CHINESE FRIED RICE (Zack)

 
HOORAYYY....YAHOO....YIPPEE! Ho ho ho...someone's really happy today! Hmmm...is that so obvious? Hahaha..of course it is! Why is mama so happy? Because, it's school mid term holiday! Hahaha! Mama is happier than the kids huh? Why? Because mama is just so tired to rush early in the mornings and afternoons! I really need a break from all these hustle bustle!

This morning I woke up late. Aahhh...I missed my morning walk as it is time to prepare breakfast already! After breakfast, hubby and me went out to GAME to get some shuttlecocks and SHOPRITE to get some groceries. Just fried rice for hubby's and Syahmi's lunch while Fatin had these....

Mama? Hmm....a bit of this and that....just a bit...no cheating!

After hubby left for the club, I decided to mop the house so that tomorrow, I can date my Miss Iron. Good excercise I must say, to make up for my morning walk that I've missed. After mopping, thought of just 'taking five' and watch TV with the kids and guess what...the TV and the kids were 'watching' me as I fell asleep for a good 1 1/2 hour or so. Aahhh what a waste! But what's done is done...no point regretting....

Then around 5pm, me and the kids went out to the garden. The kids played badminton while I do my evening walk for a good 15 rounds, then I joined them playing. What a good outing to end the day! Tired, but somehow I feel fresh!

Okay folks, enough of my bla bla bla for the day...we'll proceed to the recipe for the day...Let me just share with you something that I've tried from Zack's Fotopage quite a long time ago. Thank you Zack for the lovely and simple Fried Rice Recipe. Here's the recipe if you care to try...sorry Zack....mama copy and paste je kat sini eh...penat ler...baru masuk main badminton!



CHINESE FRIED RICE

Ingredients
:

2 cups white rice
6-8 shrimps
1/2 of 1 chicken breast, diced
2 cloves garlic, finely minced
1/2 green onion, minced
1 tsp minced ginger
mix veggie
2-3 eggs
2 tbsp oyster sauce
2 tbsp spring onions
2 tbsp fried shallots ( bwg goreng )
2 tbsp veggie oil + 1 tbsp sesame oil
salt, white & black pepper, sugar to season

How to make :

1. Prepare all the ingredients; Have them placed in bowl along with the seasonings; oyster sauce, salt, sugar and pepper. Make sure that everything is within your hands reach because you'll be cooking very fast, so you won't have time to run to the sink or table for the ingredients.
2. Heat up the wok, put in the oil and check to make sure that the wok is really hot by sprinkle a little bit of water to the side of the wok and it should steam up very quickly.
3. Pour in onions, garlic, chicken and shrimps. Stir quickly followed by the oyster sauce and mix veggie. Pour in the rice mixed with eggs ( see the TIPS picture above ) and stir fry quickly. Use a big spatula is you need to. It sure helps sometimes
4. Lastly add in the spring onions, fried shallots and season with enough salt, sugar and pepper of your liking.

Bahan-bahan
:

2 cawan nasi putih
6 - 8 ekor udang
1/2 dari 1 ekor dada ayam ~ dipotong dadu
2 ulas bawang putih ~ ditumbuk
1/2 labu bawang ~ ditumbuk
1 sudu teh halia ~ ditumbuk
sayuran campuran
2-3 butir telur ayam
2 sudu besar sos tiram
2 sudu besar daun bawang ~ dihiris
2 sudu besar bawang goreng
2 sudu besar minyak sayur + 1 sudu besar minyak bijan
garam, lada sulah, lada hitam dan gula

Kaedah penyediaan :

1. Sediakan semua bahan-bahan yang diperlukan dan letakkan di tepi dapur tempat anda akan menggoreng nasi tersebut kerana segala proses memasak harus dijalankan dengan pantas untuk memperolehi hasil yang terbaik.
2. Panaskan kuali dan tuangkan minyak.
3. Bila minyak telah panas, masukkan bawang, bawang putih, ayam dan udang. Kacau sentiasa dan masukkan sos tiram dan sayuran campuran. Masukkan nasi yang telah digaul rata dengan telur dan kacau hingga sebati hingga masak.
4. Masukkan daun bawang, bawang goreng dan rasakan garam, gula, lada sulah dan lada hitam. Sedia untuk dihidangkan.


What a coincidence, I just realised that I am posting this Chinese Fried Rice when all the Chinese are celebrating their festival. So I take this opportunity to wish them a Happy Chinese New Year...Gong Xi Fa Chai...
