NASI HARISSA & AYAM MASAK MERAH BEREMPAH (Sis Rossya)

 
 
 
 
 
 
Dare not stay up yesterday night to update, fearing that I won't wake up this morning. What's so special about this morning? SCHOOL! Yeah, school has re-opened! Why so soon? Soon? A month holiday is SOON? Anyway, maybe because we've enjoyed the holidays pretty well, that's why. People say, when you are really enjoying yourselves, time flies. It's true huh? So I am back to my everyday routine, up early in the morning for Fajr and no more going to bed or whatsoever...rush rush rush...busy busy busy.....

After the hubby and the kids left home, I quickly tidied the house but unfortunately I was unable to sit infront of the pc as my head was throbbing. Maybe, because of the slight heat. It had been drizzling all day long for the past one week or so, and these past two days, the sun decided to show up again and I think my head is just not ready for that sudden change...So I just took a short nap, and now alhamdulillah I'm quite alright.

These were what I cooked for yesterday's lunch. Thanks to Nabia for giving me the idea for menu of the day.


These were what we had for breakfast and also the kids' breakboxes today.


And for lunch, I just managed to cook Asam Pedas Ikan.


And for new recipes to share, well, my heartiest thanks goes to Sis Rossya for these two lovely recipes. I had tried it a few months back, I think somewhere during Syawal. It was lovely and thus I simply had to share it with all of you.



NASI HARISSA

Ingredients :


1 kg Basmathi rice
Enough water

To grind/blend :

1 teaspoon cummin
3 cm ginger
10 cloves garlic

3 onions ~ sliced
500 g carrot ~ roughly grated
3 bunches corriander ~ clean the roots and grind with 5 green chillies
(I omit this step)
2 cinnamon sticks
6 cloves
10 cardamons
salt to taste
crispy fried onion
(bawang goreng)
oil or margarine to cook

Method :

1. Wash the rice. Mix with grated carrots and put through a collander till all the water had drained out.
2. Heat oil/margarine on low heat. Fry onion till soft.
3. Add in cinnamon stick, cloves and cardamons. Add in the grinded chillie and corriander roots. Fry till fragrant.
4. Add in enough water and salt.
5. When boiling, put in the rice mixed with carrots and leave to cook.


AYAM MASAK MERAH BEREMPAH

Ingredients :


1 chicken ~ cut to small pieces and half fry
3 onions ~ cut into rings
3 cloves
4 cardamons
3 cm cinnamon sticks
200 g tomato puree
4 tomatoes ~ cut into 6 portion
green peas
crispy fried onion
2 lemon grass ~ bruised
3 cm galanggal ~ bruised
2 bunches corriander leaves ~ snipped
salt and sugar to taste

To grind :

10 dried chillies
4 cloves garlic
3 cm ginger
2 tablespoon corriander seeds
1 tablespoon fennel

Method :

1. Heat oil. Saute onion, cinnamon stick, cloves, cardamons, lemon grass, galanggal and grinded ingredients till fragrant.
2. Add in 1 cup of water, half fried chicken, tomato puree, salt and sugar. Cook till thickens.
3. Add in the cut tomatoes, green peas, crispy fried onion and corriander leaves.
4. Cover the pot and remove from heat.

23. Ina>> Waalaikumussalam Ina. Pasal scones tu, mama pun ikut exactly the same amount as stated in the recipe, termasuklah amount liquid tu. What you do is, jangan uli beriya seperti mana kita menguli roti atau donut. Just uli anggar doh tu jadi elok je. Kalau oven besar, gunakan suhu 180 C dan kalau oven kecil 160 C. 200 C tu mama taip ikut buku. Tepung extra mama gunakan hanyalah untuk tabur atas board before rolling. Yes, bila dah masak, it should sound hollow bila diketuk. Metallic taste? Spread with jam dan butter la untuk mengelakkan rasa sedemikian. Harap Ina tidak akan serik untuk mencuba lagi ye....

Hehehe...Mama dah explain pasal scones kat komen Ina ye. Rasa mama, you all ni terlebih uli, tu yang sampai lekit sebab masa mama buat pun, cam tak confident je dengan amount air tu. Tapi uli cam main-main je, jangan terlebih, insyaAllah ok.
