APPLE CHOCOLATE BUNS (Lynnhassan)

 
I was sort of 'blur' today. And I think it's not only me...'someone' was blur as well because when I chat with her, it's like I am in my own world and she's in her own world but we both were chatting together...ended up saying...hah...excuse me, what did you say! Hahaha...

I am pretty tired today. Woke up at 4.30 am to cook rice to make Sushi. Fatin had asked Sushi for her breakbox and Syahmi wanted them for his lunch. He had to stay back in school today for a football match with St Patrick's Primary School. I made Sushi with kilombero rice aka beras wangi, fried omellette, cucumber, thousand island sauce and fried sliced chicken fillets coated with Southern Fried Chicken coating. Then I made some puff pastry with Curry Puff fillings for Syahmi's breakbox. Sorry folks, no photos as I was racing against time! Managed to get everything done on time and kids were not late for school. Bravo to me! Hahaha...

After the kids left for school, I started my morning walks, then into the house and get everything back in order. For Fatin's lunch, made more sushi as there were leftovers. I am trying very hard NOT to eat those yummy sushis as I haven't been behaving lately! I've been eating rice, these two days. Though in just a small amount, psychologically I feel like I am putting back on weight where else I haven't actually!

I tried a new bread recipe this afternoon. Thought of letting it prove nicely while I go and fetch Fatin and when she comes back, while she's having her lunch, I can just put it in the oven before sending her to her afternoon class. But Fatin came out very late from school. Ended up, we just rush home to collect her stuffs and she had her lunch in the car. I just chucked the tray full of bread dough in the fridge. Dropped Fatin and straight to Syahmi's school to see him playing. His team lost but the A team won! Well done boys!

Went to Shoba's house to wait till it's time to fetch Fatin. Thanks Shoba for the lift, the food and the company. Appreciate it very much. By the time I reached home, I am just exhausted. But still there's work to be done. I heated the oven and in goes my tray of bread which had shrunk a bit. Just prayed Bismillah and in goes the tray, hoping for the best...After 20 minutes, the lights went off! Blackout! Just nice, my bread was ready. Fatin had them nicely and she likes it...So Lynnhassan, thank you for sharing with us this Chocolate Apple Bun recipe. I made into two versions, some with apple filling and the rest plain.



APPLE CHOCOLATE BUN

Ingredients
:

350g high protein flour/bread flour
(I used cake flour because that's what's available at home! I added 10 g)
11g instant yeast
1 teaspoon salt
40 g honey
40 g condensed milk
20 g milk powder
30 g cocoa powder
(I lessen 10 g. Next time round, I might reduce another 5g maybe!)
250 ml fresh milk
1/2 teaspoon bread softener ~ optional
(I didn't put because mine's finished!)
30g butter

Filling :
I used this recipe.

Method :

1. Mix all ingredients except butter. Knead for 2 minutes using mixer.
2. Add in butter and knead till a soft, smooth and elastic dough is formed. Make into a big ball and leave to prove till double the size.
3. Divide dough into 30 g each. Make into small balls and rest for 10 minutes.
4. Flatten using a rolling pin. Spoon a bit of filling and cover with the dough.
5. Arrange the filled dough on the baking tray and let them prove till double the size.
6. Bake in a pre-heated oven at 180 C for 10 to 15 minutes or till done.
7. Once out of the oven, brush with butter/margarine to give it a glossy look.

Bahan-bahan
:

350g high protein flour
(mama guna tepung kek dan mama tambahkan 10 g tepung)
11g instant yis
1 sudu kecil garam
40 g madu
40 g susu pekat
20 g susu tepung
30 g serbuk koko
(mama kurangkan 10 g)
250 ml susu segar UHT
1/2 sudu kecil pelembut roti (optional)

30gm butter

Inti
400 gm apple filling (3 biji epal merah dipotong dadu. Rebus dengan sedikit air sampai lembut.Campurkan gula (ikut manis) , 2 batang cengkih. Bila semua hampir masak. Pekatkan dengan letak tepung jagung (anggaran 3 tbsp). Inti biar pekat dan sedikit kental). Sejukkan

Cara membuatnya.
1. Campurkan semua bahan kecuali butter, uli selama 2 minit.
2. Campurkan butter. Uli lagi sampai lembut dan elastic selama 10 min. Rehatkan doh selama 30 min dalam bekas bertutup.
3. Bahagikan doh , setiap satu 30g. Roll menjadi bulat. Rehatkan selama 10 min
4. Ratakan doh dengan rolling pin, Letak inti, dan uli bulat
5. Biarkan doh tadi naik seganda. Bakar dalam oven 180'C selama 10 min
6. Bila masak, keluarkan dan berus kulit roti dangan butter cair

Dulu tu kalau buat, keras je, ngalah batu. Tapi I kept on trying and from day to day, dah quite alright. But my mixer will do the kneading job. I don't think it's 100% the softener or the ovalette punya problem, it's the technique of handling the dough yang perlu dimahirkan. Anyway, all the best and never give up ya...whatever you're trying, try with half or quarter the recipe...good luck!
