CHOCOLATE MUFFIN (CACAOWEB) ~ Zakiah

 
Yesterday night before going to bed, I had planned what to do for the kids breakboxes and breakfast. So, even though I slept REALLY late, i.e almost midnight, when I woke up at 4.30am, I felt fresh. Why? Because, my brain doesn't have to work that much! And that carried on the whole day long. For hubby's breakfast, I just fried the leftover rice. For the kids' breakboxes, I made muffins and for their lunch, since both of them are staying back for afternoons, I had packed for them beef burgers. Actually my intention was just to bake the Chocolate Chip Muffins but then ended up baking another new muffin that I came across the recipe recently. Recipe to be posted afterwards.

After finished cooking, I thought of just mopping the bathrooms, but ended up mopping the whole house! And after dropping hubby back at his office after lunch, I went to Syahmi's school to watch the Inter house swimming gala. My intention was just to sit and watch and relax. I didn't even put on a yellow top as usual. But being MamaFaMi, I just can't sit down quietly if somebody is having such hectic competition in the pool. I just have to support my house team and so....I SCREAMED AT THE TOP OF MY VOICE! Hahaha! Syahmi didn't swim though as we don't want to take the risk of him being sick again. But he helped at the pool. The Gala was 3/4 finished when it started raining, with thunder. So the teachers decided to postponed the few events left, till tomorrow morning. Anyway, this time, Khuto didn't do very well...but hey...winning is not everything. The sporting spirit that counts. Well tried and kudos to all KHUTO kids! Better luck next time!

Ok....now, food report! For lunch, hubby had these....


And as mentioned above, here's the Chocolate Muffins that I've experimented early this morning. Thank you very much to Zakiah for discovering this recipe and sharing it with all of us. I made a few adjustments to the recipe to suit my taste bud. Sorry ler Zakiah....mama memandai mandai sendiri je.... The adjustments that I've made are on the amount of cocoa powder and the method of preparing the muffin. I didn't exactly follow Zakiah's recipe but am more comfortable the way I prepare my muffins. Alhamdulillah, it came out nice, soft and spongy!



CHOCOLATE MUFFIN (CACAOWEB)

Ingredients
:

2 eggs
1 cup (200 g) sugar
1 cup (130 g) all-purpose flour
(I added 4 tablespoons more)
6 tablespoons unsweetened cocoa powder (I reduced to only 2 tablespoons)
2 teaspoons baking powder
1 teaspoon vanilla essence
2/3 cup (160 ml) milk
2/3 cup (160 g) butter - melted
4 oz (120 g) semisweet chocolate chips (optional)

White chocolate rice ~ to sprinkle

Method :

1. Preheat oven to 350 deg F (Gas mark 4 or 180 deg C).
2. Grease 6 large muffin tins or cups (paper muffin bake cups are recommended).
3. Beat the eggs with sugar, mix with flour, cocoa powder, baking powder, vanilla and milk.
4. Fold in the melted butter.
5. Add chocolate chips (please note that these might end up in the bottom of the muffin).
6. Bake at 350 degrees until a until a wooden pick inserted in center comes out clean, approximately 30 minutes.

The Chocolate Muffins may be served hot or at room temperature.

***For me, I prefer to sprinkle the chocolate chips on top of the batter before baking. If I mix with the batter, the chips will sink.
***I used vegetable oil. Vegetable oil less fat than butter!
*** I beat the eggs untill the color pales.


MamaFaMi's way of preparing :

1. Sift flour, cocoa powder and baking powder into a bowl.
2. Add sugar into the flour mixture. Use a whisk to lightly blend the mixture.
3. In a small pot, melt butter. Remove from heat and pour in the milk. Add in the slightly beaten eggs and vanilla.
4. Lightly dust chocolate chips with flour (to prevent sinking in batter).
5. Make a well in the middle of dry ingredients. Add the wet ingredients and mix just until all the flour is moistened. Fold chocolate chips into batter. The batter should look lumpy. Do not overmix.
6. Spoon into the muffin cups (2/3 full). Bake.

Kaedah penyediaan[/b] :
1. Ayakkan tepung, serbuk koko dan serbuk penaik ke dalam mangkuk besar.
2. Masukkan gula dan gaulkan mengguna whisk.
3. Di dalam periuk yang kecil, cairkan mentega. Alihkan dari api dan tuangkan susu, telur dan esen vanila. Kacau rata.
4. Buatkan lubang di tengah bahan kering dan tuangkan bancuhan susu.
5. Kacau menggunakan whisk hingga bater bercampur. Jangan terlebih kacau. Masukkan chocolate chips yang telah ditaburkan sedikit tepung (bagi mengelakkan ia mendap ke bawah). Bater akan kelihatan berketul.
6. Sudukan ke dalam mangkuk muffin, 2/3 penuh. Bakar selama 25 - 30 minit.




Oh by the way...jeng jeng jeng....see the muffin cups! Was so excited to use it this morning!
