Itinerary for Tour to Durban 2007

Day 1
: Saturday 24th March


3.15 pm : Depart from Blantyre to Johannesburg, South Africa (2 1/2 hours flight)
7.00 pm : Depart Johannesburg to Durban (1 hour flight)
10.00 pm : Still on the way to Seula Zimbili (Natal North Coast - Zinkwazi)
Seula Zimbili is a brand new development, situated 80km from Durban, on the south bank of the Tugela riverin close promimity to the beach. Children will be accomodated in bungalows in groups of 12 on double bank beds. Each dorm has an en-suite shower. The dining hall caters for well balanced and 'very yummy' meals with all special meal requirements being met. The venue boasts a lovely swimming pool and 'awesome' boma for the evening log fire experience.

Day 2 : Sunday 25th March

Day consists of :
~ Breakfast
~ Obstacle course
~ Swimming, organized free time
~ Lunch
~ Raft building
~ Swimming, organised free time
~ Shower/Dinner
~ Night activity
~ Bed

Day 3 : Monday 26th March

Day consists of :
~ Breakfast
~ Abseiling
~ Swimming, free time
~ Lunch
~ River challenge
~ Swimming, free time
~ Shower/Dinner
~ Night activity
~ Bed

Day 4 : Tuesday 27th March

After breakfast, closing and feedback on Seula Zimbili, then departure.

10.00 am : Arrive at Treasure Beach Environmental Education Centre
Treasure Beach is an environmental education centre run by the Wildlife and Environment Society of South Africa. Situated on the Bluff, it is 20 minutes from center of Durban. The hands-on approach used by the staff encourages the practical understanding of the ecology and the learner's role in caring for the environment.
Children are accomodated in dormitories. Three nutritional, varied and balanced meals per day are provided. Vegetarians and special dietary needs are catered for on request.

Day at leisure to relax, swim in the sea and explore!

After dinner ~ Night activity.

Yesterday, I made myself busy the whole evening. I tried 4 new recipes. But out of that 4, there's one recipe that didn't turn out too well because I had forgotten to put in one ingredient. So I guess, I'll have to re-try that one again soon.

So for today, I'll paste one of the latest experiments from MamaFaMi's kitchen. It'll be this Bread Rolls recipe that I got from Dolly's book. Had to put this one first as Dolly might want her book back soon....how I wish I don't have to return this book back to her because all the recipes look so delicious. Hmm...perhaps if I had the chance to go to South Africa later on, I'll go get myself one! *pray* *pray*



BREAD ROLLS

Ingredients
:

360 g (3 cups) flour
4 ml (3/4 teaspoon) salt
10 g (2 1/2 teaspoons) instant yeast
2 tablespoons thick ghee
1 egg
250 ml (1 cup) milk
30 g (1/4 cup) sugar

Method :

1. Sift flour, salt and yeast into a bowl.
2. Heat the milk but allow it to cool down until it's lukewarm before you beat in the sugar, ghee and egg.
3. Make a soft bread dough, knead well and allow the dough to rise double in volume. Punch and knead and divide dough into two. Make 8 balls out of each lump of dough.
4. Grease two round cake pans. Place one ball in centre of each pan and arrange the other seven around it in a circle.
5. Let rise again and brush dough with egg yolk and sprinkle with sesame and poppy seeds.
6. Bake at 180 C for 10 - 15 minutes.

For meat stuffed rolls :
The above recipe is ideal for stuffing with cooked meat filling. Once dough has risen, spread out a ball of dough into the palm of your hand, place a good tablespoon of prepared chicken or mutton filling in the middle and then close over with the extended dough. Place the rolls with the enclosed side down on the baking tray. Bake as above.

Note :
1. I made half the recipe and made it into hotdog rolls.
2. I omit the sesame and poppy seeds.
3. I didn't brush my dough with egg yolk before baking them.

Bahan-bahan
:

360 g (3 cawan) tepung
4 ml (3/4 sudu kecil) garam
10 g (2 1/2 sudu kecil) yis segera
2 sudu besar minyak sapi kental/ghee
1 telur
250 ml (1 cawan) susu segar
30 g (1/4 cawan) gula

Kaedah penyediaan :

1. Ayakkan tepung dan garam ke dalam mangkuk mixer. Campurkan yis dan gaul rata.
2. Panaskan susu hingga suam kuku. Masukkan gula, ghee dan telur. Kacau sebati.
3. Tuangkan bancuhan sedikit demi sedikit ke dalam tepung sambil uli hingga doh yang lembut, licin dan tidak melekat pada mangkuk, terbentuk. Biarkan doh naik dua kali ganda saiz asal. Tumbuk doh untuk mengeluarkan angin. Bahagikan doh kepada dua bahagian dan setiap bahagian dibahagikan kepada 8 bebola kecil.
4. Griskan dua loyang bulat. Susunkan 8 bebola kecil dalam setiap loyang. Satu di tengah dan 7 di keliling.
5. Biarkan naik sekali ganda. Sapukan kuning telur dan taburkan dengan bijan dan poppy seeds.
6. Bakar dalam ketuhar yang telah di panaskan terlebih dahulu pada suhu 180 C selama 10 - 15 minit.
