REEN'S CHICKEN PIE

 
 
 
House swept, kitchen's cleaned, finished my morning walk, had shower...aahh....how lovely! Now I just have to have some breakfast and at the same time, think what to cook for lunch. Meanwhile, I'll just write my 'diary' here.

These were what we had for dinner last Monday.

Didn't update my page yesterday due to few reasons. Firstly I can't download the photos from my camera through the laptop and into my disc as Fatin's downloading lots of stuffs on the internet. The day before I tried to download the photos and whatever Fatin was downloading from the net just froze! I don't think I did anything to it, but maybe the laptop just surrendered! Then yesterday evening, I don't know what went into me, I was out of control! I think that afternoon shower had done something to my system. So....tips for today : whenever you feel lazy, go take shower! Hahahaha.....

First I made the Rose Tarts and Chocolate Melody (new recipe, yet to be posted later because I haven't put any make-ups on the cookie!). Both these cookies will be my humble gifts for Sherin's wedding this Friday. Shirin dear...you must be on Cloud 9 now huh! Congratulations my dear!

Then I proceed with the Spagetti Sauce and Meatballs. And these were our dinner yesterday....

Not enough with that, I made Donut Chef Li for the kids breakboxes and to freeze as well. And finally an orange butter cake. Also a new recipe to be shared later! Phew...that wraps up my hyperactive self yesterday....

The recipe that I'd like to share today is a simple to do Chicken Pie. I got this recipe from Reen, Kak Lynne's sister. It's so easy to prepare and yet tasty as well. But sorry guys, no exact amount. You have to play around with it yourself ya! Thanks Reen for sharing the recipe with us...Reen uses the ready made rolled puff pastry for the crust, but I made my own.



REEN'S CHICKEN PIE

For the crust
:
400 g flour (sifted)
200 g margarine
pinch of salt
7 - 8 tablespoons water (from the fridge)

For the filling :
Carrots ~ diced
Potatoes ~ cleaned and diced
Button mushrooms ~ sliced
Eggs ~ boiled
Onion ~ sliced
Garlic ~ minced
Ginger ~ minced
Chicken fillets ~ diced
Water
Chicken cube ~ optional
Black pepper ~ crushed
Soya sauce
Corn flour mixed with a bit of water ~ to thickens the gravy
Egg yolk ~ to brush on top
Oil for cooking

Method :

For the crust :
1. Margarine + flour + salt, make into breadcrumbs.
2. Add water till soft dough is formed.
3. Divide into 2 portions and let it rest for at least 20 minutes

For the filling :
1. Boil carrots and potatoes with a bit of salt till tender. I added some young corns and green beans as well, for color and also, I just love vegetables!
2. Heat oil in a wok. Saute the garlic, ginger and onion till fragrant.
3. Add in the chicken chunks and enough water. The amount of water depends on how much gravy you prefer. You can also add a chicken cube, I didn't.
4. Once boiling, add in black pepper, salt and soya sauce for color.
5. Before removing from heat, pour in the cornflour mixture to thicken the gravy.

Assembling :

1. Roll thin the dough for the base. Put it in the pie dish. Poke with fork.
2. Bake for 20 minutes in a pre-heated oven at 180 c.
GOSH...I only realised now that I have to bake it before putting the filling! That day, I just chucked everything and bake! Hahaha...Mama made blunders again...but hey...I'm still alive! So I guess it's alright!
3. Pour the filling into the baked crust, arrange the boiled vegetables, mushrooms and the eggs (quartered).
4. Roll thin the second portion of the dough to cover the filling. Trim the edges and press with a fork to seal. Make small slits on top.
5. Decorate as desired with the remaining dough.
6. Brush with beaten egg and bake in a pre-heated oven at 180 C for 40 - 45 minutes.

Untuk kulitnya
:

Untuk Inti :
Lobak merah ~ dipotong dadu
Kentang ~ dikupas kulit dan dipotong dadu
Cendawan butang ~ dihiris
Telur ~ direbus dan dibelah 4
Bawang ~ dihiris
Bawang putih ~ ditumbuk
Halia muda ~ ditumbuk
Isi ayam ~ dipotong dadu
Air secukupnya
Kiub ayam ~ jika suka
Lada hitam ~ ditumbuk
Kicap
Sedikit tepung jagung dibancuh dengan sedikit air ~ untuk memekatkan kuah
Kuning telur ~ untuk sapuan
Minyak untuk menumis

Kaedah penyediaan :

Untuk kulit :
1. Majerin + tepung + garam, diramas dengan hujung jari sehingga berupa serbuk roti.
2. Masukkan air sedikit demi sedikit hingga doh yang lembut terbentuk.
3. Bahagikan kepada 2 bahagian dan rehatkan doh selama 20 minit.

Untuk Inti :
1. Rebuskan lobak merah dan kentang dengan sedikit garam hingga lembut. Mama masukkan juga putik jagung dan kacang boncis untuk warna yang lebih menarik.
2. Panaskan minyak dan masukkan bawang putih, halia dan bawang. Tumis sehingga naik bau.
3. Masukkan isi ayam dan air secukupnya. Amaun air bergantung kepada banyak mana kuah yang disukai. Boleh juga ditambahkan dengan kiub ayam. Mama tak masukkan kiub ayam.
4. Bila telah mendidih, masukkan lada hitam, garam dan kicap (untuk warna).
5. Sebelum dipadamkan api, tuangkan bancuhan tepung jagung untuk memekatkan kuah.

Penyediaan Pai :

1. Canai nipis doh untuk bahagian dasar pai. Letakkan di dalam mangkuk kaserol dan cucukkan dengan garpu.
2. Bakar selama 20 minit dalam ketuhar yang telah dipanaskan terlebih dahulu pada suhu 180 C.
3. Tuangkan inti ke dalam kulit pai tadi dan aturkan sayur-sayuran yang telah direbus, cendawan butang dan juga telur rebus.
4. Canai nipis doh yang selebihnya untuk menutupi inti pai. Trimkan bahagian tepi-tepi pai dan tekan menggunakan garpu. Cucukkan perlahan-lahan menggunakan pisau di bahagian atas kulit pai.
5. Hiaskan permukaan pai dengan lebihan doh.
6. Sapukan dengan kuning telur dan bakar di dalam ketuhar yang telah dipanaskan terlebih dahulu pada suhu 180 C selama 40 - 45 minit.
