SWISS ROLL (Naseem)

Simply delicious!
1. Life is not always sweet....sometimes you're up and at times you are down...You just have to know how to deal with it, in the best possible manner. And at the same time, seek solace from Allah. May I rest in peace....

2. This morning, I went on the scale and just waited patiently for the needle to come to a still. And what did I see?? Is it true, or are my eyes deceiving me? Well....let me double check. I stepped down, let the the needle to properly parked at '0'....satisfied with that, I went on it again. Wow weeee...it's showing the same reading! I am so happy though it's only just a slightttttttttt change but still, I can see some changes and that will motivate me to do more or at least to just continue what I am doing at the moment. What does the scale say mama? Ah....ahh.....not gonna tell you guys! But why mama? Because...I don't trust myself! Today, the reading might reduce slightly but you'll never know, tomorrow it might increased to double! Hahahahahaha! But then, if all went well and if I've really lost a lot, then maybe...just MAYBE I might reveal.....hehehe...as if anybody cares!

3. By the way, yesterday morning I did 19 if not 20 rounds of walking. In the evening, I dated Miss Iron for a good 2 hours and ended up with empty ironing baskets...such a wonderful view!!!! Wish my basket looks like that ALL the time! After that, I went for my evening walking. Walked for not less than 15 rounds! Lost count because I was busy chatting on the cellphone while walking and I got distracted and actually forgotten about being tired! Good huh? Hopefully if I stay faithful to this routine, who knows, the scale needle might be stopping at a better reading.....I wish and I pray......

4. Oki doki, since my eyes are slowly shutting, before it shuts completely, let me share with you this wonderful Swiss Roll recipe. Why wonderful? Less ingredients but the taste is superb...at least to me and my family. It's Syahmi's favourite. Thank you my darling Naseem for teaching me how to do this Swiss Roll I had earlier on, asked her permission to paste the recipe here......so here it is, as mentioned before, our favourite Swiss Roll recipe....


SWISS ROLL

Ingredients
:

4 oz caster sugar
(I used grinded plain sugar)
4 eggs
4 oz cake flour (if making chocolate swiss roll, take out 2 tablespoons of flour and add 2 tablespoons of cocoa powder) ~ sifted
2 teaspoons baking powder ~ sifted together with flour
1 teaspoon vanilla essence

Method :

1. Grease the paper used to layer the tray. Sprinkle a bit of flour on top.
2. Beat egg white till stiff using an electric mixer.
3. Add sugar, bit by bit till finish.
4. Add in egg yolks, one by one then vanilla essence.
5. Add 1/2 flour into the mixture. Beat lightly till well mixed.
6. Cut and fold the rest of the flour and pour onto the prepared tray.
7. Bake in a preheated oven at 180 C for 12 - 15 minutes.
8. Remove from the tray onto a slightly damp cloth. Cut the edges and roll it tightly. Leave it for a while to take shape.
9. Roll open, spread with jam or whipped fresh cream and roll once again.
10. Wrap with a cling film till ready to use.

Bahan-bahan
:

4 auns gula kastor
(Mama gunakan gula pasir yang dikisar)
4 butir telur
4 auns tepung kek
(sekiranya ingin membuat swiss roll coklat, keluarkan 2 sudu besar tepung dan gantikan dengan 2 sudu besar serbuk koko)~ diayak
2 sudu kecil baking powder ~ diayak bersama tepung
1 sudu kecil esen vanilla

Kaedah :

1. Sapukan kertas lapik loyang dengan majerin. Taburkan dengan sedikit tepung.
2. Pukul putih telur hingga kembang, menggunakan mixer.
3. Masukkan gula sedikit demi sedikit sehingga habis. Teruskan memutar.
4. Masukkan kuning telur, sebiji demi sebiji, diikuti dengan esen vanilla.
5. Masukkan setengah tepung dan kacau adunan. Pukul perlahan hingga tepung sebati dengan adunan.
6. Kaup balikkan tepung dan tuangkan ke dalam loyang yang telah disediakan...ratakan di atas dulang,
7. Bakar selama 12 - 15 minit di dalam ketuhar yang telah dipanaskan terlebih dahulu pada suhu 180 C.
8. Keluarkan kek dari loyang dan letakkan di atas tuala yang sedikit lembab. Potong bahagian tepi-tepi kek dan gulungkan. Biarkan sedemikian untuk berberapa ketika untuk mendapatkan bentuk gulungan tersebut.
9. Bila telah sejuk, buka gulungan tadi dan sapukan fresh cream di atasnya dan gulung sekali lagi.
10. Balut dengan cling film sehingga ingin digunakan.

~ For cakes : mama kalau tak perlu beat the egg whites till stiff, memang mama tak guna mixer langsung. Semua beat by the hand.
~ For rolls : Kalau larat uli doh for 1/2 hour, then it can be done manually as well.
~ For muffins : DEFINATELY NO MIXER. Sebab buat muffin ni, kena godak main-main je, tak boleh overmix. So the best choice at the moment would be muffins....Kalau nak refer recipe mama, please check at the links on the left hand side of the page. Mama suka buat Choc Chip Muffin yang ini sebab my daughter likes it very much.
