APAM BALIK

 
 
 
Wasn't able to update yesterday. Wasn't feeling too good. Sort of headache and feverish. But Syahmi was down with fever, definately. And since yesterday was Sunday, our panel clinic was closed. So mummy just had to be a doctor herself despite her lousy condition. I gave Syahmi lots of liquid to drink and also some Paracetamol. Sponged his body and put a Cool Fever on the forehead. And I think it actually helps. As for me, I just get busy with housework, cooking and ironing. Though it didn't go straight away, but towards the evening, it finally gave in and left me in peace and one piece..Hahaha!

My hubby arrived safely in Malawi yesterday evening at 2.30 pm Malawi time. The plane was delayed by 20 minutes. He was in Malaysia for the past 2 weeks. Alhamdulillah he's back now safe and sound and with a very heavy big bag! Thanks to me! Hahaha...like my sister use to say...Mama kalau hubby dia balik...satu Malaysia bersilat!!! Speaking of which, it's not only hubby who got the 'what-to-buy' list, but my mom, my sister, Ida and Erna had their fair share as well!!!! Hahaha...tu laa...saper suruh offer...mama ni pantang...pantang dioffer! Jangan serik naaa.... I would like to thank ALL of you for helping my hubby to fill up the bag up to the limit! Hihihi...You know what, hubby just bought that bag, and some stitches were actually burst! Overload must be...sorry sorry sorry....But I don't get this chance always...so make the best of it! Sorry my dear hubby and thanks so much for carrying all those goodies for my experiment pleasure! But come to think of it again...hmmm...whatever I will be doing with all those stuff, will be enjoyed by the whole family as well...so...it's not 100% my fault huh? Yeah right!!!

These were among what hubby brought back....





This morning, around 8.15 am, I brought Syahmi to the clinic. Had his blood tested for Malaria and WBC before going in to see the doctor. Alhamdulillah no Malaria just the WBC is a bit too high. Syahmi had asked, what does that mean mom..I told him, the germs are dancing rock and roll in your body! Hahaha....When I went in the treatment room to get the slip for the blood test, while the nurse was writing the particulars on the slip, I went on the scale..yeah right...make myself at home! Hahaha...and thaa dhaa....I lost another kg from the previous visit! What a way to start the day! When it was our turn, first I let the doctor look at Syahmi, and like I told Syahmi, the doctor described the same thing but in a different way that is...hahaha! Then it was my turn. Had my bp checked and what does Dr Rita has to say...."Wow, your bp is excellent today...130/85 just like what I wanted!" Yippeeeeeeee!!!!! Opps....alhamdulillah.....

Ok ok..let's move on to our food story. Had not tried anything new these two days. Soon I hope as I just can't wait to use all those lovely goodies that hubby brought back...but patience mama, patience...first thing first ok....For lunch, we just had, fried anchovies with onion and chillie, sambal daging, chinese cabbage soup and fried salted fish (for hubby and not me!).



And recipe to share, I'll just paste a simple recipe of Apam Balik which I've tried last 17th February, 2007. I am very sorry as I didn't jot down where I got this recipe from. But anyway, thank you to the creator of the recipe, whoever you may be....God bless you...



APAM BALIK

Ingredients
:

2 cups self-raising flour
1/2 cup sugar
1 egg
1 1/2 cups water
1/2 teaspoon baking powder
1/2 teaspoon yellow coloring

For garnishing :

1 cup fried ground nuts ~ roughly blended
1 cup castor sugar
1 can sweet corn cream style

Method :

1. In a blender, place the egg and sugar to liquidise for 1 or 2 minutes.
2. Add water, baking powder and yellow coloring. Liquidise for another 1 or 2 minutes.
3. Add self raising flour, litte at a time and on the blender. This step is to avoid the batter to be lumpy.
4. Repeat Step 3 till the flour is finished.
5. Heat a flat pan and grease with a bit of oil. When hot, pour in a ladle-full of batter onto the pan. Cover the pan.
6. When the pancake is almost cooked, sprinkle with sugar, groundnuts and sweet corn. Cover the pan
7. When the pancake is golden brown, remove from the pan and fold into half.
8. Ready to serve.

Note :
1. If you don't have self-raising flour, you can substitute with plain flour mixed with 1/2 teaspoon soda bicarbonate.
2. If you're using a non stick pan, you don't have to grease the pan.

Bahan-bahan
:

2 cawan tepung naik sendiri
1/2 cawan gula
1 butir telur
1 1/2 cawan air
1/2 sudu kecil baking powder
1/2 sudu kecil pewarna kuning

Bahan taburan :

1 cawan kacang goreng ~ ditumbuk
1 cawan gula halus
1 tin jagung krim

Kaedah penyediaan :

1. Mesinkan telur dan gula (guna blender je)
2. Masukkan air, baking powder dan pewarna kuning. Mesin.
3. Masukkan tepung sedikit-sedikit dan mesin hingga tidak berketul.
4. Panaskan kuali yang disapu dengan sedikit minyak. Masukkan satu senduk adunan. Tutup kuali sebentar.
5. Masukkan bahan tabur. Tutup semula kuali.
6. Bila kulit berwarna keperangan, bolehlah diangkat dan dilipat dua.

Nota :
1. Jika tiada tepung naik sendiri, gantikan dengan tepung gandum dicampur dengan 1/2 sudu kecil soda bikarbonat.
2. Sekiranya menggunakan kuali tak lekat, tidak perlu disapu dengan minyak terlebih dahulu.
