CAKOI MAMAFAMI

 
 
 


As said in my previous entry, I have to make up with my Miss Iron. So yesterday was the day I spent most of my time with 'her' and my kitchen was left lonely except for lunch time. That also, I had to cook a very simple dish, because Mr Hubby was tired to buy takeaways after coming back from golfing. By the way, yesterday, was a public holiday in Malawi. It is the John Chilembwe Day. More information about him can be found here at Go 2 Malawi page. But then, for dinner, we had takeaways from KiPS after quite sometime not being there. Enjoyed our nsima so much. Guess we have a bit of Malawian in us now...hey...we've been here for almost 7 years now. So that's not impossible!

Oki doki...for today's recipe, as promised, I'll paste my version of Cakoi or some may call it Pak Tong Koh. And according to Elin, people in Trengganu call it KAYU KAMAK. I got this recipe from a website long long time ago. Can't remember which website it was. But then, quite a few adjustments had to be made until I am satisfied with the end result. So here people, my version (or can I claimed it mine? If not, I'm very sorry to the owner ya...whoever you may be!) of Cakoi.....



CAKOI

Ingredients :


400 g flour
1 cup water
1 tablespoon margarine ~ melted
1 teaspoon salt
3 tablespoons sugar
1 tablespoon condensed milk
1 egg yolk
2 teaspoon dry instant yeast
1/2 teaspoon bicarbonate of soda
oil for frying



Method :

1. Mix water, margarine, salt, sugar, condensed milk, egg yolk, yeast and bicarbonate of soda in a bowl. Stir well.
2. Add in flour, bit by bit till dough can be kneaded.
3. Knead till smooth and not sticky. Dough must be soft. Leave for half an hour, covered with damp cloth. But I prefer to wrap the container with the dough in a clean plastic bag.
4. Roll thin (+- 1/2 cm), if possible into a rectangle shape.
5. Cut to about 1 inch strips.
6. Dip a skewer into water and press a line on the strips.
7. Place one strip on top of the other, the lines to meet.
8. Heat oil. Stretch the strips slightly before putting in the oil
9. Fry till golden brown.




CAKOI

Bahan-bahan :

400 g tepung ~ diayak
1 cawan air
1 sudu besar majerin ~ dicairkan
1 sudu kecil garam
3 sudu besar gula
1 sudu besar susu pekat manis
1 kuning telur
2 sudu kecil yis segera
1/2 sudu kecil soda bikarbonat
minyak untuk menggoreng

Kaedah :

1. Satukan air, majerin, garam, gula, susu pekat manis, kuning telur, yis dan soda bikarbonat dalam mangkuk besar. Kacau agar sebati.
2. Masukkan tepung sedikit demi sedikit ke dalam bancuhan di atas.
3. Ulikan sehingga menjadi doh yang lembut dan tidak melekat di jari. Biarkan selama setengah jam. Bekas berisi doh hendaklah dibalut di dalam beg plastik yang bersih.
4. Canaikan doh setebal 1/2 sm, kalau boleh dalam bentuk segiempat tepat.
5. Potong kepada kepingan bersaiz 1 inci.
6. Rendamkan lidi di dalam air. Tekankan lidi basah tersebut di atas setiap kepingan 1 inci tersebut.
7. Cantumkan dua kepingan dengan bahagian yang bertanda lidi bertemu antara satu sama lain .
8. Panaskan minyak. Tarik kedua-dua hujung cakoi dan goreng hingga keperangan.


Actually I meant to make my mom's Serikaya recipe, but I have to postponed it till later. I am sending my mixer for a 'medical checkup'. Naseem had been kind enough to send it to the place she had her mixer fixed. My mixer is making so much noise lately. I think something inside must have been worn off. I bought this lovely mixer from a very close friend when they were going home for good. It was like more than 10 years ago. So I think it's about time, for the medical checkup to be done. I hope nothing serious because I love my mixer very much..........
