JAPANESE SOUFFLE CHEESECAKE

 
Whoa whoa whoaa....take it easy mama! I think my engine is really heated up now. Yesterday, I did quite a bit of cooking and actually wanted to do more, but then again I don't really want to waste food, so I stopped. Had a wonderful time in the kitchen with my Chef Syahmi. We prepared these....



Syahmi was really in the mood to be in the kitchen yesterday. He was with me from A to Z. He said, he was bored playing with his PSP and needed a break. So he joined me in the kitchen. Good boy! Firstly, we prepared the cake. He measured the ingredients and I did the mixing. There's one part that I will never forget....the panic look on Syahmi's face when I turned the stiffly beaten eggwhites on top of his head! Hahahahaha....he thought that meringue is going to fall on his head! And to his astonishment, it didn't! Kids are easily fascinated with tiny tiny stuffs huh!

Once the cake is baking in the oven, we started on our sausage rolls project. The funny part is, while preparing the dough, my mouth was just busy pot pet pot pet like Chef Wan! Maybe I got too carried away and started to imagine that I am doing a cooking show! Huhuhuhu....I actually taught Syahmi the techniques in bread dough preparation as he looked interested. But how much went into his head, God knows! Hihihihi...what's more important is, I had company!

While the dough is proving, I prepared lunch of another simple version of Nasi Ayam. Recipe to be posted in my future entries. Half way preparing lunch, the dough was just bloating! Gosh...had to 'tell' the dough to take it easy as I am still preparing lunch! Hahaha...as if the dough understands! 3/4 way preparing lunch, had to stop and attend to the really bloating dough. By the time I'm done cooking lunch, the dough was ready to go into the oven.

Fatin was mad at mama!!!! She was drawn downstairs by the smell of the bread in the oven. Once downstairs, she saw the Chicken Rice and settled down to a bowlful of rice and soup plus a few slices of cheese cake. Ended up being too full that she can't eat the sausage rolls where else she came downstairs to the smell of the bread! Hahahaha....ya amponssss darling gegirl!!!!

Ok ok...now straight to the recipe to share. I was just drooling when I saw the cheesecake photo prepared by Puan Siti in Rinn's page. I thought it was the Japanese Souffle Cheese Cake as printed on Rinn's photo but according to her, they had prepared the other version of cheesecake. Recipe to be posted in her page later on. Anyway, doesn't matter which cheese cake it was, as long as I've baked a cheesecake myself and it tasted yummy! Thanks Rinn for the recipe. By the way, I didn't prepare the topping because I liked it plain...alasan je...padahal...tak kuasa nak buat topping sebenarnya....My cheese cake cracked on top and a bit too brown. Next time round, if I were to bake this cheesecake again, I'll lower the temperature if I were to use the small oven, maybe to 150C to 160C.



JAPANESE SOUFFLE CHEESE CAKE

Ingredients
:

200g cream cheese (room temperature)
50ml fresh milk
3 eggs (seperated)
100g castor sugar
30g cornstarch
2 tablespoons lemon juice
1/2 teaspoon cream of tartar

Method :

1. Preheat oven at 175C. Line 18cm cake tin with grease proof paper.
2. Soften cream cheese in large bowl. Add milk and continue mixing on medium speed.
3. Add 1/2 of the castor sugar, egg yolks, cornstarch, lemon juice and cream of tartar, combined together.
4. Whisk egg whites in seperate large bowl until stiff peak formed. Add the remaining sugar little by little until mixture stands in stiff peak.
5. Fold half of egg whites mixture into cream cheese as gently as possible. Fold the remaining eggs gently but thoroughly.
6. Water bath bake for 45 mins on the lower shelf.
7. Leave in the tin until cool enough to handle.

For topping
LEMON CHEESE FROSTING

Ingredients
:

125g cream cheese
30g castor sugar
50g fresh cream
2 tablespoons lemon juice

Method :
Beat till creamy and ready to garnish the cake. Chill the cake before serving.

JAPANESE SOUFFLE CHEESE CAKE

Bahan-bahan
:

200g krim keju (suhu bilik)
50ml susu segar
3 biji telur (diasingkan putih dan kuning)
100g gula kastor
30g tepung jagung
2 sudu besar jus lemon
1/2 sudu kecil cream of tartar

Kaedah penyediaan :

1. Panaskan ketuhar pada 175C. Griskan loyang 18sm dengan kertas minyak.
2. Pukul krim keju di dalam mangkuk. Masukkan susu dan terus memukul dengan kelajuan sederhana.
3. Masukan 50g gula, kuning telur, tepung jagung, jus lemon dan cream of tartar. Kacau sebati.
4. Pukul putih telur hingga kembang dan ringan. Masukkan baki 50g gula, sedikit demi sedikit dan terus memukul hingga kembang.
5. Kaup balikkan separuh adunan putih telur ke dalam bancuhan krim keju. Kaupbalikkan baki putih telur ke dalam adunan.
6. Bakar dengan kaedah Bain Marie selama 45 minit pada rak yang paling bawah.
7. Biarkan di dalam tin pembakar hingga sejuk.

Untuk topping
LEMON CHEESE FROSTING

Bahan-bahan
:

125g krim keju
30g gula kastor
50g fresh cream
2 sudu besar jus lemon

Kaedah penyediaan :

Cream kesemua bahan di atas dan hiaskan atas kek.

Pasal kek tak berapa naik tu, mama rasalah, cara Nur Atiqah mix the egg white into the mixture. It has to be very gentle dan gunakan teknik cut and fold (kaup balikkan). Semasa melakukan proses tersebut, kita dah boleh lihat yang mixture tu ringan.
