FRIED DRIED FISH WITH POTATO (Hellikonia) & CHAPATI (AUNTY HAWA)

 
 
 
 
 
 
Slept late yesterday as we came back late from the office. Hubby had asked me to follow him to the office to keep him company while he continues with his work. He's such a workaholic, but some people just don't know and maybe pretending not to know! While I was there, met with a few of his colleagues and had a nice chat. Am I a chatterbox or what! Hahaha! And while waiting for him to do his work, that's when I update the page as the internet line was down at home from 9 am due to the thick fog and rain. Yes, it was raining and foggy all day long yesterday and I love it to bits! Even this morning, it was still the same. Temperature outside is around 18 C - 20 C.

And since there's no internet yesterday, I managed to get loads of work done! In a way it's good not to have the internet working, as I can easily get distracted from my housework. But on the other hand....it's pretty bored!!! So I dated 'Miss Salton' for a good 3 hours and....whoisshhhhh....my ironing basket is empty...Yippee!!! Cooked a kampung style lunch and even managed to try out one VERY SIMPLE recipe from Hellikonia's fotopage. Thank you so much Hellikonia for introducing this very simple to do recipe, it's a great help especially when you are running late! These were what we had for lunch.

SAMBAL BELACAN

Ingredients :


Fresh chillies
Shrimp paste (belacan)
Cherry tomatoes ~ quartered

Method :

1. Pound the fresh chillies.
2. Add in shrimp paste and just pound to mix.
3. Add in the cherry tomatoes and mash to mix.


FRIED DRIED FISH WITH POTATO (Hellikonia)

Ingredients :


Dried fish ~ fried
Potato ~ peeled, sliced and fried
Fresh chillie or bird eye chillie (cili padi)
Shallots
Salt to taste

Method :

1. Pound fresh chillie, shallots and salt.
2. In a wok, heat a bit of oil. Add in the pounded ingredients.
3. Fry till fragrant then add in the fried fish and potato.
4. Mix well and dish to serve.

SAYUR CAMPUR

Ingredients :


Carrot ~ sliced
Young corn ~ sliced
Green beans
Potato ~ peeled, sliced and fried
Onion ~ cut into rings
Garlic ~ crushed
Chicken stock cube

Method :

1. Heat a bit of oil in a wok and add in fresh garlic. Fry till fragrant.
2. Add in the crushed chicken stock cube and a bit of water.
3. Add in the carrots, young corn and green beans. Fry till half cooked.
4. Add in the onion and lastly the fried potato.

And for dinner tonight, since there are some leftovers of the chicken curry, I made some chapatis. This time, I used Aunty Hawa's recipe. Aunty Hawa is my schoolmate, Noor Ashikin Abd Majid's mom. Wonder where is Shikin now? Would really really love to get in touch with her again.....By the way, thank you Aunty Hawa for the recipe. Out of this recipe, manage to get 8 pieces of chapatis. I only ate one....not dieting but just to let the family enjoy them...


CHAPATI

Ingredients :

2 cups chapati flour (I used the mixed ~ white and brown ~ chapati flour)
1 cup flour
1 egg
3/4 cup water
3/4 teaspoon salt

Method :

1. Sift both flour.
2. Crack an egg into the flour.
3. Pour the salt water into the dough, bit by bit and knead till a soft dough is formed.
4. Make into 8 round small balls. Leave to rest for 30 minutes.
5. Roll thin.
6. Heat a non stick flat pan till really hot.
7. Before placing the bread on the pan, remove access flour, if any.
8. When you see the color of the bread changes to slightly darker color, turn over the other side. Gently, press the sides of the bread with a kitchen paper or a clean towel. Let the bread puffs up, then flip over, back to the first side.
9. Once cooked, remove from heat and brush a bit of margarine on top.

InsyaAllah no black insects. Mama akan keluarkan 5kg flour everytime dan simpan di luar. Before storing in the container, mama will sift sampai rasa bersih. Normally twice or trice then simpan dalam pantry. Weather sini ok. Tapi, my 5 kg tu pun doesn't last long...hehehe...I got that 50kg flour dari kedai wholesale and sometimes dari factory dia. Alhamdulillah la kalau betul mama dapat pahala....amin banyak-banyak......
