RENDANG UDANG (Nina)

 
Nothing much to say today as I didn't try anything new yesterday. Was really taking easy on myself, but at the same time I felt like a very helpless old lady. Doing things at a very slow phase, slowly but surely! In the morning, after dropping the kids, I was supposed to go for walking at the club with Dolly, but had to cancel it because I still have that slight dizziness till afternoon. For breakfast, made fried rice (of course I have to just 'taste' them a bit) and for the kids breakboxes, made chicken vienna sandwich with roasted potato chips. For lunch, cooked for hubby Asam Pedas Ikan and for the kids, chicken polony mini pizzas which they enjoyed very much. As usual, I used Donut Suria's recipe for the base. And for dinner, I just had a small portion of rice with Asam Pedas while hubby and kids had Roti Canai. Sorry, I didn't take any photos as I wasn't into it.

And recipe for today, I'd like to share this Rendang Udang recipe that I've tried last 10th January. I got it from Nina's Fotopage. Thank you Nina for this simple yet nice recipe. I just love prawns, but I guess I have to cut down on them as hubby said, prawns are high in cholesterol. Poor ol' mama! Anyway, for those who would like to try, here's the recipe...



RENDANG UDANG

Ingredients
:

1/2 kg queen size prawns
5 pieces kaffir leaves ~ sliced finely
1 cup thick coconut milk + 1 cup water
(I used fresh milk)
4 tablespoons kerisik
2 tablespoons chillie powder
(I used chillie paste)
1 lemon grass ~ bruised
cooking oil
Salt to taste

To be grinded/blended :

4 shallots
3 inch ginger
2 inch galanggal
2 lemon grass
2 teaspoons tumeric powder
5 - 6 bird eye chillie
2 pieces tumeric leaves

Method :

1. Heat oil and add in the grinded/blended ingredients. Fry till fragrant.
2. Add in chillie powder and stir well.
3. Pour in coconut milk + water, bruised lemon grass and kerisik.
4. Once the gravy boils, add in the prawns.
5. Boil till gravy thickens, remove from heat and ready to serve.

Bahan-bahan
:

1/2 kg udang besar
5 helai daun limau purut - dihiris halus
1 cawan santan pekat - dicampur dengan 1 cawan air
4 sudu besar kerisek
2 sudu besar serbuk cili kering
1 batang serai - diketuk
Minyak masak secukupnya
Garam/Perasa

Bahan Giling
4 ulas bawang merah
3 inci halia muda
2 in lengkuas
2 batang serai
2 sudu kecil kunyit serbuk
5-6 biji cili padi
2 helai daun kunyit

Cara :

Panaskan minyak dan goreng bahan giling hingga naik baunya.
Tambahkan serbuk cili dan tumis hingga sebati. Kemudian masukkan santan, serai yg diketuk serta kerisik. Biar menggelegak sebentar baru masukkan udang. Kemudian biarkan hingga ia pekat dan kuahnya terbit minyak.
