STEAMED CARAMEL CAKE (Sis Rossya)

 
 
 
ROSSYA....is a big name in the world of Fotopages especially when it comes to food photograpy and recipes. I am sure, most of us, especially to those of you who visits my page regularly, will know sis Rossya. The first time I bumped into her page, I fell in love with it straight away and never stop visiting till the day she said goodbye! Goodbye is the hardest thing to do, and actually, tears welled up my eyes when I read her last entry....I was just....sad! But we have to respect and honour her decision, as there may be other important matters that really need her attention...Sis Rossya had promised to pay us a visit every now and then, so we will be seeing her around, if her time permits.....Anyway Kak Rossya, we will miss your lovely entries and lovely foodshots plus LOVELY RECIPES. I've tried quite a number of recipes from her page and they just suit my taste......Thank you Kak Rossya for sharing your knowledge with all of us. We really appreciate it very much....sorry kak...kita cilok gambar akak tepek kat sini eh...ampunnsssss.....

STEAMED CARAMEL CAKE

150g fine granulated sugar
100ml hot water
70g butter melted
75ml evaporated milk
1 egg beaten
150g flour
1 level tsp baking soda
pinch os salt
75g fine granulated sugar

Place the 150g of sugar in small heavy-based saucepan and heat gently until the sugar melts and caramelizes to a nutty, golden brown colour. Take care to keep the pan on very low heat to avoid burning the caramel and remove the pan from the heat once it reaches a golden brown colour. Pour the hot water onto the caramel. ( Be careful not to get burned from the sputtering caramel - a good precaution is to wrap the hand holding the jug or cup of water in a cloth) Boil the caramel for a few minutes until completely melted and a syrup is obtained. Allow the syrup to cool.

Once cooled, add the melted butter, milk and beaten egg. Stir well to combine.

Sift the flour , baking soda and salt into a mixing bowl. Stir in the remaining granulated sugar. Make a well in the centre and pour in the liquid. Gradually incorporate the dry ingredients into the liquid, stirring gently with a wooden spoon or balloon whisk to form a smooth batter.

Line the base of a 7inch round or square cake pan with greaseproof paper and brush the base and sides lightly with softened butter. Pour the batter into the prepared pan and steam in preheated steamer for 30 minutes or until cake is well risen and a fork inserted in the middlle comes out clean. Do not open the steamer before 30 minutes is up or risk your cake collapsing.

Bahan-bahan


150g gula kastor
100ml air panas
70g mentega ~ dicairkan
75ml susu cair
1 biji telur ~ dipukul
150g tepung
1 sudu kecil (paras) soda bikarbonat
secubit garam
75g gula kastor

Kaedah penyediaan :

1. Cairkan 150g gula dengan api perlahan, jangan sampai gula menjadi hangus. Bila gula bertukar menjadi karamel (warna perang), tuangkan air panas ke dalamnya. (Berhati-hati akan percikan air gula panas. Cara mengelakkan percikan tersebut dari terkena tangan, balutkan tangan anda yang memegang jag air panas tersebut dengan tuala). Kacau bancuhan tersebut di atas api hingga mendidih dan memperolehi sirap/air gula. Biarkan sejuk.
2. Bila sirap telah sejuk, masukkan mentega cair, susu dan telur. Kacau biar sebati.
3. Ayak tepung, bikarbonat soda dan garam ke dalam mangkuk besar. Masukkan 75g gula kastor dan kacau rata. Buatkan lubang di tengah dan tuangkan sirap tadi. Kaup balikkan bancuhan sehingga sebati.
4. Alaskan loyang bulat bersaiz 7 inci dengan kertas kalisminyak, dan griskan tepi-tepinya dengan mentega. Tuangkan bancuhan ke dalam loyang.
5. Stimkan selama 30 minit atau hingga masak. Jangan buka tudung kukusan sebelum 30 minit atau kek mungkin akan mendap.
