JAPANESE GREEN TEA BREAD

 
 
 
Salaam Jumaat....

Last Wednesday night, we went back to Malacca, again. Hubby had an appointment with Dr Indran, our dentist. Hubby needs to continue with his crowning treatment. Actually, I do not have any appointments scheduled with the dentist, but clever me, ate some tapioca crisp last week and made a hole again on the molar that was temporary filled. Yeah I know, we have to do the permanent filling after that temporary one but scary cat me, I tried to avoid going for another filling! Hahaha....Allah knows what's best for me!!!!



Last week, at the dentist, while waiting for hubby, I had a chat with the wife of the dentist cum his secretary, Gillian. What else, if mama starts chatting...it'll be about food food and more food! Actually it was Gillian who started the topic when she saw me with 2 Rasa magazines and 1 Saji magazine. So I showed her my fotopage kepohchi betul la mama ni kan....ahakss....nak wat cam mana, dah tabiat semula jadi...wakakkaka....tapi kepohchi aje tau, bukan riak! Niat masih sama, nak share resipi tauuu..... She had asked me about bread making and I told her the little that I know about the technique. Dr Indran overheard the conversation and told me to bring for him some buns to taste on our next visit. He loves buns. So on Wednesday evening, I tried this new recipe from Mr Alex Goh's book and it turned out lovely. I had great pleasure when preparing the dough and right at that instance, I knew that the end product will be delicious. And I am not wrong! So people, here's the recipe to share today and thank you Mr Alex Goh for this lovely recipe from his MUST GET book, The World of Bread, at any leading bookstore...chewah, macam buat iklan la pulak....tapi apa salahnya kalau buku tu memang bagus kan. To me, kalau buku tu bagus, it's worth buying dan simpan walaupun resipi tu boleh kedapatan di dalam internet. Sebab kalau tengok internet, tak boleh sambil baring dan gambar-gambar rotinya tidaklah secantik gambar roti yang dibuat oleh tuanpunya resipi, betul tak? Thank you Mr Alex Goh and to my parents, Kak Ana my neighbour and also Dr Indran & Gillian, hope you guys enjoyed the buns and the brownies as well....



JAPANESE GREEN TEA BREAD
Source : Mr Alex Goh

Ingredients :

(A)
400g bread flour
100g plain flour
75g sugar
8g salt
8g green tea powder
(I put about 2 1/2 teaspoons)
1 tablespoon milk powder
4 teaspoons instant dried yeast

(B)
2 eggs
200ml cold water
(I put lukewarm water)

(C)
60g butter
(I used margarine)

(D)
pinch of black sesame seed

Red Bean Filling
(I used the readymade red bean paste from the bakery supplies shop)
(A)
150g red beans
800g water

(B)
150g sugar

(C)
40g butter

Method :

1. Mix (A) till well blended. Add (B) and mix to form a dough.
2. Add (C), continue to mix to form a smooth and elastic dough.
3. Mould it into a ball. Place in a bowl and cover with clear film
(I wrapped the bowl with a clean plastic bag). Let it prove in a warm place for 45 minutes or until it doubles its size.
4. Divide the dough into 60g pieces and shape them into balls, then let them rest for 10 minutes.
5. Flatten the dough and place the filling in the centre and shape them into balls. Place the dough onto a baking tray.
6. Let them prove for 45 to 60 minutes or till they double in size.
7. Brush with egg wash and sprinkle some black sesame seed on top. Bake in a preheated ove at 190 C for 12 - 15 minutes. Serve.

To prepare the filling :

1. Boil (A) till soft.
2. Discard water, add (B) and cook till thick.
3. Add (C) and continue to cook till thick. Allow to cool. Set aside.

Bahan-bahan :

(A)
400g tepung roti
100g tepung gandum
75g gula
8g garam
8g serbuk teh hijau
(lebih kurang 2 1/2 sudu teh)
1 sudu besar susu tepung
4 sudu kecil yis segera

(B)
2 telur
200ml air sejuk
(mama gunakan air suam)

(C)
60g mentega
(mama gunakan majerin)

(D)
secubit bijan hitam

Inti Kacang Merah
(Mama gunakan inti yang dibeli di kedai barangan kuih)
(A)
150g kacang merah
800g air

(B)
150g gula

(C)
40g mentega

Kaedah penyediaan :

1. Adun (A) sehingga sebati. Tambah (B) dan uli sehingga menjadi doh.
2. Campur (C) dan terus menguli sehingga doh menjadi lembut dan kenyal.
3. Bentukkan menjadi bebola. Letakkan dalam mangkuk dan tutup dengan plastik. Biar ia naik di tempat yang panas selama 45 minit atau berganda saiznya.
4. Bahagikan doh menjadi 60g satu dan bentukkan menjadi bebola dan rehatkan selama 10 minit.
5. Ratakan bebola. Bubuh inti kacang merah dan bentukkan ia menjadi bebola lagi. Alaskan dengan kertas pembakar.
6. Biarkan ia naik selama 45 hingga 60 minit atau berganda saiznya.
7. Sapu dengan telur dan taur sedikit bijan hitam di permukaan. Bakar dalam ketuhar yang telah dipanaskan terlebih dahulu pada suhu 190 C selama 12 hingga 15 minit.
