Melon Buns (Alex Goh)

 
 
 
Hi everyone! Sorry haven't been updating on food that much. Haven't been baking for, like ages I guess. Pretty occupied, doing I-don't-know-what! And normally when I am just starting to bake again, I'll end up doing blunders....bak kata mak mama....enjin belum panas lagi!!! Hehehe.... Take today for example. I told myself that I AM GOING TO BAKE something today, by hook or by crook! So yes, after Asar, I started in the kitchen. I wanted to bake a cake and a bread. Well, the cake looks ok, but taste wise, I haven't tasted yet...so we'll leave that for later. Let's talk about this bread of mine!

I've always have pleasure in baking bread. And today is no difference as well, at least till 3/4 way of the preparation. The dough was soft, the 'topping' was alright. But when it came to assembling, I don't know what came into me...I was totally confused by the instruction. Wanted to check on the internet with a few fotopage and blog that had posted similar recipe before, but I dare not switch on the laptop as it was raining quite heavily, with thunder and lightning. So, I just follow my confused mind! And guess what....I did the opposite thing! Hahahaha....When the bread was ready, I met mommy online and told her about this. We had a very good laugh, don't we mommy!!! When chatting with her, then only I realised, how troubled my mind was....as it clearly states in the book, the word 'TOPPING', meaning it's suppose to be ON TOP. Why on earth and sky and moon, did I put in INSIDE! And so, I declare, this Meron-pan to be Mero-yan! HAHAHAHAHAHAHAHAHAHAHAHAHAHAHAHAHAHAHAHAHAHA.......

Though my Melon Bun turned out to be an Inside-Out Melon Bun, taste wise, it's nice. The bun is soft and if you dip it in hot Milo or Nescafe, it'll be lovelier! Thanks to Mr Alex Goh for the lovely recipe but thousand apologies from me for manipulating (without intention, but out of stupidity that is!) the method! ikut sedap diaaaaaa je nak tukar resepi orang!!!! Hehehe....

MELON BUNS

BUN DOUGH

(A)
*480g bread flour
*120g plain flour
110g sugar
10g salt
20g milk powder
4 teaspoons instant yeast

(B)
1 egg
300ml water

(C)
60g butter


* I used all purpose flour

Method :

1. Mix (A) till well blended.
2. Add (B) and knead to form a dough.
3. Add (C), continue to knead to form a smooth and elastic dough.
4. Cover dough with clear film. Let it prove for 50 -60 minutes or till doubles its size.

TOPPING

(A)
120g margarine
100g icing sugar
pinch of salt

(B)
1 egg

(C)
1 tablespoon milk powder
200g plain flour
1/4 teaspoon baking powder

Method :

1. Prepare the topping : Mix (A) till well blended. Add (B) and cream till smooth, then add (C) and mix till well incorporated.
2, Divide the topping into 30g portions.
3. Divide the bun dough into 60g portions and mould into balls.
4. Wrap the topping round the bun dough and leave to prove for 45 minutes.
5. Brush with egg wash and bake in the middle of the oven at 190 C for 15 - 20 minutes. Serve.
