CITRUS CHIFFON CAKE (Muna & Puan Bashah)

 

The day for me to be without my son for 12 days had finally arrived. Look at how fast time really flies. We have doubt actually to send Syahmi for the Durban Tour in the first place, as we are not sure whether we'll still be around, but alhamdulillah Syahmi did get the chance to visit Durban with his classmates. Hope he will have fun that side. Yesterday's flight was delayed by 2 hours due to some technical problems that's best to be kept untold. And they took off in the heavy rain. I had told myself that I must be strong, not to shed any tears at the airport, but burst as you will, at home in the toilet....but the sadness just overpowered me. Once the plane tyres started moving, I just can't hold back the tears though I have tried my hardest.......



Recipe to share today will be this Orange Chiffon Cake that I've tried sometime last week. Had been wanting to try and bake Chiffon Cakes for quite a while, but I don't have the Chiffon Cake tin. Then recently I came across this recipe and just can't wait any longer. I borrowed Naseem's Chiffon Cake tin. Though the look wasn't perfect, infact, sort of ugly, but the taste is lovely. When the cake was baking in the oven, the aroma was so lovely! Fatin just can't wait to have a bite! And actually, she was the one who ate the most! Good girl!!! Anyway, my thanks go to Muna and Puan Bashah Azmi. for sharing this recipe with all of us....I made half the recipe...



CITRUS CHIFFON CAKE

Ingredients
:

1 1/2 teaspoons baking powder
1/2 teaspoon salt
8 ounces granulated sugar (about 1 cup), divided
6 ounces sifted cake flour (about 1 3/4 cups)
1 tablespoon grated orange rind
1/2 cup fresh orange juice (about 1 orange)
1 tablespoon grated lemon rind
5 tablespoons canola oil
(I used my sunflower cooking oil)
1 1/2 teaspoons vanilla extract (I used vanilla essence)
3 large egg yolks
8 large egg whites
3/4 teaspoon cream of tartar
2 teaspoons powdered sugar

Method :

1. Preheat oven to 325°.
2. Combine baking powder, salt, 7 ounces sugar, and flour in a large bowl, stirring with a whisk until mixture is well combined. Note--I triple-sifted these ingredients--I'm not taking any chances!
3. Combine orange rind and next 5 ingredients (through egg yolks) in a medium bowl, stirring with a whisk. Add rind mixture to flour mixture, stirring until smooth.
4. Place egg whites in a large bowl; beat with a mixer at high speed until foamy. Add cream of tartar; beat until soft peaks form. Gradually add remaining 1 ounce sugar, beating until stiff peaks form. Gently stir one-fourth of egg white mixture into flour mixture; gently fold in remaining egg white mixture.
5. Spoon batter into an ungreased 10-inch tube pan, spreading evenly. Break air pockets by cutting through batter with a knife. Bake at 325° for 45 minutes or until cake springs back when lightly touched. Invert pan; cool completely. Loosen cake from sides of pan using a narrow metal spatula. Invert cake onto plate. Sift powdered sugar over top of cake.

Bahan-bahan
:

1 1/2 sudu kecil serbuk penaik
1/2 sudu kecil garam
8 auns gula (lebih kurang 1 cawan)
6 auns (lebih kurang 1 3/4 cawan) tepung kek ~ diayak
1 sudu besar parutan limau
1/2 cawan jus oren
1 sudu besar parutan lemon
5 sudu besar minyak canola
(Mama guna minyak masak biasa)
1 1/2 sudu kecil esen vanilla
3 kuning telur (besar)
8 putih telur
3/4 sudu kecil cream of tartar
2 sudu kecil gula icing

Kaedah penyediaan :

1. Panaskan ketuhar pada suhu 180 C.
2. Satukan serbuk penaik, garam, 7 auns gula dan tepung di dalam mangkuk yang besar. Kacau sebati menggunakan whisk.
3. Di dalam mangkuk yang lain, satukan parutan limau, jus oren, parutan lemon, minyak, esen vanilla dan kuning telur. Kacau hingga sebati. Tuangkan ke dalam bahan kering dan kacau sebati.
4. Masukkan putih telur ke dalam mangkuk yang kering dan bersih. Pukul pada kelajuan yang tinggi. Masukkan cream of Tartar dan pukul hingga kental. Kemudian masukkan baki 1 auns gula.
5. Kaupbalikkan putih telur ke dalam bancuhan hingga sebati dan ringan.
6. Tuangkan ke dalam tube pan tanpa digris. Bakar selama 45 minit atau hingga masak.
7. Setelah masak, keluarkan dari oven dan terbalikkan tin. Biarkan sejuk. Keluarkan dari tin menggunakan spatula. Ayakkan sedikit gula icing di atas kek.

So gini, kalau resipi tu kata, last step masukkan tepung, then kaupbalikkan tepung dan kalau last step kata masuk stiff egg white, kaupbalikkan the egg whites. Jangan digodak. Process kaupbalikkan ni yang buat kek tu ringan, so tak keras. You can even see the lightness of the mixture masa prosess kaupbalikkan tu. Mama nowadays kalau buat kek, mesti ada that method even though dalam resipi tak sebut. And if possible, ayakkan bahan-bahan kering preferably 3 kali. The final ayakan tu, biarkan je tepung tu bertabur atas kertas hingga tiba masa untuk digunakan. That is to allow the air to be kept trapped inside. So I hope, you won't give up ya, keep on trying and insyaAllah one day, you'll bake a cake to your satisfaction. Be confident...YOU CAN DO IT!
