YUMMILICIOUS BUNS

 
 
Things don't always turned out as planned. And normally it's beyond our control. There are reasons why I like to plan and why I don't.

Like because :
1. Makes me more organised.
2. Know my datelines.
3. Having something to look forward to..
4. .....and maybe more...just can't think at the moment.....

Don't like because :
1. Don't like disappointments especially when it comes to cancelling a trip!
2. Don't like datelines which makes me more tensed though I work better under pressure! Hahaha!
3. No idea....

Like these few days, my chores were merely unplanned. I made quite a number of experiments, unplanned. Well actually, I planned to try A but I tried B and C, and A, totally forgotten! Wanted to iron the clothes on Monday but ended doing it yesterday. Doesn't have any plan at all to mop the house today, but I did....Gosh, what am I blabbering now. It's just that I don't really have any idea to write but still want to write! I think I have a brain freeze though the temperature outside is way above 0! Hahaha!

Let's not waste time, we'll go straight to the recipe for today. Actually I wanted to update on the lunch menu but Intan had asked me to put the recipe for the buns that I showed-off to her yesterday...hahaha...now everybody knows that mama is a big show-off! But actually I will be one to only a few of the chosen ones....sorry guys for all the torture and thank you for still being there for me to torture you guys!!! Huhuhuhu.....

Came across this lovely bun recipe at Jun's Blog. This recipe is definately a keeper. In three days time, I've baked twice. Fatin just loves them. I made the buns into Cheese and Onion Buns and a few Kaya Buns. The first time I baked, once out of the oven, Fatin took 3 out of 6. And yesterday, she actually reserved her tummy for the buns. She just ate a bit of rice and chicken soup for dinner, just to make mama happy! Hahaha....good girl! The second time, I made two recipes and into smaller sized buns. This time, she ate 5. All the effort, paid off nicely! Thank you so much Jun for the lovely recipe.... Jun had said, this bun will stay soft even after 3 days but unfortunately, I didn't get to experiment that as my buns were all gone in less than 24 hours (the first batch!)



CHEESE AND ONION BUNS

BUN
Source : Jun

*184g bread flour
* 46g cake flour
3g instant dried yis
12g sugar
4g salt
23g honey
18g egg yolk (1 egg yolk)
35g butter
(I used margarine)
138ml fresh milk ~ lukewarm

Note :
* I used multi purpose flour


TOPPING
Source : Mama

Margarine
Bombay Onion ~ diced
Spring onions ~ chopped
Mozarella cheese ~ to sprinkle

1. Cream the margarine.
2. Add onion and spring onion. Mix well.

Method :

1. Place flour, instant yeast, sugar, salt honey and egg yolk in a mixing bowl.
2. Turn on the mixer and pour the lukewarm milk a bit at a time till just incorporate.
3. Add in the butter and continue kneading.
4. Pour more milk if necessary and continue kneading till a soft and smooth dough is formed.
5. Make the dough into a round ball and place it in a bowl sprinkled with a bit of flour. Wrap the bowl with a clean plastic bag and let the dough prove till double the size.
6. Punch down the dough and divide into a 50g balls each. Arrange on the baking tray. Make a slit on top using a sharp knife. Wrap the tray with plastic bag and let the dough rise again.
7. Put the topping and sprinkle with mozarella cheese.
8. Bake in a preheated oven till golden brown. I used the small oven, so I set the temperature at 175 C for 25 minutes on middle rack.

Kaedah penyediaan :

campur aje sume2 and uli lembut. rehatkan 1 jam. tumbuk2 untuk kuarkan angin, and rehat lagi 30min. bahagi kepada beberape bahagian kecil, rehat 15min. bentukkan n letak filling (jun letak kaya aje) n rehat lagi 45min. bakar selama 10min pada 210'c.

Nota :

1. Mama hanya gunakan tepung gandum sahaja.
2. Kaedah penyediaan mama agak berbeza dengan cara Jun. Mama menggunakan cara yang selalu mama buat, bila menguli roti. Sila rujuk gambarajah.



TOPPING
Sumber : Mama (hentam keromo je!)

Majerin
Bawang benggala ~ dipotong dadu
Daun bawang ~ dihiris
Keju mozarella ~ untuk ditabur.

Kaedah penyediaan :

1. Pukul majerin hingga lembut.
2. Masukkan bawang dan daun bawang. Gaul rata.

Tips terbaik dari mama : GUNAKAN MIXER UNTUK MENGULI...hahaha...mama ni kalau uli tangan pun, cerah harapan nak tak jadi! Hehehehe....
6. Ah Mat Gebu>> Amboi Mat, jangan jack mama lebey-lebey...nanti bertambah kembanglah mama yang dah sedia kembang setaman nih! Hahaha.....adunan di atas tu, boleh dapat 6 ketul yang seberat 55g - 60g. First batch untuk testing, then tak cukup, itu yang kayuh second round, buat sampai dua adunan sekali gus! Okay Mat, leh singsing lengan menguli roti!

1) Speed uli roti tu berapa, sederhana ke laju? Atau ikut masa berapa minit...
Mula-mula mama gunakan speed yang perlahan semasa mixing, then mama guna speed yang sederhana sahaja. Kalau mixer Phillips yang lama tu, mula-mula speed pertama kemudian speed kedua hinggalah doh yang lembut dan licin terbentuk.
2) Oven mama tu otomatik api atas dan bawah on/off ke? Atau kita kena on/off sendiri. Oven saya kena on/off api atas bawah separately. Mana satu api nak pakai? Atas ke bawah.
Oven adik yang mama gunakan tu, adalah oven kecil. Mama gunakan api atas bawah automatik sebab ada 3 settings iaitu setting atas bawah, atas sahaja dan bawah sahaja. So mama gunakan atas bawah. Mama hanya set the timing to 30 minutes but will keep checking after 25 minutes. Some breads may take longer others shorter period to be ready. Just don't overbake or the bread will be hard.
