoka for taking ages to submit this recipe. Maybe she had forgotten all about this...hahaha....So here's the Serikaya recipe, courtesy of my dearest darling mom



SERIKAYA
Source : My darling mom

Ingredients :

6 eggs
3 cups coconut milk
450g sugar
3 tablespoons all-purpose flour

Method :

1. Beat eggs and 150g sugar till light and fluffy.
2. Add in the coconut milk and flour. Stir well.
3. Make caramel out of the balance 300g sugar.
4. Pour into the egg mixture and cook on medium heat till done. I cooked for about 1/2 hour.

Bahan-bahan :

6 butir telur
3 cawan santan kelapa
450g gula
3 sudu besar tepung gandum

Kaedah penyediaan :

1. Pukul telur dengan 150g gula hingga kembang.
2. Masukkan santan kelapa dan tepung. Kacau rata.
3. Jadikan gula hangus dengan 300g gula.
4. Tuangkan gula hangus ke dalam bancuhan telur dan masakkan di atas api yang sederhana sehingga masak. Mama masakkan selama lebih kurang setengah jam.

Nota :

Mama hanya buat 1/3 adunan.



ROTI NAIK

Ingredients :

700g high protein flour
50g shortening
200g lukewarm water
200g evaporated milk
(I used fresh milk)
100g castor sugar
1 teaspoon salt
1 packet instant yeast (11g)
2 nos egg
a bit of margarine

Method :

1. Sift flour into a mixing bowl. Add in yeast, sugar, salt and eggs. On the mixer.
2. Pour in evaporated milk and lukewarm water a bit at a time until just mixed.
3. Add in the shortening and continue kneading till a soft and smooth dough is formed. Add more water if needed.
4. Make into one round ball and leave to prove till double the size.
5. Punch down the dough to release air and make into small balls. Arrange in a greased pan and let it prove again till double the size.
6. Bake in a preheated oven at 180 C for 20 to 30 minutes.
7. Once out of the oven, brush the top with margarine. Serve with curry or serikaya or jam or whatever to your likings.

Bahan-bahan :

700g tepung tinggi protein
50g lelemak sayuran
200g air
200g susu cair
(Mama gunakan susu segar saja)
100g gula kastor
1 sudu kecil garam
1 peket kecil yis kering
2 butir telur
sedikit majerin

Kaedah penyediaan :

1. Gaulkan semua bahan di atas. Uli hingga sebati bersama sedikit majerin.
2. Biarkan doh selama 30 minit untuk ia naik sekali ganda.
3. Uli sekali lagi dan bahagikan doh kepada ketulan kecil. Letakkan di dalam dulang pembakar yang telah disapu dengan sedikit majerin.
4. Bakar di dalam ketuhar pada suhu 160 C selama 20 hingga 30 minit. Setelah masak, keluarkan dari ketuhar dan sapukan sedikit majerin di atasnya. Hidangkan bersama kari daging.

Nota :

Resepi di dalam Bahasa Malaysia adalah resipi yang disalin terus dari majalah.

The old man hesitated first and then in a low tone replied " we are on the way back from hospital, my son got discharged today morning , he was a blind by birth, last week only he got his vision, these rain and nature are new to his eyes.. Please forgive us for the inconvenience caused..."

The things we see may be right from our perspective until we know the truth. But when we know the truth our reaction to that will hurt even us. So try to understand the problem better before taking a harsh action
